This is a Yamadanishiki daiginjo brewed by gathering the best quality sake from Kuroryu in the auspicious No. 88 tank. It has a smooth texture and a clear, soft sweetness that spreads on the palate and goes down the throat easily. It is delicious. A long time in the making. Opened a bottle of G Type with a stylish impression of the sake bottle. The Impression series was brewed with the aim of creating a fresh, unpasteurized sake. In the mouth, it has a beautiful flavor with a slight effervescence and a cool sensation. The gentle taste makes you want to drink more and more. At a local liquor store, I found an Aizu Nakasyo from Fukushima, which I usually don't come across. It was also the first unfiltered shibori-shibori. I opened the bottle while suppressing my rising emotions. The rich flavor and nourishment slowly spread to the palate. It was a perfect match for the hot oden, which was served with dinner and consisted mainly of fish paste. It makes me wonder what other snacks would go well with this bottle. Delicious ❗️

Today, we opened a bottle of Drunken Whale Potato Chip Marriage Set from KOIKEYA as a sake that goes well with potato chips. Drunken Whale is a junmai ginjo brewed with Ginpu, Hokkaido's preferred rice for sake brewing. First, taste only the sake. It is a food sake with a clean taste and an impressive aftertaste with a sharp acidity. Next, we paired it with potato chips. The potato chips are "Bonito Sake-Tobori Flavor. It has a strong salty, rich flavor. When this is combined with sake, the umami expands and mixes with the acidity of the sake, transforming the potato chips into a snack. The concept of sake to go with food also attracts me to this bottle. Delicious ❗️

The last sake of the year is Miyazumi's seasonal sake. We opened a bottle of Junmai Nigori Nama Sake. The beautiful pale blue label is impressive. The nigori at the bottom of the bottle looks like a powdery snowflake when it is poured. The refreshing sweetness is pleasantly gentle and sweet. When the nigori is stirred, it gives the sake a more gentle taste. This is a bottle that makes you want to wish for another year of leisurely enjoyment of this delicious sake. Delicious ‼️

Makihata" by Takachiyo Shuzo. This is the first time I have had it. It is an unfiltered unpasteurized sake brewed using 100% "Ipponshime" sake rice grown in Uonuma, Niigata, and carefully polished with flat polished rice and micro-bubble rinsed rice. It has a slightly fizzy taste with a tangy sensation on the tongue. The taste is clear and clean with a fruity sweetness and a refreshing aftertaste. I don't know if this is a characteristic of the sake rice or a result of the meticulous rice polishing, but I don't care as long as it tastes good. This is a bottle that I would like to compare with other Takachiyo sake brewery's products. It is delicious. ‼️

Here is the third snowman of the year. This is the first time we will have a snowman of Izumibashi and a big snow nigori. When I opened the bottle, I heard a pleasant sound. Bubbles are coming from the bottom of the bottle. It is a strange sensation as if powdered snow is rising from the bottom of the bottle. The taste is a mixture of sweetness and acidity with a hint of lactic acidity. A seasonal sake perfect for toasting winter dishes. I wish I could taste it on a snowy day next year. Delicious: ‼️

The best of the best. I'm not sure if it's a good idea to buy a new one. The fruitiness and umami with a sense of stability spreads with a sense of gas with a slight bubbling. It's a very good one. It's a seasonal Collage sake. This is a winter limited edition. The first is the "Nama Shu" and the second is the "Oragami". The first time I went to the restaurant, I was surprised to find that the staff was very friendly and helpful. It has a mellow taste with concentrated sweetness and flavor, and a refreshing mouthfeel. Even if there is no snack, you will be tempted to take another sip with this flavor. The year is almost over. It is the Year of the Rabbit, and I feel like I have drunk many different types of Ni-Rabbit. We opened a bottle of this year's Ni-Rabbit to finish it off. It has a fresh sweetness that is typical of nama-zake, and a pleasantly nourishing taste. Sake brewed with Yamada-Nishiki has a strong impression of being a beautiful sake, but this one is beautiful and has a deep and complex flavor. There are many other sake that I would like to drink, but this is one that I will continue to pursue next year. Delicious ‼️

