Shiga Local Sake Festival in Otsu 2025②. Suzu Masamune, Biwa no Chouju, ALL SHIGA booth. ◉ALL SHIGA collaboration junmai sake (THE FINAL) Project started in 2015. This collaborative junmai sake is a blend of sake from 30 member breweries of the Shiga Sake Brewers Association. This year is the last for this initiative. The taste is indescribably complex, with a strong assertion of acidity. It is now produced by Kita Sake Brewery, and I was glad to be able to drink it for the last time.

Shiga Local Sake Festival in Otsu 2025①. Suzu Masamune, Biwa no Chouju, ALL SHIGA booth. Arriving at the station nearest to the Biwako Hotel where the event was held, I had some time to kill so I went to a ramen restaurant produced by Minoru Sano, who is known as the devil of ingredients in the ramen industry, to get some food for my stomach. I was able to order without waiting in line, and arrived at the venue just in time. There was a long line to get in, and we didn't get in until 10 minutes later. The first thing I headed straight for was Suzu Masamune, which I had been aiming for. I was approached by the liquor store that BOUKEN-san patronizes and greeted him. ◉ Suzu Masamune Junmai Ginjo The sake has a strong umami with a hint of gas. It is a 3-year aged sake with a fruity richness. It's really good! It seems that it is not available for purchase since they are not making it anymore. After the event, I visited a liquor store in Kusatsu and told them I went to a Shiga sake event in Otsu, and the owner of the store was there too. According to the information from the liquor store, a liquor store that had Suzu Masamune in stock had given it to him for the event. He said that the sake was well preserved and had been aged for about 5 years.

It's Sake Day 🍶. Shizuoka Prefecture. Kakegawa City. Enshu Yamanaka Sake Brewery Co. Aoi Tenshita 60% Junmai Ginjo Aizan Unfiltered Aged We bought this sake because we talked to them most often at the Kyoto Takashimaya Sake Festival and learned a lot from them. I bought it because I talked to him most at the Kyoto Takashimaya Sake Festival and learned a lot from him. The color is yellow with a slight greenish tinge. The nose has a slightly nutty, buttery, and caramel aroma. Smooth mouthfeel with a slightly oily feel. The honey-like sweetness and aroma spread in the mouth, followed by sweetness and umami that match the savory, mature taste that passes through the nose. The aftertaste is bitter to spicy. It has an interesting and complex flavor profile. He told me about Shizuoka yeast, saying that this was the only thing to remember. He came back to the institute and said that since he was from Shizuoka Prefecture, he had to make Shizuoka yeast, so he improved the yeast varieties and created all kinds of wonderful yeast. That was how Shizuoka became known as the "Shizuoka of Ginjo. The Shizuoka yeast, HD-1, is extremely difficult to handle, and even the breweries in Shizuoka can hardly use it. The only breweries that use it are Kikusen, Shoyuki, and the now-defunct Kunika (the brewer is a disciple of Denbei).

Today was my first time at the Expo, and I went home early after experiencing the hellish admission restrictions. Since it is difficult not only to enter but also to stand in line at the pavilions, we shifted gears to drink beers from all over the world. Still, there were too many people in line, and in the end I only drank a Czech beer (1,250 yen) and a can of Maltese beer (1,600 yen)... I went back and didn't drink enough, so I opened a bottle of Asahi Super Dry (218 yen) and a can of this one. Shizuoka Prefecture. Hamamatsu City. Hana-no-Mai Sake Brewery Co. Hana-no-Mai Ichigou One of the "Ichigou®" brands of Agnavi Corporation, which develops Japanese sake brands. Purchased at a nearby co-op. Drink it cold. The nose has a little apple, a little grain, and alcohol. The mouthfeel is smooth. As it rolls on the tongue, the acidity typical of junmai sake expands, and a grain-like aroma wafts into the nose, with a hint of bitterness and astringency. The aftertaste is a bit sharp and pungent, standard sake. It's been a while since I've had a Hana-no-Mai, but there aren't many on the market. Yamanashi Pref. Hokuto City. Take-no-i Sake Brewery Co. Take-no-i Shiki series summer himawari Junmai Ginjo Himawari yeast brewed. I heard a lot about this sake at the Kyoto Takashimaya Sake Festival and bought it because I liked it. I bought it because I liked it so much. The color is just a hint of yellow. The aroma is mild and soft, with a hint of alcohol. The mouthfeel is smooth and slightly hard. The palate has a refreshing slightly sweet and acidic taste. The aftertaste is slightly crisp and pungent. There is also a slight bit of harshness. On the second day after opening the bottle, the hardness eases a little and the refreshing acidity becomes a little milder. When I tasted it, I bought it for its sweetness, but I guess it was tasting magic. Ingredients:Rice (domestic), Rice malt (domestic) Rice polishing ratio:60 Alcohol content: 16%.

