It has a good balance between chocolateiness and umami, and a full-bodied feeling. Junmai Daiginjo Wine yeast brewed Nama It has a unique taste like a sweet white wine with a strong umami and sweetness. Special Junmai Sake Echigofu Limited edition for Niigata. It is a clear, but robust Junmai-shu. It is clear and you can feel the delicious taste of rice. Niigata Sake no Jin OSAKA (1929) The booth of TAIYO SAKE CO. The company was established in 1945 by merging 14 breweries in the Murakami Tax Office under the National Mobilization Law. The company is famous for being the first in Japan to market ginjo-shu (ginjo sake). TAIYOZAMORI Special Junmai Namaizume Clear and refreshing. It is clear, refreshing, and moderately spicy. TAIYOZAMORI Special Junmai Hiyoroshi Nama-zake A special junmai hiyaoroshi. It is clear and has a lot of flavor. The spiciness lingers for a long time. TAIYOMORI Junmai Ginjo Soft and clear on the palate. It has just the right amount of aroma, softness, clarity, and clear spiciness. It is a sake with the image of TAIYOMORI. Niigata Sake no Jin OSAKA⑱ Yukitsuru] booth. Yoichi Tahara, the fifth generation head of the family, assumed the position of representative director at the age of 60, but two years later the head brewer passed away suddenly. Since then, he has taken on the role of toji himself. Sesshaku Junmai Ginjo Nama Genjyo Nama Shizuku Fukuro Shiboribori The aroma is sweet. The sweet aroma, moderate sweetness, and nuttiness and spiciness spread from the sweetness. A little spicy. Yukitsuru Junmai Ginjo The aroma is alcoholic. It has a clear, yet mineral mouthfeel with a bitter aftertaste. Perhaps because Yukitsuru is made from natural spring water, the impression of minerality remains the same. I drank it twice before at a tasting event and one of those times was with the brewer, so he told me a lot of stories about how difficult it is to make the same flavor every time, or how he once made one for an overseas market but the intermediary company didn't work out. Niigata Sake no Jin OSAKA⑰ The booth of [Koshinohatoyo]. I had drunk it before, but at the time, I only had the impression that it was labeled with a family crest of Rokubun Sen. The sake was -5 on the sake meter. Originally, they sold a dry sake and a sweet sake, but the sweet sake was said to be too sweet, so they made this sake. It has a moderate sweetness, a complex bitterness in the aftertaste, and a sharp convergence from a slightly nutty taste. Sake: Sake with a Sake meter of -10. Sake meter rating -10, not sticky sweet, but clear sweet. It doesn't feel that sweet to me, but I guess that's just a matter of the temperature range. Koshinohatoyo Junmai Genshu. The umami taste is felt and then there is a bitter bitterness, and from the aroma that passes through the nose, the richness of the rice flavor. It has the sense of sake at the beginning. The image of Rokubun Sen has changed to the image of Kanji characters like "pine blossom".

Niigata Sake no Jin OSAKA⑯ The booth of "KOSHIJI FUKIYUKI". The brewery uses brewing water from the Shinano River system and its own original yeast. Niigata Sake no Jin OSAKA15 Nohtaka] booth. This brewery is located in front of Tanihama Station on the Echigo Tokimeki Railway and is the third oldest brewery in Niigata Prefecture. I had a dry impression when I drank it before. Nohtaka Junmai Daiginjo. When I asked for a sweet sake, this was the one I got. It is sweet and full-bodied at first, and has a refreshing chocolate bitter taste in the middle. Noh Taka Kuromatsu Honjozo It was more light and dry at room temperature, but it didn't seem that spicy. Nohtaka Junmai Nama Nama sake Strong acidity and a very sour taste. Fresh and sharp.

