This is the first time I have had three grains of spring sake from Daimine Shuzo. I opened the bottle while suppressing my excitement. It is fresh and crisp, with a slight effervescence, and a soft, sweet fruitiness. It is a nigori sake with a slight leesiness and a soft change in flavor. A bottle that I found to be delicious without any overpricing. Delicious ‼️

We opened a bottle of Kraft Masayuki, which we occasionally encounter at a local liquor store but have never had the pleasure of meeting. The label is a pop-up and the description on the back is written in English. It has a soft mouthfeel and a softly fragrant ginjo aroma. It is not tiring to drink and can be enjoyed as an aperitif or an in-between-dinner drink. This is a sake that I am sure will make a good match with someone overseas who is encountering sake for the first time. Delicious: ‼️

I opened a bottle of this one, which I bought at a liquor store on a short trip because I fell in love with the label. It is a Vikaten from Tenpouichi in Hiroshima. The specs are undisclosed. The taste is like biting into a small grape, with a sweetness and acidity that goes down your throat smoothly and beautifully. It seems to be an easy match for Japanese food as a mid-meal sake. I am grateful for the once-in-a-lifetime encounter I had with the liquor store where I went on my trip. Delicious ‼️

This is the first "Hyakumangoku No Shiro Nama Shu" from my favorite brand "Yoshida Kurau". The fresh green label is impressive. The taste has a pleasantly bubbly and slightly effervescent taste with a soft sweetness and a clean aftertaste. The alcohol content is 13%, which makes it easy to drink even though it is a pure sake. It is a seasonal sake from January to March, but it can be enjoyed all year round. It is delicious. ‼️

Sake from Nagano, Japan, which was given to us as a gift. I opened a bottle of "PRINCESS TIME" by Maihime Sake Brewery, which I had never had before. The bottle is slimmer than a four-pack and looks like a liqueur bottle. The taste is soft and sweet, followed by a sourness that leaves the impression of biting into a grapefruit with sugar on it. The alcohol content is light at 7 degrees, making it a good aperitif. This is a bottle of sake that I would like to thank for the encounter with the sake I received as a souvenir. It is delicious.

Sake of the season for me. Otter Otter is a seasonal sake for me. It is a twice-a-year product, but when I see this sake, I feel that it is almost spring. Just by bringing it close to your mouth to drink, you can smell the gorgeous ginjo aroma, and when you put it down your throat, you can feel the fruity, fresh sweetness. You can pair it with food, but you will want to face the sake with a simple, nutty snack. I hope I can make time to face this sake again next year. It is such a bottle for me. Delicious ‼️

This is a limited edition leap year sake from Eikoufuji. Four years ago, I hadn't even encountered Eikoufuji, so naturally, this is the first time I've had it. It has a well-rounded acidity, sweetness, and a clear taste. Although it is a pure sake, it goes down the throat smoothly without feeling heavy. I am sure we will not be able to compare the taste in the next leap year, but this is a bottle that I want to remember to encounter in the leap year. It is delicious. ‼️

Sake from Nagano, Japan, was given to me as a gift. When I opened the unfamiliar box, I found a crisp, modern designed sake bottle. A closer look reveals that it is from the Miyasaka Brewery of "Masumi. This is the first time I have had this sake. It is a junmai ginjo made with Masumi's No. 7 yeast. The first sip is clear and tasteless, with no cloying flavors. When you savor it slowly in your mouth, the flavor spreads as if it is soaking into your palate. It is said to be a food sake, but it is a good partner for Japanese cuisine and other dishes that make the most of the ingredients. This is a bottle that pleasantly betrays my image of "Masumi". It is delicious. ‼️

A bottle of Kijo-shu from Masamune Instrument, which uses sake as part of its brewing water, was opened. It has a mellow taste with a soft sweetness that spreads quickly. The alcohol content is surprisingly light at 13 degrees Celsius, which is a bit surprising given the gap between the taste and the alcohol content. I have been enjoying various brands of kijoshu recently, and this bottle made me feel the expansion of the way to enjoy sake. Delicious: ❗️

Sake from Nagano, Japan, given to me as a gift. This is the first time to drink "Kamito". It has a soft, rounded and gentle taste, with a good balance of umami and nourishment. Although it is not a pure sake, it has a high alcohol content of 17%, but I can drink it easily without being bothered by it. Souvenir sake is a once-in-a-lifetime opportunity to meet a sake that you would not normally encounter. This is a bottle that I would welcome such an encounter. Delicious ‼️

We opened a bottle of this one that we got at a brewery on our February expedition. After talking with the store staff, I chose "Seikai" instead of "Nikko Homare" because I thought it was something that could only be drunk in my hometown. It was freshly squeezed just a week ago. It has a strong acidity up front with a firm umami flavor. It is not gorgeous, but it gives the impression of a robust flavor. It is a bottle that makes you want to enjoy other brands as well.

The first bottle of Akita Bijin's "Yuki no Bijin" was opened, following Nanbu Bijin. This is an active nigori sake. The bottle has a "Caution: Open Bottle" label on it. When the cork was opened, bubbles and bubbles came out of the bottom of the bottle. Oops, close the cork and slowly open the bottle while keeping it calm. It has a strong sense of bubbles and a pleasantly sour and umami taste in the mouth. Although it is a kijo-zake, the alcohol content is low at 14 degrees, so it is gentle to the palate. It is a kijo-zake with an image of an after-dinner drink, but it is also a perfect toast. Delicious: ❗️

My personal representative when it comes to Iwate sake is Nanbu Bijin. It's been a while since I've had it at home. I opened a bottle of Shiboritate Nama-nihon-shu. It has a soft mouthfeel, but the flavor is concentrated. Suddenly, the image of a rice ball tightly pressed in a tight grip came to mind. It is a bottle that makes me excited to see what I can serve with it. It is delicious. ❗️

It has been a long time since I was on an expedition. Since we were in the car, we opened a modest sized bottle of this. It is a junmai sake made from Tochigi rice. Although it was a travel sake, we forgot to prepare a cup and drank it straight from the bottle. It has a soft taste with an impressive sweetness. If it were warmed up hot, the sweetness would be reduced and the sake would be more balanced. I thought it was nice to encounter many kinds of sake when traveling.

Tenpyo" is a wine that I was curious about after drinking it for the first time last year. Last time, I had "Akaban Oumachi", and this time, I tried "Banshu Aizan". The floral aroma and umami spread gently on the palate with a tight aftertaste. I suddenly wondered if it would be competitive with strong-flavored Chinese food. It has a rich flavor, and we would like to share it with people who like Nishi Shuzo's shochu. It is delicious. ‼️
