Goyotei Junmai
The Goyotei 300㌥ series also includes Junmai Ginjo and Junmai Daiginjo. It has a lot of different flavors and complexity. It's a bit cluttered. It seems to be a blend of various sakes, with flower yeast and other ingredients such as junmai.
◉Tochi Akane Daiginjo with Oshiroibana yeast
The brewer seems to have started using oshiroibana flower yeast two years ago, but I couldn't really identify the characteristics of the flower yeast.
◉Tochi Akane Junmai Ginjo Nama Genjyo
Made with rice called Nasuhikari. It is gorgeous and thick, with a richness and a bit of bittersweetness. It has a richness and a bit of a bitter chocolate flavor. This is my favorite.
The brewer was having a business meeting with a Taiwanese buyer, so we moved on.

Hakuso Sake Brewery, located in Nakagawa-cho, Nasu-gun, Tochigi Prefecture, is a long-established sake brewery founded in 1887. Using water from the Nasu Mountain Range as brewing water, the brewery continues to brew sake that is close to the local rice and nature. While preserving tradition, the brewery is not afraid to take on new challenges, and is one of the most ambitious breweries in Tochigi, focusing on innovative sake brewing using fruit yeast.
Tochiakane Strawberry Yeast Brewing" uses yeast isolated from strawberry flowers to maximize the power of natural fermentation. It has an impressive rosé-like color with a light crimson hue and a sweet, fruity aroma. The taste is light and easy to drink despite its 17% alcohol content, and goes well with both Japanese and Western cuisine. It is a gem of a fusion of playfulness and skill that gives sake a new appeal.
It is said to be brewed with strawberry yeast, but I don't really taste or taste it that much.
Nevertheless, the interesting thing is that when you drink it, you are pulled in by its words and label.

Tochi-akane Strawberry yeast brewed RED
A brewery in Nakagawa-cho, Tochigi Prefecture.
This sake is brewed with rice grown in Tochigi Prefecture and strawberry yeast.
It has a gentle fruity aroma, firm rice flavor, fresh acidity, and strawberry yeast.

I get a thin taste of strawberry flavor, but the rest of the flavor is artificial. To be honest, this is not good.
It's a KURAND original, but I don't think I'll buy this kind of thing again.

At first, fluffy, gentle aroma of fermentation, like ripe fruit, flabby ^ ^.
The sweetness of the rice and the slight sourness of the fermentation...
At the end, a slight bitterness accents the taste! I can't get enough of it ^ ^ ^
It's pretty good 😋.

Tochikane is a brewery that we were allowed to sample a lot at the previous traveling SAKE.
◉Tochiakane strawberry yeast brewed RED
It was slightly sweet and easy to drink, but I thought it was a bit sharp and strong, so I looked at the label on the back and saw that it was 18% alcohol by volume.
◉Tochi Akane Abelia yeast brewed
The sweetness and acidity are impressive. The sweetness and acidity are impressive.
Goyotei Junmai Ginjo
The acidity is very clean and sweet, with a rather refreshing aftertaste.
◉Kuramoto-brewed amazake
The first taste is smooth, creamy and refreshing, but the sweetness spreads quickly afterwards.

I have tasted Tochikane's strawberry yeast brewed sake in the past, but this one has a light red color.
I didn't check if they use peach yeast or red rice, so I'm not sure 😅It's a very strong drink with a sharp taste that makes you feel like you're drinking it hard!
The brewer said he recommends drinking it on the rocks.
Tochikane Daiginjo with Abelia yeast
I drank this one when I was at Hanshin Department Store, but it has a more relaxed atmosphere than the original.
Goyotei Junmai Ginjo
It was delicious, with a clean yet mellow flavor.
Kuramoto-brewed amazake
Easy to drink, but not very impressive. I felt it was just ordinary amazake.
I was also interested in Sansho and coffee shochu, but there is no end to it.

I stopped by the "Toast Festa 2024 with Toast with Tochigi Local Sake" held at Orion Hall in Utsunomiya. It was already very crowded when I arrived at 16:00 on Saturday 😆.
I started with a sake I had never had before 😁.
The color is pale yellow 🟡.
Smell is slightly sweet.
The taste is strawberry🍓feeling and clean sweet like banana🍌.
The sweetness slowly takes effect in the aftertaste.
The sweetness is unique and interesting 🍶.

Monthly Tochigi love 🥰 ongoing
Since I bought it at the traveling SAKE shop in the Hankyu Department Store last year.
This time at Hanshin Department Store.
The last time I bought it, it was hi-ire, but this time it was a nama sake. I think the hi-ire sake has a stronger strawberry flavor, but I think I can taste more sweetness in the nama sake.
I hope they will come to Kansai again because they have a variety of flower yeast sake.
Next time I want to buy Daiginjo Oshiroibana or Abelia that impressed me so much when I tasted it!
After 3 days from opening, it seems to have more strawberry taste.
After a few more days, it seems to have a stronger pungency...

This brewery is located in Nakagawa-cho, Tochigi Prefecture.
Tochigi-grown "Yumesasara" rice is polished to 50%.
It has a gorgeous aroma, a gentle rice flavor, and a well-balanced, robust flavor and sharpness.
Well-balanced, robust flavor with a crisp finish.
