In the mouth, it has a soft sweetness and a pear-like ginjo aroma. The acidity is not strong, but the aroma is strong. The spicy bitterness that comes afterwards, brings the taste together without being unpleasant. It is delicious! Reasonably priced too.

1618 yen @ Hasegawa Sake Shop, Gransta Tokyo
In the mouth, there is a clear but soft carbonation, a hint of ginjo aroma, and a solid rice aroma. It is good. The aftertaste is also rice aroma and flavor. Not too flamboyant, but with presence, this is a delicious sake.
My favorite 3.6/5.0
The moment it enters the mouth, it gives a soft impression, and upon investigation, it turns out that super soft water is used. It has a moderate sweetness, a strong amino acid flavor, a melon-like ginjo aroma, and a slight bitterness at the end. The overall taste was soft, but with a strong flavor and aroma typical of nama-zake. Delicious! And cosy!

At Hasegawa Sake Shop in Tokyo Station. Nama-shu, freshly pressed, junmai-ginjo for 1,265 yen? Really? I picked it up and went straight to the cash register.
Fresh ginjo aroma, very slight effervescence, moderate sweetness, and a strong austerity throughout. Might it go well with food? Cosy!

Hakkaisan led the beginning of the local sake boom. This is a bottle of summer sake that was not around back then when people were talking about "Senda Man". It is delicious when well chilled, with a full-bodied aroma. It has a strong alcohol content and a spicy aftertaste. It goes well with food.

Suddenly it became hot, so I chilled a summer sake. From a full-bodied sweetness, soft acidity and ginjo aroma. Overall, it is soft and fluffy. It tastes great chilled!
My personal preference: 3.7/5.0
Not too floral apple aroma and a touch of astringency there. Generally refreshing. It is like eating edible flowers. The sweetness is refreshing and surprisingly spicy. I would have liked to try the brewery's recommended way of drinking it: well chilled and in a wine glass.
My own preference 3.5/5.0
Summer sake. Chilli carbonation, moderate sweetness and rich umami, with a strong bitterness. It is quite spicy. The lack of acidity is not enough, but this is good.
3.5/5.0 for my taste.
What a beautiful label. Light gasiness, elegant ginjo aroma and juicy sweetness, then light astringency. I guess this astringency is something you either like or dislike. I like it.

The 1314 represents Association 14 yeast and 13 degrees alcohol. It is light in alcohol, but its juiciness and elegant sweetness, like that of wasanbon, are refreshing and enjoyable. It is easy to drink and of high quality, making it a good introduction for those who do not normally drink sake.
My personal preference: 3.6/5.0
An affordable bottle of Laughing Shiki. It is a relatively dry sake, but has a moderate sweetness and ginjo aroma, making it perfect for a mid-meal drink.

The sweetness and light acidity come first, followed by a robust umami and a good amount of ginjo aroma. It is thick and solid. You can drink it with just sake. It is delicious!

A bottle with a gorgeous label sold at Seijo Ishii.
Subdued sweetness, tingling, and rice aroma. I think it's a bit spicy, with less flamboyance and ginjo aroma than the label suggests.

They say it's for oysters, so I went with raw oysters.
It was indeed a perfect match for oysters. But as a sake, it had a half-hearted sweetness followed by malic acid and then a grainy smell. It wasn't very good. I can't eat oysters all the time.

unpasteurized sake
This is a delicious sake. The rice-derived sweetness and amino acid flavor that is typical of unpasteurized sake comes with a bang. The aftertaste is spicy and refreshing. I also enjoyed the tingling carbonation right after opening the package. Personally, I would have preferred a ginjo aroma along with the umami. But the umami is very appealing.
My personal preference: 3.6/5.0
Light cloudiness and weak tingling. There is sourness and a faint ginjo aroma, but from there the umami and the sweetness of the rice and the aroma are strong. It's a bit complex and hard to describe, but it's delicious.
My personal preference: 3.7/5.0
At the end of the year, we had a sip of this sake with a gorgeous label. It starts with a sticky sweetness, followed by a firm umami taste, and then an astringent taste typical of Junmaishu. And yet, it has a beautiful aftertaste with no miscellaneous flavors. This is delicious!

The sweetness spreads softly in the mouth. The ginjo aroma is subdued and there is a hint of apple. It seems to end as it is, but the umami comes. There is no miscellaneous taste, and the aftertaste is refreshing. It's delicious!