Niigata Sake no Jin OSAKA⑭ Koshino Shiragane" booth. The main product was a honjozo type, and 80% of the sake was shipped to customers in the prefecture. Koshinohakugan Kuromatsu The highest gold award for two consecutive years in the lukewarm category of the National Heated Sake Contest in 2020 and 2021. It's so cheap, I'm scared. Niigata Sake no Jin OSAKA⑬ Booth of "Ofuku Masamune". The founder, Mr. Goro Kishi "applied lactic acid addition to sake mother" eliminated wild yeast and succeeded in pure cultivation of proper yeast, and is said to be the originator of the fast brewing brewery. It was established by Mr. Kamajiro Eda of the Brewing Research Institute (now the National Institute of Brewing Science and Technology). Niigata Sake-no-jin OSAKA⑫ Gindagawa] booth. Gindagawa is an obfuscated sake that I remember because I drank it at Ogimachi Park. It means "cold water" in dialect. Gindagawa's Challenge: Sake-no-jin Limited Edition It is a daiginjo and a challenge sake of 3 years old. It has a strong aroma of maturity and a mellow matured taste. The aroma becomes softer when heated, so lukewarm heating is recommended. Ginden Kawagoe Awaginjo Hiyoroshi No matured aroma. The nose has a chocolate flavor, but it is very refreshing. Gintagawa Junmai Ginjo The aroma on the nose is unique, with a bitterness and umami flavor, but it has a slightly peculiar taste. Kimi no I is known for its elegant Yamahai, but since we're here, we thought we'd try the Autumn Agari of the season, so here it is, a fast brewing Autumn Agari. It is easy to drink and delicious with a gentle, mellow flavor. Junmai Unfiltered Dry Aged in the storehouse This is a slightly spicy sake that has been aged at room temperature for a while. It is also good warmed up. Kiminoi Yamahai Junmai Ginjo This one is fire-aged and has a standard clean, elegant and refreshing acidity. I was talking a lot and forgot to take a picture 💦. Niigata Sake no Jin OSAKA10 Echigo Bijin] booth. In 2021, the brewery transferred its business to Nippon Toter Corporation (a company involved in public stadium management and voting systems) and made it a subsidiary. I noticed a pop-up that featured a lot of sweet sake, so I tasted a sample. Echigo Bijin Junmai Daiginjo Amazuku Fruity and clear. It was sweet and not too much like sake. Echigo Takewaka Junmai Daiginjyo Sando Nama-nara Sake Rich, sweet, umami taste, dark and delicious. Urachigobijin Junmai Daiginjo Neko (Nama-genshu) There is an illustration of a cat, as they are involved in activities to protect cats. Unlike the image of a cute cat, it has a punchy, refreshing spiciness. Echigo Bijin Kijoshu It has a rich, full-bodied taste with a sweet flavor and a strong flavor. Echigo Bijin Junmai Ginjo A slightly hard standard that is surprisingly spicy. It was a good idea to buy it because there were many first-time arrivals in Osaka, but the price was a bit aggressive.

Niigata Sake-no-jin OSAKA9 Niigata Sake Sales booth. Not a brewery, but a wholesaler of sake and food products. They seem to plan sake, have it brewed on consignment, and then sell it. Koshino Rokuhaku This is a blend of 6 Niigata breweries with "White" in their name (Koshinorokuhaku, Koshino White Wild Geese, Koshinohakusetsu, White White, Shiroro, and Shirataki). There used to be five breweries, but they added one more three years ago. It has a chocolatey and nutty taste with a spicy aftertaste, more than a light dry taste. Ready! Ready! Junmai Ginjo Somari. A collaboration with Bakake. It has a strong sake and ginger flavor. READY! LADY! READY! GINJO FORYOU Slightly sweet and bitter, easy to drink. Ready! Ready! Ready! Jun Daigin Sora to Nadeshiko Sake made by JAL Niigata branch CAs who planted, harvested, and brewed rice for the Corona disaster. Blue and pink are the same in content and price, and the bottles are colored. The blue was made as the color of the sky, but was changed to pink because it is the color of ANA. The taste is mainly gentle acidity and a little sweetness. It is brewed by Yahiko Shuzo, and the brewer is a woman who is a first-class sake brewing technician, so it is made entirely by women.

Niigata Sake-no-jin OSAKA⑧-2 Echigo Toji] booth, continued. Jungin Mellow flavor, firm taste. There was a slot for a category, so I served it and it won a gold medal in the premium heated sake category, but the brewer said it was better to drink it as is. We met up with Mr. Sakeran for the second time. Yukikage. It's for export, refreshing, and totally different type. Less traditional. Echigo Toji Shigome No. 18 Besshiki Special Junmai Sake It has a firm, full, orthodox flavor. The same sake cannot be entered in the National Heated Sake Contest, and to win four different awards for different brands is impressive. We spent the longest time talking with the brewer, who gave us his business card and told us that his hobby is drinking iron. We talked a lot and he said that he was struggling with how to convey these qualities of sake as delicious. He said that brewers in Niigata have study groups with other breweries and are very close, but the salesmen are rivals to each other 😁. I became a fan not only because of the personality of the brewer, but also because of the traditional taste, which is so delicious. I am good friends with Haretoke in Osaka, so next time I go there, I will have to check it out.