Keihan Department Store Kuzuha Mall ⑦. Shirasugi Sake Brewery Fair booth [Shiraki Kyu I was surprised to see so many kinds of sake. I was surprised to see so many kinds of sake at the booth. I wanted to try this Italian style label. It is made with wine yeast. The sweetness and sourness come separately. Slightly light on the palate. MIRROR MIRROR A light, sweet and acidic wine with a high malic acid-producing yeast. Lightly sweet and acidic with a slightly bitter aftertaste. Slightly bitter aftertaste. ◉Karakurena no shirakiku Hiyaoroshi. A little light on the palate, but the sake taste starts to tingle in the middle. Not my favorite type. ◉Haruhi Natsu no Owari Limited Hiyoroshi Aroma of Haruhi. A full-bodied, dense sake with a good acidity. Moderate acidity. ◉Tango no Hikari No sweetness, bitter astringency and bitterness. Kinshari Gorgeous sweet aroma. Slightly voluptuous, sweet and bitter. Shari Diamond A nice, sweet, slightly bubbly, slightly sweet and tasty. Slightly effervescent, sweet and tasty. Slight bitterness, but I don't mind it. I forgot to take a picture... Junmai Ginjo Brilliant Slightly effervescent, sweet strawberry, deliciously bitter. I like it. Junmai Vibrant Aroma of white grapes with a hint of spring sunshine. Mainly acidic. Keihan Department Store Kuzuha Mall ⑥ Booth of Hokuriku Sake Fair [Kaga no Tsuki The main purpose of my visit to this event was to report and thank my hobby sake shop for the delicious Kaga-no-tsuki nama-shu I had drunk. ◉Kaganotsuki Autumn Agari The sake has a slightly aged feel to it. The taste is sharp and tangy, and the aftertaste is a bit too pungent. The taste is typical of Kaga no Tsuki. I only took a side view 💦. I really like Kaganotsuki's sake with its original sake yeast.

Booth of Hokuriku Sake Fair [Oeyama The place where the brewery used to be has already been cleared, and they started selling sake in a trailer house on the day before we came to taste the sake (September 14). ◉Noto Oeyama #Te To Te Junmai Ginjo This is the fourth installment of Noto's Sake to Stop Sake, a collaboration with Shiga Prefecture's Nami-no-one Sake Brewery. It has a slightly sharp citrusy acidity and a short finish. The recovery seems to be far from complete, so we must drink Noto's collaborative sake as well.

Keihan Department Store Kuzuha Mall (3) Booth of Hokuriku Sake Fair [Ariiso Akebono ◉ Ariiso Akebono Tokubetsu Junmai Hiyoroshi The sake is clear and easy to drink, with almost none of the aged feel of hiyaoroshi. Even people who don't like hiyaoroshi can drink it. ◉ Ariiso Akebono Junmai Ginjo A two-stage sake. It's clear, but still retains a nice umami flavor. It seems to be a perfect match for fish dishes. ◉AKEBONO FLAT Akebono Flat is a low 12% sake that has not been served in two years. The sake has a sake content of +/- 0, so I guess it's a flat sake. It is an easy-drinking sake with a slightly sweet taste. The back of the label is colored and stylish. This one is really easy to drink. This is also a brewery that was hit by the disaster. We must not forget about the disaster-stricken areas yet.

The acidity is tight, and then a slight sweetness and richness spread out. The sweetness is not too strong and light. ◉Misaki Echizenmisaki Junmai Genmai Prune, brewed with natural plum yeast, 2024BY A slightly unique sake with a low alcohol content of 12° and a sake strength of -35. Booth at the Hokuriku Sake Fair [Sanshoraku We visited the booth of a sake shop we know who is a good friend of ours. San Shoraku Hiyahoroshi (Hiyahoroshi) Junmai-shu (Junmai-shu) A rather sharp Hiyahoroshi. After about a week after opening the bottle, the sharpness of the sake is said to be mellow and delicious. San Shoraku Gokayama Gokayama Yamadanishiki 2024 Sanjoraku's brewery is located in the World Heritage village of Shirakawa-go and Gokayama, which is actually a double World Heritage site because they make their wines the same way they used to. Sourness to refreshing umami ◉Sanshoraku Junmai-shu Yamahai Junmai A standard product, but limited to special dealers. It is extremely nourishing and slightly milky. It has a calm and relaxing feeling. I heard that there will be a little bit of nama-zake available in April, so I'm going to try to get a bottle. ◉Sanshoraku Junmai-shu Red Label The color is slightly yellowish. Mie Sake Enjoyment Party ⑯ Booth of Motosaka Sake Brewing Company and Hachibei Sake Brewery. There was a Hachibei Sake Shop with a label I had never seen before. ◉Sakeya Hachibei Junmai Daiginjo Tsunewaka/Ten The sake rice is Isehikari. It is light, refreshing, and delicious. The taste is well balanced. ◉Sakeya Hachibei Junmai Daiginjo Tsunewaka Jichi Sake rice is Yamadanishiki. The aroma is deep and full, with a rich, generous umami and sweetness. The aroma is deep, the flavor is full, the taste is rich and generous, and the sweetness is a little crisp. ◉Sakeya Hachibei Jugoya A junmai sake with a gentle acidity and a full-bodied flavor. The taste is full with a gentle acidity. The finish is a little astringent. It is not often sold outside of the prefecture and is used for gifts and chugengen, and is not often sold in restaurants. I was given a tasting at Kyoto Takashimaya before and asked about it since they said they were expanding to Osaka, and was told that more stores are now carrying it. You can buy it at Yamanaka Sake Shop, Sukuimasa, Imanaka Sake Shop, etc. ◉Fukii Junmai Ginjo A good, refreshing sake with a citrusy flavor. A little nutty. It tastes even better than the last time I had it. ◉Fukii Junmai Daiginjo The nose is clean, slightly mineral and clear. Slightly citrusy yogurt taste. Nice aroma, citrusy. The acidity is the main component, with a sourness that lingers on the tongue. I'd like to try a Fukimi.

