National Sake Fair 2025 in Osaka ㊼ Tokyo booth ⑤. Ozawa Sake Brewery is located in Hachioji City. It is a relative of Ozawa Brewery of Sawanoi in Ome City, and they are now partially outsourcing brewing. ◉ Kuwanoto Ginjo This is an easy-drinking, quirky sake with a slight sweetness and a firm kick. I thought it was fairly inexpensive. According to bouken's information, this sake also seems to have been brewed by Ozawa Shuzo on consignment. Although not related to Kuwanoto, it seems that at one time there were no more breweries making sake in Hachioji, so the owner of Maihime in Suwa, Nagano Prefecture, was given a new sake production license and started the Tokyo Hachioji Brewery. The brewery is headed by Maihime's toji.

National Sake Fair 2025 in Osaka ㊻ Tokyo booth ④. Nakamura Sake Brewery in Akiruno City's representative brand is Chiyotsuru. Takaozan took over the brand name when Nakajima Shuzo Brewery in Hachioji City went out of business. Takaozan Special Junmai Junmai sake-like acidity, but with a gentler acidity. It has a classic feel, but is easy to drink. It seems that Takaozan is also dedicated as the sacred sake of Takaozan Yakuoin Temple. I remember Nakamura Shuzo of Takarabune in Yamaguchi Prefecture...

National Sake Fair 2025 in Osaka ㊺ Tokyo booth ③. Nozaki Sake Brewery located in Akiruno City. ◉Kisho Junmai Ginjo Mild and gentle acidity, somewhat modern. The overall impression is mellow and modern. Bouken-san said it was like a sake made with Shunyo. In order to avoid quality deterioration during the distribution stage, the sales channel is limited to local sake dealers and some local sake specialty stores, and there is no online store, so it is difficult to obtain in the Kansai region.

National Sake Fair 2025 in Osaka ㊹ Tokyo Booth (2) Tamura Sake Brewery is located in Fussa City. Representative brand is Kaisen. ◉Tamura Junmai Ginjo Tamura Junmai Ginjo is made from Iwate Prefecture's Gingin Gin. It is a rich, mellow, sweet and umami type of sake, with a deep, full-bodied flavor. It also has a slightly complex, rustic flavor. The Tamura series does not limit itself to any specific sake rice, but uses carefully selected sake rice from all over Japan in pursuit of the depth of flavor that comes from the "difference in rice".

National Sake Fair 2025 in Osaka ㊸ Tokyo booth ①. Ishikawa Sake Brewery located in Fussa City. ◉Tamanjobu Junmai Daiginjyo The sweetness and richness of this sake was so good that everyone was shouting "yummy! The taste was so good that we couldn't help but shout out "yummy" together. Taman Jochu Yaegiku The label has a nice retro feel to it. The aroma is sweet from the first whiff. The aroma is standard, but it has a sweet and umami taste with a full-bodied flavor. It is also delicious. I heard that even sake shops that are members of the Japan Meimon Sake Association don't have much of this brand. The owner of a sake shop was just in town, so I gave him a bottle, telling him that he should be able to get it because it is a member of the Meimon Shuzukai (Japan Famous Sake Association). I heard that Sasaki Shuzo Gomei Kaisha in Ehime has the same brand of Yaegiku, but it seems that the brewery is closed now.

National Sake Fair 2025 in Osaka㊷ Saitama Prefecture Booth ⑯ Koyama Honke Sake Brewery is a major group company in Saitama City. The World Hawk Koyama Family Group is amazing, with several other sake breweries. ◉Kinmon Sekai Taka Ginjo 50 I saw on the Internet that it is sold only in Saitama. It has a sweetness, umami, and richness that is standard and delicious. The taste is very consistent, as expected from a major sake brewer. After thanking the brewer of Ishii Shuzo for explaining everything to us, we moved on to the next booth. I asked the Saitama Sake Brewers Association to hold an event for restaurants, liquor stores, and the general public by itself, like those in Yamaguchi and Nagano prefectures.

