Akita, Japan. Akita Sake Manufacturing Co. Takashimizu Honjozo We received a set of 7 single-bottle bottles, so we will drink them. Let's start with this one. I will drink it cold. The color is clear and slightly yellow. The top aroma is of grains and a strong, volatile alkali aroma. The mouthfeel is slightly torrid with a discreet acidity. The nose has a soft alkaloa and caramel-like aroma, and the palate is slightly nutty and umami. After swallowing, the umami expands with the tanginess felt on the tip of the tongue. The aftertaste is crisp and classical, with a strong tangy and sharp sake taste. Ingredients: rice (domestic), rice malt (domestic), brewers' alcohol Sake meter rating: +2 Acidity: 1.3 Rice polishing ratio: 60% for koji rice, 65% for kake rice Alcohol Content : 15.5

Yamaguchi Prefecture. Yamaguchi City. Shintani Brewery Co. Wakamusume Peony Pink wakamusume is a word that stimulates my vexation...but this is a black wakamusume. Is it a black gal 😁. I will have it with cold sake. When the bottle is opened, there is a long gas sound. When poured into a glass, fine bubbles adhere to the sides. The color is silvery opaque with floating lees. The top aroma is mild with a little fresh apple aroma. On the palate, juiciness and a slight bubbly sensation precede the juices seeping out of the fruit. In the mouth, the silky rice flavor spreads with a moderate bitterness. After swallowing, the spread of the fragrance is not strong, but it gives the impression of three-dimensional umami, and the bitterness of the aftertaste gives a sense of fullness. It does not have the full-blown Oumachi-like character that is often associated with the image of Oumachi, but the slight bubbles give the umami and bitterness a firm outline. Personally, I like this label because it has a bewitching quality. Ingredients: Rice (domestic), Rice malt (domestic) Polishing ratio: 60 Rice used: 100% Omachi produced in Okayama Prefecture Alcohol content: 15.5

Gifu Prefecture. Ogaki City. Takeuchi Limited Partnership. Ippodo Senzan Hachitan-Nishiki Unpasteurized Sake Bouken-san insisted on drinking it, and we decided to share a bottle with him since he had enjoyed ICHIJUSHU SENZAN before. I filled 3㌥ for two bottles and left. When I poured it into the glass, fine bubbles adhered to it. The color is clear and slightly yellow. The aroma is slightly alcohol-driven, with a slight citrus aroma in the back. The mouthfeel is slightly effervescent and gassy, and the palate is light and minerally, with a slight citrus acidity and a rustic astringency on the tongue, which finishes dry with a bitter taste. The finish is slightly spicy. As bouken reviewed, it was also a bit spicy. Amt liquor store tasting and sales event⑬. Last but not least, the liquor store's Amto original sake. Fukuchitose Yamahai Kojo-shu. The taste is rich and sweet, with a hint of sourness that may have come from the Yamahai method. It has a rich sweetness and a sourness that may be derived from the Yamahai method. Tajima Shuzo makes unique and interesting sake. This was my first time attending a tasting at Amto Sake Brewery, but I enjoyed the tasting with a high degree of freedom, such as heating up the sake by myself, mixing spirits with carbonated water on my own, weighing the sake, and borrowing a funnel. Afterwards, we stopped by the sake corner of Keihan Department Store, where bouken-san got laid again, and then we went home.

Amto Liquor Store Tasting and Sales ⑫ Furthermore, Amto original sake from the liquor store. Fukuchitose Sake Assemblage, aged in noble rot wine barrels. Recently, Fukuchitose has been the focus of my booming taste buds. The color is clear and pale yellow, with a hint of woody aroma with a mild acidity. The sweetness and acidity come independently, The sweetness and acidity come independently, and there is a slight bitterness in the aftertaste. It was a strange and unique experience.