Niigata Sake-no-jin OSAKA⑧-1 Echigo Toji] booth. The only place that brought a sake heater, the most standard Honjozo was already sold out. The Honjozo won a gold medal in the heated sake contest for five consecutive years, including one of the highest gold medals. The brewery has also won gold medals in four other categories. Echigo Toji Special Honjozo Traditional flavor, soft, round, full, straight, and delicious 😋 This type of flavor is the standard. Echigo Toji Honjozo Nama Sake Chocolatey, bitter, sweet, and delicious. I think they say this is a year-round product, even though it is a nama-shu. I also heard that for one month in December, there is a local limited-edition freshly pressed Honjozo Nama-zake, which I would like to try. Echigo Toji Junmai Ginjo Hiyoroshi The alcohol content is around 17-18 degrees. He said it's still young, not mature enough, mischievous and somewhat fresh, and he wants it to be rounded out. It's like Gian from Doraemon. Muramatsu. Aroma: A ginjo-shu without showiness. Well-balanced and easy to drink. Also won in the premium lukewarm category. Niigata Sake-no-jin OSAKA⑦ Tsunan] booth. I had been curious about this brewery because of its impressive labels seen at Sake-no-wa. They also had a series of pouches and small bottles that could be taken camping or mountain climbing. Tsunan Golden This was the standard Junmai. It has a very clear and refreshing taste and can be drunk smoothly. The bitter astringency from the clear and refreshing taste. Tsunan Indigo A ginjo. It is also clear but fruity, with a sweet aftertaste. Tsunan Beni Junmai Ginjo. Sweet and refreshing, fruity and delicious. Niigata Sake no Jin OSAKA⑥ Yahiko] booth. This brewery came to the Abeno Harukas Kintetsu Sake Tour last year, but I had not tasted their sake. All of the brewers here are certified as first-class sake brewing technicians. Yahiko Kyokyu Ponchukan Niigata Station's sake tasting station's No. 1 regular sake in the popularity ranking from February to September. The brewers drink this sake for dinner. It is very tasty and you will never get tired of drinking it. The contents are the same as the stylish cup sake with a design of Mt. Yahiko and a torii gate. Yahiko Junmai Sake Full-bodied, with a delicious sweetness 😋. Yahiko Junmai Daiginjo No. 9 The rice used is Yamadanishiki produced in Yahiko Village, and because it is brewed with No. 9 yeast, it is the ninth yeast to be used, so it has a sweet and delicious taste with a full-bodied flavor. I heard that the No. 9 yeast that took the world by storm is now considered obsolete in the industry. Niigata Sake-no-jin OSAKA⑤ (Japanese only) Myokayama] booth. This was also a brewery I had never heard of. Junmai Ginjo Rich Heart. The label was cute, but the sake had a full-bodied, deep, and mellow taste, and it had a Japanese sake feel. The person at the brewery who helped me remembered the person I bought it from, saying there was a rabbit on the label 😁. Junmai Ginjo Myokayama This sake is brewed by a master craftsman in Niigata who grows Gohyakumangoku rice in his own fields. 60% polished rice is served at room temperature. It has a rich, mellow, full-bodied flavor. Recommended to be served lukewarm. Myokozan Junmai Ginjo Myokozan 88 This is a 55% polished rice made from Gohyakumangoku. It is a little spicy with a refreshing taste. It can be served with both Japanese and Western food. Junmai Daiginjo It is once-bottled and fire-brewed. It is sweet and delicious, but with a beautiful sweetness that does not leave a fluffy sweetness. It is an excellent sake. It was delicious. Myoko Brew This liqueur expresses the taste of Blue Hawaii by combining sake with pineapple juice and lemon juice. It tastes almost like shaved ice syrup. It is a refreshing syrup without ice and with triple the amount of carbonation. Myoko no Umeshu. A 19° sake base is soaked for one year and tastes good without being too sweet.

Niigata Sake no Jin OSAKA④ Koshiji-no-Kenbai] booth. I had never heard of this brewery. It seems that they do not sell their sake in the Kansai region, and this time they only sold their sake at the event, and not even at department stores. It seems that their policy is to work only with specialty stores that will support them by explaining their sake properly, and now they have expanded to Aichi. They make only 300 koku. Standard. It is a standard junmai, unfiltered, bottle-warmed, and once-heated sake. It has a strong flavor with sweetness and umami of rice, but it also has a little acidity, which gives it a slightly sour taste. Junmai Ginjo Hachitan Nishiki Clear and refreshing with umami and bitterness. Kasumishu Junmai-Ginjo Nama-Nagara Sake Lightly cloudy. It has a sweet and bitter grapefruit flavor. Niigata Sake-no-jin OSAKA (3) Kayama] and [Koshino Umezato] booths. DHC Group is famous for its supplements. I had never seen Kayama in a green bottle, so I was curious about it and tasted it. Kayama Junmai Ginjo Unfiltered Nama Sake. Made from Koshitanrei rice. The taste is rich, sweet, and delicious. The impression is the same as the one I had before. Kayama Junmai Ginjo Unfiltered Nama-Ginjo Unrefined Nama-Harakiri Kameguchi This is also Koshi-tanrei. It seems to have a bit of a bubbly taste, but since it had been open for a while, I didn't really notice it. It is a medium-bottled sake, so only about 300 bottles are made. It was fresh and this one seemed much sweeter. Mr. Bouken had already had it. Koshino Umezato Junmai Daiginjo Unfiltered Nama-shu Kameguchi Direct Harvest This sake is made from "Gohyakumangoku" grapes. It also seemed to have a fizzy feeling right after opening the bottle. It is fresh and refreshing, but has a sweetness and mellowness. The second time to drink. Asahi Sunny. This is the sake that Bouken-san was interested in.