National Sake Fair 2025 in Osaka㊶ Saitama Prefecture booth (15) Matsuoka Brewery is located in Ogawa-cho, Hiki-gun. The president of the company was visiting a liquor store in Hyogo Prefecture for a tasting on the same day, 6/14, and was not present here. ◉Teimatsu Tora no maki Kuro Junmai Daiginjo Unfiltered Nama-shu Too cold, it's too clear and sharp, with a sense that the umami is lost. The president will be replaced in 2024 and Sho Matsuoka will take over as the seventh generation. Toyoake's brewer and Teisho's 7th president are close in age and seem to be good friends since they were classmates at the brewing experiment station. They have a strong image of dry sake, but recently they have been making a new fresh juicy type, and they said that they arrive at the same place because of their Teimatsu style, for better or worse. National Sake Fair 2025 in Osaka㊵ Saitama Prefecture Booth ⑭ The Bukou Sake Brewery is located in Chichibu City. The brewery uses "Mt. Bukou subsoil water," selected as one of the 100 best waters of the Heisei era, for its brewing water. Buko Masamune Honjozo The classic, rugged label gives this sake a "local sake" feel, and the taste is the kind of sake you can linger over for hours without getting tired of drinking it. Nice Masamune👍 You can't imagine it from the classic label, but it's a reference to the anime "Ano Hi Mita Hana no Namae o Bokutachi wa Mada Shiranai" (We Still Don't Know the Name of the Flower We Saw That Day), set in Chichibu City. (a.k.a. "Anohana"), an anime set in Chichibu City.

National Sake Fair 2025 in Osaka㊴ Saitama Prefecture Booth ⑬ Gonda Sake Brewery Co. is a brewery located in Kumagaya City. I feel like Kumagaya City is always in the news for being a hot city in the summer. Naozane ◉ Special Junmai This sake is named after Jiro Naozane Kumagai from the "Tale of the Heike" Kabuki play. It has a nice aroma, a sweet and umami taste, and a refreshing and well-balanced flavor. It is also delicious. The number of farmers producing sake musashi has been drastically decreasing due to the 2022 rice riots because the ears are high and easily fall over and the yield is low. It seems that sake Musashi does not have a strong rice characteristic in sake brewing, and it is difficult to differentiate it from other varieties.

National Sake Fair 2025 in Osaka ㊳ Saitama Prefecture Booth ⑫ Fujihashi Fujisaburo Shoten, also located in Fukaya City. The representative brand name is Higashi Shirakiku, which was called Shirakiku when the company was founded, but became Higashi Shirakiku because the same brand name was registered as a trademark. ◉Showa 100th Anniversary Special Honjozo It is surprisingly easy to drink, with a better balance between acidity and umami than the label suggests.

National Sake Fair 2025 in Osaka Saitama Prefecture Booth (11) Founded in the Hino region of Omi Province, the company relocated to Yorii-machi, Saitama Prefecture, and about 10 years ago moved to Nagatoro-cho, Chichibu County. About 10 years ago, the company moved to Nagatoro-cho, Chichibu-gun. The brewery is located in a place famous for Chichibu's line rafting, and is a member of the Hamada Shuzo group, a major shochu distiller famous for Kagoshima's Aka-Usagi and Daiyame. Nagatoro Junmai Slightly acidic and somewhat modern. Slightly acidic and modern, with a trendy taste. When the brewery moved to Nagatoro, the previous master brewer retired, and it seems that both the brewer and brewing staff were rejuvenated. Mr. Bouken said, "Isn't it similar to Amami? National Sake Fair 2025 in Osaka㊱ Saitama Prefecture Booth 10 The sixth generation master brewer, Hideyuki Takizawa, went to France to study Champagne. ◉Kikuizumi Hitosuji Sparkling Junmai Sake The second fermentation in the bottle is made using the neck freeze method, which is a Champagne process where the bottle is turned upside down to collect the lees and only that part of the bottle is frozen. It didn't seem too sparkling, but it had a sweetness and a wacky aftertaste. Saitama has two rivers flowing through it. The one near the Arakawa River is soft to medium soft water, the one near the Tone River is medium soft to hard water, and the mountain side has a limestone mountain called Mt.

National Sake Fair 2025 in Osaka Saitama Prefecture booth ⑨. Not the Maruyama Sake Brewery of Yukinubai in Niigata Prefecture, but the Maruyama Sake Brewery Co. in Fukaya City, Saitama Prefecture. They said it was the neighboring village of Shibusawa Eiichi's birthplace. ◉Orihoshi Junmai Ginjo Limited Edition This sake has a unique aroma and a strong sweetness. The sweetness is somewhat classical, but it also has a full-bodied sweetness. I was impressed when Mr. Umaumai said it smelled like the sea, and bouken said it was true.

