What else is going on at this brewery? The sake is so cosmetically pleasing that it makes you wonder, "What else is going on at this brewery? I would be wary of cheap sake, but you can tell that they brew sake with care, and this is a long-established brewery.
I didn't pay attention to it at the time, but at the store where I bought it, it was kept at room temperature (at special stores it is in the refrigerator), but without any twitchiness. What's going on?

Unnoi Ginjo Koshu Hinichishin
It has a golden color reminiscent of whisky, an aged aroma similar to soy sauce, a smooth mouthfeel with a caramel-like sweetness and a unique aged aroma, and a punchy burnt caramel aroma with a light aftertaste.
This one had been aged since 1993, and it tasted like it was about to wake up to old sake✨.

I was looking for my favorite "Hakugakusen" and found that it was only available on the first day of the event, so I went here instead 🍶.
Unnoi Junmai Ginjo Nama Genjyo.
Banana-like aroma, gentle sweetness on the palate, and a lingering mild umami aftertaste.
I have a connection with "Kumonoi" since I brought it to the Kansai Sake-no-Iwa offline meeting I attended last summer, and it is still delicious when I drink it again.

This was also the first time for me to try Kumonoi.
Speaking of Fukui sake, I love Bon, which is available in my neighborhood, but I had never had any other sake properly, so this was a good opportunity for me.
It is made from sake rice called Sakahomare, which I have not heard much about, and it is squeezed in a bag, so it is sure to be delicious in all the right places. ❗️
The rice flavor was well spread, with a slightly fruity aroma and a lingering aftertaste.