Mie Sake Enjoyment Party⑭ The booth of Maruhiko Sake Brewery Co. and Mie-no-Kanbai. The rain was heavy here too, but the brewery seemed to be okay since it is located near Komono-cho in Yokkaichi City. This company also had no special distributor in Osaka. There was also a lineup of collaboration sake from Kingdom and Godzilla. Apparently, it was because Godzilla first landed in Mie. Junmai Ginjo Mie-no-Kanbai Hiyoroshi A hiyaoroshi sake. It has a mild flavor and a slight dryness that is typical of hiyaoroshi sake. ◉Mie-no-Kanbai Daiginjo Motoshu Slightly sweet and umami, with a good balance on the palate. It has a slight sweetness and umami. The rice price is high this year, so they are planning to reduce the production.

It doesn't quite make sense to me that Gizaemon and Waka Ebisu are from the same brewery, but from the description, it must be a fun and playful brewery.

Sake Festival in Mie (⑫) Booth of Takihantu Sake Brewing Co. Takijiman is sold in my neighborhood, but I have not had much of it. Takihantama Dry Junmai Taki Suiryu (Hayase) The rice used for this sake is Gohyakumangoku. It is a signature product. It is a very dry sake with a sharp finish. ◉Takishige Kami no Ho Autumn Agari Mineral and light on the palate. It has a delicious flavor and a slightly acidic finish. Junmai Daiginjo This is a 45% polished Yamadanishiki. The aroma is restrained and slightly citrusy with a very good balance. A great all-around sake. An International Challenge award-winning sake. Not a very large brewery. It is brewed in smaller tanks.

Mie Sake Party (11) The booth of Fukumochi Sake Brewery and Tenka Nishiki. The brewery's toji, Seijiro Hane, is a former system engineer who changed his job to preserve the brewery. Although the brewery's story is well known, this was the first time I had the opportunity to meet him. Mr. Hane is from Suita, so he talked a little about Osaka. The Otsuki Sake Shop, which handles the sake, is located in Suita. Tenkashinishiki BASIN #2 Junmai Ginjo A stylish label we have never seen before, it has been around for about five years. It is made with white malted rice and malic acid rich yeast. It has a gentle sourness. It is very wine-like and delicious. ◉Tenshita Nishiki Junmai Daiginjo The taste is sweet and delicious. ◉Tenga Nishiki Junmai Daiginjyo, a very sweet and tasty wine, with a beautiful and umami taste. My favorite type. Tenga Nishiki Junmai Ginjo Hi-ire A little sake-like, but slightly sweet and sour. A sweet and sour type of sake. Mie Sake Enjoyment Party (10) Shinra Sake Brewing Company, Muso, old color booth. The brewery's toji was there and we had a great conversation with him. He said, "Wouldn't it be fun if everyone did jun-dai or something like that? He said, "It would be no fun if everyone was drinking jun-dai," so he said he was displaying matured sake at the event. ◉Koshiki Souzen 10 years old He said it was aged for 10 to 13 years. The aroma is light and caramel-like. Slightly acidic. Koshoku Sosen 15 years old The aroma is still very strong, but the flavor is more like a caramel. The aroma is stronger than the 10 year old, but the flavor and taste are milder. Koshoku Sosen 20 years old The aroma and the flavor are very mature. It is sweet and caramelized. The aroma is also very strong, but the flavor and taste are mild. The price is amazing though. All of them are freshly aged. They are not aged in the dream window, but prepared separately. They said it has to be raw or it won't mature well. He said they have a 30-year-old aged sake. By the way, Yumemado is only made in very small quantities, he said.

Mie Sake Party (9) Booth of Imuraya Corporation and Fukuwagura. This time they brought all fire-brewed. They want to compete without hanging on to the azuki bar. ◉Junmai Citrusy aroma, fresh and fruity on the palate. So much fruity in the hi-ire. Junmai Daiginjo The nose is also fresh, fruity and extremely tasty. It is not sweet, but has a full-bodied acidity and a clean, crisp taste. I forgot to take a picture... Junmai Ginjo Another fresh, fruity, freshly brewed sake. The Fukuwagura was fresh and fruity, which I liked. When I mentioned the sake store I had bought it from, the person at the brewery who helped me said that he shares the same last name as the owner of the sake store.