Amto Liquor Store Tasting and Sales Event (11) It looks like this was another tasting sample from the liquor store. Takayuu Junmai Ginjyo Araubashiri Unfiltered Nama-narashu. It seems to be made from Yamadanishiki and Tamaei, and the acidity is not too bad. The Takayuu I drank before was not so good, as if they forgot the umami somewhere, but this time it was delicious.

Amto Liquor Store Tasting and Sales Event (10) I noticed that there were more new sakes and a label I had never seen before that I didn't know, so I listened to what they had to say, and it seemed to be an original from this liquor store, Amto. Kozaemon Junmai Banshu Aizan. It was a bit bitter and had a bitterness in the throat. There is a bitterness in the throat that I don't like. When heated, it becomes milder and the umami flavor expands. I guess you have to have a very strong relationship of trust with a brewery to be able to make an original sake.

Amto Liquor Store Tasting and Sales Event ⑨ A pitch-black drink that I was quite interested in, with a few spirit-based drinks in between along the way. Manrei no Mirinko Nama This is a special mirin made by the Manrei brewery for drinking. Moreover, it is an eight-year-aged one. I was so excited when I took a sip of it. It has a very concentrated honey and caramel sweet flavor. It is easy to drink when it is heated up, and it seems to be good for your throat when you have a cold. It tastes like the sauce of mitarashi dumplings, and I thought it would be really good if I poured it over vanilla. Spirits with sansho made me "stink" 🤣.

Amto Liquor Store Tasting and Sales Event 8) Next, two nigori in a row. This one is a sake I have wanted to try for a long time. This one is a sake that I have wanted to try for a long time. It was very thick and had a slight bubbly taste. The label on the back says the sake level is -30, but I don't feel any sweetness in comparison to the sake level. Maybe the activity was too weak? It has a slightly schwaggy feeling, and the milky rice flavor and sweetness are concentrated and combined, but the aftertaste is still a bit sharp.

Amto Liquor Store Tasting and Sales Event (6) I thought I saw the label somewhere, but I guess it was the fire-aged Honjozo that I drank before. Kozaemon Yamahai Honjozo Unfiltered Harajuku. The color is a clear yellow and maillard. Caramel-like matured flavor. The sweetness seems to have been concentrated, and it is still very peculiar. The ripe aroma that comes through to the nose increases the sense of peculiarity.

Kame no Kai Hosoyuki Junmai Ginjyo Nao Kumi Unfiltered Nama The overall taste is sweet and umami, with a rich, full-bodied bitterness. Amto Liquor Store Tasting and Sales Event (4) It is written with emphasis on "demon spicy" or something like that, and I would never buy this sake by myself. Meikyojumizu Dry Junmai Oni-Sai. It has no sweetness at all and a sharp umami taste. It is not so spicy that it makes you tingle, but rather it is refreshingly dry. Just a little sourness, slightly grapefruity.

Amto Liquor Store Tasting and Sales Event (3) President Bungo said that Hounami is made to go with fish dishes because of its proximity to a fishing port. There used to be an illustration version of the wave, but I guess they unified it with the kanji version. HONAMI Junmai Ginjo Miyamanishiki Green As I had the impression from other Hounami before, it has a strong sourness with a bitter taste. It leaves a sticky acidic mass on the tongue. Hmmm, I like Tenka, but I don't think I'm into Hounami.

Amto Liquor Store Tasting and Sales Event (2) Kushira is a famous sake from Nara. Kushira Junmai. It is quite refreshing and dry sharp on the palate. It has little sweetness, a little acidity, a little umami, and a slight bitterness in the aftertaste. It has a nice light dry taste, but it is easy to drink without being classical.

A liquor store that also carries some peculiar liquors. They have a long table in a warehouse with a refrigerator, and each person pours the sake tasting into a plastic cup on the table. The most expensive sake was "Kuroryu Junmai Daiginjo Sakahomare. The most expensive sake was the Kuroryu, which was sure to be delicious. It has a gorgeous grapefruit aroma. It has a fruity aroma and a richness that gives depth of flavor. It also has a sharp taste and is very tasty. I was not sure whether to buy it or not, but I decided to go through with it.