The second snowman of the season. This time we opened a bottle of Sengoku nigori sake. The bottle was gently opened by slowly twisting the perforated stopper, which is unique to nigori sake. When the bottle comes into contact with air, bubbles swell up from the bottom of the bottle, and the two layers of sake are naturally stirred together. The first thing to do is pour the top clear liquid into the sake cup and gulp it down. The fresh fruity flavor spreads pleasantly on the tongue. Next, the bottle was shaken lightly and the pure white nigori sake was gulped down. The taste gently changes to a milky lactic acidity. A wonderful bottle to enjoy the changes in flavor as you drink it. Delicious: ‼️

This one was a gift. The beautiful green box in which the bottle was placed made me stand up straight to open the bottle. It has a beautiful taste with a clear umami that fits smoothly on the tongue. I usually drink mostly junmai sake, but I was surprised at how delicious daiginjo can be in the hands of a long-established sake brewer. This is a bottle that made me want to taste Ryuryoku's regular sake as well.

Every year at this time, I look for the snowman label. This is Izumibashi's "Wintering Dragonfly Eggs and Snowman Label. Please look carefully at the label to find the dragonfly eggs. This is the first new sake of the year. The taste is pleasant with a pleasant acidity and a clear umami flavor that easily fits in the throat. I tasted it cold, but the brewer recommends heating it up to lukewarm, so I may try that as well. I enjoy sake all year round, but the coming season is my favorite, with new sake and heated sake. Yamekoto Hajime" we have been following after coming across it this year. We opened the third bottle, brewed with 100% Gin-no-sato from Fukuoka Prefecture with a low alcohol content (13%). It has a well-defined acidity and a beautiful umami flavor. Considering the low alcohol content, we were a little surprised by the strong impression of umami. The label says it goes well with "squid sashimi (salt or Kyushu's sweet soy sauce)," and it is a great food sake type that goes well with the stickiness of squid sashimi. The next release will be after the new year, so this is a bottle you will want to keep an eye on. Not many sake stores seem to carry it, so if you come across it, please give it a try. Delicious: ‼️

Today, we opened a bottle of this colorful sake, a change of pace from the usual. This junmai sake was stored in oak barrels used to store red wine. The pale peach color is eye-catching, probably due to the remnants of the red wine. The taste is gentle, with a pleasant acidity that spreads quickly and slowly spreads to a delicious flavor. It is a strange sake with a gap between the appearance and taste in a good sense. Moreover, the rice polishing ratio is 85%. This is a surprise. This is a strange bottle that reminds us of the wide range of Japanese sake. It is delicious. ❗️

The first time I had a chance to drink "Moribarai" from Sawaya Matsumoto, I opened a bottle of this that was bottled in March 2021 and shipped from the brewery. It has a slight effervescence due to slow and spontaneous fermentation. On the other hand, it has a fresh taste that is hard to believe it is a 2-year aged sake. The gentle, fruity flavor of the first sip disappears quickly in the mouth, giving the impression of cotton candy. This is a bottle of sake that is intoxicating in the enjoyment of letting it sit in the bottle. Delicious: ‼️

I had been curious about this shochu at a local liquor store, but the timing wasn't right and it was my first time to try it. I was excited to try it because it was my favorite Akaban Omachi, and because it was a draft sake from the Nishi Shuzo brewery, which I had always loved shochu. The flavor was mellow and robust. It is beautiful but has a strong core flavor, which is slightly similar to that of Hozan shochu. It seems to be a good food sake that can be easily matched with rich flavored dishes. There are many sake that I have yet to encounter, so this is one that makes me wish I had traveled all over the country. Delicious ‼️
