A happy repeat of Jigokudo! They use Asahi, an old rice variety used for sushi rice! Mouth opening was light bodied, but on the second day, it started to thicken! Transparent! Strong 🍊 aroma! When it's kumquat, a mellow acidity like grapefruit or orange attacks! The sweetness and bitterness come together around the acidity! The bitterness is an art form that makes you want to drink more and more! As the temperature rises, it becomes quite sweet, but the acidity weakens and it becomes lackluster (although it is delicious), so I like it at 5-10 degrees. I like it at 5-10 degrees. It is a sake that can express its character even when served cold! It was good on the first day, but on the second day, the sweetness opens up while maintaining the best parts, making it even better! Jikin is also good for changing flavors, so when available, a bottle is a must! The longest I can stay in Fukui is only a little over a year and a half left 🥲 Fukui has a lot of local sake that is not well known throughout Japan, including Tsuneyama, which I adore, and Echizen Sake Shop Hayashi, where you can buy great sake from all over Japan, which is a blessing for sake drinkers.... It's just so nice to be able to line up and buy a bottle of Niimasa or Jikkai. That alone is worth moving to Fukui City. I don't want to leave 🥲.

Good evening, Termat! I'm jealous of your sunrise - I missed the drawing the other day 🤤. Fukui Prefecture is a wonderful town. ⤴️ I've never had the pleasure of visiting Tsuneyama, so if I see you there, I'll try to take you there 🤗. There are so many sake I want to drink!
