We met again this year, Nilwolf. The concept is to change the theme every year and try a different flavor of sake from Ni-Rabbit. This year's theme is "Low Refining". It is brewed with 80% polished Aizan. It has a clean taste with pleasant umami and acidity. Although it is a low-polished sake, you can taste the typical Aizan flavor. Chibiri with a dish using tomatoes produced in Okayama City, Aichi Prefecture, the same city as Maruishi Brewing. A good partner that gently supports the flavor of the dish. It is a bottle that gives you a different taste from Ni-Utsuri once a year. It is delicious. ❗️

Today's drink is an odd one. We opened a bottle of "Tsukihi", a collaboration between our favorite manga "Space Brothers" and Hibi Brewing. The sake cup next to it is also a special partner of the collaboration. A pleasant sound when opening the bottle. We poured it into a large sake cup and took a sip. The taste is light and refreshing with a refreshing acidity. The lightness of the sake, with an alcohol content of only 11%, makes you think of the difference in gravity between the earth and the moon. I would like to drink it again on the moon when I travel to the moon someday. Delicious: ‼️

Koei Kiku was found at a liquor store on a short trip. I opened a bottle of "Hakutsuki", which I had never had before. It is an unfiltered, unpasteurized sake brewed with 100% Jinriki. It has a slight effervescence that tingles on the tongue. The acidity passes down the throat pleasantly, and the taste is clear and clean. This is delicious. ‼️ Enjoy it slowly and cool it down. Sake from Kochi obtained on a long expedition. I was attracted by the copy, "This is a classic sake that even Rui Yoshida chose as a bottle he would like to take with him to a desert island. I was attracted by the copy and bought it without a second thought. It comes in a box, but as it is a standard sake honjozo, you can get change for 1,000 yen. It has a refreshing taste that goes down your throat and fits easily into your body. I drank it chilled, but the flavor mellows out as the temperature drops, giving the impression that it could be enjoyed warmed up. A bottle that impressed me with the greatness of local sake for everyday use. Delicious. ‼️

A bottle of sake from a brewery we stumbled upon on an expedition. We opened a bottle of freshly squeezed new sake, which is unique to the brewery. It has a beautiful golden color. The aroma is restrained, but the mouthfeel is firm and robust. Although it contains brewer's alcohol, the alcohol content is between 18 and 19 degrees Celsius, which makes it a good sake to be warmed up. Here is a sake we came across on our expedition. This is a sake made by Mute Mukan, the maker of the chestnut shochu Dabada Hiburi. It was the first time I knew they made sake. It has a soft taste and a smooth aftertaste. The soft taste is impressive, perhaps due to the Shimanto River's brewing water at the mouth. It is a bottle that makes you feel the nostalgia of a sake brewery that makes shochu. It is delicious.

Gassan's Innovation Series. The unrefined sake is controlled at low temperature and has an alcohol content of 11%. This is the first time I have had a low-alcohol sake. The taste is beautifully sweet with soft peachy fruitiness. Because of its low alcohol content, it seems to be a good aperitif in summer when well chilled. This is one of those bottles that made me feel the breadth of Japanese sake brewing. Delicious ‼️

The first bottle of Rusty Cat Rocks dry x3, released on June 9 (Rocks Day) from Inomata Shuzo, was opened for the first time. The first sip has a smooth, bitter and umami flavor. The flavor is perfect for a food sake, where you can feel the umami on your tongue. This would be a perfect match for a rich Chinese meal or a Western meal with a thick demi-glace sauce. This is a bottle that made me feel like I had a new encounter with a cute cat. It is delicious.

The description of the product said that it was a secret brewer's sake, aged for half a year in low temperature storage. The first sip of this sake has a melon-like aroma, and the taste is full of mellow flavor. The taste is rich and mellow, with a full mouthful of fresh fruit.