National Sake Fair 2025 in Osaka ㉞ Saitama Prefecture Booth ⑧ Kawabata Sake Brewery is a family-owned business and the only sake brewery in Gyoda City. ◉Masugawa Special Junmai The taste is classic and quite dark without being flashy. It has a full-bodied, old-fashioned sake flavor. It's a bit rustic, but I like it. It also has the image of a local sake.

National Sake Fair 2025 in Osaka㉝ Saitama Prefecture Booth ⑦ Kamaya Co., Ltd. in Kazo City was also founded by an Omi merchant who moved to the area. Their main brand name seems to be "Rikishi," but they brought a different one this time. ◉Wine yeast brewed Junmai-shu ARROS A modern sake with a light, sweet and sour taste, similar to a white wine. It's a bit like wine, but in a modern way. I wish Rikishi could have tried it.

National Sake Fair 2025 in Osaka ㉜ Saitama Prefecture Booth ⑥ The Kanmei Sake Brewery, located in Kuki City, is the originator of Kanmei, the first company to make Kanmei sake. ◉Kanbai Tokubetsu Junmai Sake, once-fired The taste is not spectacular, but rather orthodox, well-balanced, and royalty-free. It has a very orthodox and well-balanced taste. The toji, Takahiro Suzuki, is young and of the same generation as Toyoake's toji. He made a sake called "Suzuki" for Mr. Suzuki on Kurafan. The owner of a liquor store that Mr. Bouken patronizes came by here, so I forced him to drink Toyoake and asked him to stock it for me. We exchanged business cards, and he said he would visit the brewery again, so please do so 🙏.

National Sake Fair 2025 in Osaka㉛ Saitama Prefecture booth ⑤. Ishii Shuzo, located in Satte City, is a brewery where the young 8th generation brewer and toji are teaming up to try their hand at Kurafan and other activities. The production volume is a little over 100 koku. Rafa papa brought a bottle of this brand at a previous off-line meeting. ◉Hoakei Ichikiichikai Junmai Daiginjo Made with Sake Musashi. It's very floral, very sweet and fruity. It's called "generic Hanahayo," and I certainly agree. Quite tasty. The brewer himself explained that it is called "generic Huayouyasumi," but he seems to be unwilling to call it that. Of course, he said he also makes other kinds of sake with different tastes. From here, the brewer of Ishii Sake Brewery took care of us and we drank the sake. I was pleased to see a lot of sake from the sake brewery Musashi.

National Sake Fair 2025 in Osaka Saitama Prefecture booth ④. Yao Honten is a brewery with a 270-year history, having moved from Omi to Chichibu City. Chichibu Nishiki Special Junmai The taste is rich, full, and delicious. It has a slightly complex aftertaste. I got a copy of the Saitama Prefecture's PR magazine, which has a map of Saitama's sake breweries, and on the cover is Angora Muracho, the Nyanko star. Angora Muracho is also from Saitama.

National Sake Fair 2025 in Osaka Saitama Prefecture Booth ③. Toa Shuzo, located in Hanyu City, was famous for its whiskey during the Showa period, known as Cherry of the North, Toa of the East, and Mars of the West. It is also known for its Ichiro's Malt story, but perhaps not so much for its sake. ◉貉藻普通酒 This is another difficult-to-read brand name, Mujinamo. Gentle mouthfeel and gentle sweetness. The aroma after swallowing is chemical-like. I didn't know this one was part of the Hinode Holdings group. I borrowed a photo of this one too.

National Sake Fair 2025 in Osaka ㉗ Saitama Prefecture Booth (2) Seiun Shuzo is located in Ogawa-machi, Hiki-gun and brews local sake from Bushu Ogawa. ◉Harumo Junmai Ginjo A soft, slightly umami taste. A taste that I like. The brewing water from the Chichibu mountain range that flows through Ogawa-cho is said to be as rich in minerals as the miyamizu of Nada, and the fermentation of the yeast is very strong. Toji Takuo Yoshihara says, "Quality comes first. He is very proud of his belief that "quality comes first, and we are willing to go to any lengths to get as close to good sake as possible. Goto Shuzo Brewery, famous for its "Sashi" brand in Mie, is about to be put to the test with "Seiun" and this is "Seiun".