Mie Pref. Yokkaichi City. Miyazaki Honten Corporation. Miyanoyuki Junmai Ginjo Yamadanishiki I found this sake at a convenience store on the way home from my second son's low mountain climbing trip, and I liked it very much after drinking it before. I drank it cold. The color is clear with just a hint of yellow. The nose has a gorgeous fruity aroma with hints of pineapple and tropical fruits, with a firm ripe fruity aroma. On the palate, there is a ripe fruit-like sweetness and caramel-like richness, with a hint of black chocolate after swallowing. Overall, the wine has a full-bodied, robust, and rich flavor, but the sharp bitterness and weak spiciness linger on the tongue as a lingering aftertaste. It is hard to find a 4-pack bottle. The rich, molasses flavor is similar to that of Takachiyo's Ipponjiki. Ingredients:Rice(domestic),Rice Koji(domestic) Rice polishing ratio:50%. Alcohol content: 16%.

Ishikawa Prefecture. Nomi City. Miyamoto Brewery Co. Yumezou sake, light nigori Junmai Namaishu I bought this sake at KITTE Osaka because I didn't know about it. Yuri Goto, the sixth-generation brewer, and her husband Hitoshi Goto, the toji, are a married couple who brew sake with the philosophy of "brewing sake and brewing dreams. It is served cold. I was quite wary of the secondary fermentation in the bottle, but I was surprised to find that there was no gassing or stirring... Why? I tightened the cap, shook it, and stirred the lees, but there was no fizz... No bubbles when I poured it into a glass. The top aroma is a slightly sweet koji aroma. It was a bit like white dumplings. The heavy lees give it a smooth and silky mouthfeel. The taste is full of grain-like koji aroma, a little apple flavor, and a gentle umami with a bitterness that is not unpleasant, with a moderate bitter aftertaste. We did not enjoy the shwash, but it was delicious with little sweetness. Ingredients: Rice (Ishikawa), Rice Koji (Ishikawa) Polishing ratio: 60 Alcohol content: 15

Saga Prefecture. Kashima City. Mitsutake Brewery M. Limited Partnership. Winter Junmai Daiginjo Mitsutake My father-in-law, who is from Saga, bought this Saga sake for me as payment for a ride to and from the hospital. The Mitsutake Four Seasons series has a pattern on the bottle for each season. We will drink it cold. The color is clear and almost colorless. The nose has a fruity, slightly citrusy aroma. At first, it feels fruity for a moment, then a slight, dignified sweetness, and then the acidity spreads rapidly. The aftertaste is refreshingly spicy with a slight tanginess on the tongue. At the end, you feel a strong lingering acidity with a slight astringency. It is a good sake for a mealtime drink. Ingredients: Rice (domestic), Rice malt (domestic) Polishing ratio:50%. Alcohol content:15

Okayama Prefecture. Kurashiki City. Kikuchi Brewery Co. Kimura-style Miracle Sake Junmai Ginjo Omachi Nama-nara Sake. This sake is brewed with rice harvested naturally without relying on fertilizers or pesticides, as advocated by Akinori Kimura, known for his "Miracle Apples. Serve cold. When poured into a glass, a little more microbubbles adhere to the sake, and the color is clear with a slight yellow tinge. The top aroma is gorgeous, with sweet aromas of caramel and ripe fruit. On the palate, there is a gassy sensation, and the fine acidity spreads out with a sizzling sensation. The palate has a juicy sweetness with impact and a strong, full-bodied flavor with a sense of depth. There is a slight astringency at the end. The aftertaste is not harsh but feels a little sharp and refreshing. It is delicious with the fullness of Oumachi's flavor as imagined. Ingredients: Rice (Okayama Prefecture), Rice Koji (Okayama Prefecture) Ingredient rice: 100% naturally grown Omachi rice Polishing ratio: 55 Alcohol content 17 %.
