When drunk with local fish, the umami comes to the forefront and it is a perfect match. It is also great with dishes full of umami such as simmered dishes. It is like a Japanese sword with a sharp cutting edge, carried by a wild samurai. A bottle that will make you thankful for the encounters you have had on your travels. Delicious. ❗️

Here is a sake we came across on our expedition. This is a sake made by Mute Mukan, the maker of the chestnut shochu Dabada Hiburi. It was the first time I knew they made sake. It has a soft taste and a smooth aftertaste. The soft taste is impressive, perhaps due to the Shimanto River's brewing water at the mouth. It is a bottle that makes you feel the nostalgia of a sake brewery that makes shochu. It is delicious.

During a long expedition. At first, we opened a bottle of this one, which uses Shimanto River subsoil water as the brewing water. The soft and relaxed flavor overlaps with the image of the smooth surface of the Shimanto River. This is a bottle that gave me a taste of the real pleasure of traveling and encountering sake that I would not normally encounter. It is delicious.

Gassan's Innovation Series. The unrefined sake is controlled at low temperature and has an alcohol content of 11%. This is the first time I have had a low-alcohol sake. The taste is beautifully sweet with soft peachy fruitiness. Because of its low alcohol content, it seems to be a good aperitif in summer when well chilled. This is one of those bottles that made me feel the breadth of Japanese sake brewing. Delicious ‼️

The first bottle of Rusty Cat Rocks dry x3, released on June 9 (Rocks Day) from Inomata Shuzo, was opened for the first time. The first sip has a smooth, bitter and umami flavor. The flavor is perfect for a food sake, where you can feel the umami on your tongue. This would be a perfect match for a rich Chinese meal or a Western meal with a thick demi-glace sauce. This is a bottle that made me feel like I had a new encounter with a cute cat. It is delicious.

Since my Miyagi expedition, I have been curious about Miyagi sake. This time, we opened a bottle of "Namazume Mature Kurakakushi" from "Tenjo Yumegen". The description of the product said that it was a secret brewer's sake, aged for half a year in low temperature storage. The first sip of this sake has a melon-like aroma, and the taste is full of mellow flavor. The taste is rich and mellow, with a full mouthful of fresh fruit. This is a bottle that will likely get you hooked on Miyagi Prefecture sake. Delicious: ‼️

It has a refreshing sweetness and a clean taste. It has a clear and clean taste that makes you feel cool on a hot and humid night. Since it was Tanabata Sunday, we opened a bottle of "DATE SEVEN SEASON 2" Orihime bottle. From the first sip, a gentle sweetness and a hint of bitterness spread out. It has a gentle and soft taste, and seems to go well with Japanese food with a strong dashi broth. The image is that of a gentle, smiling Yamato Nadeshiko. The Milky Way appears when the two bottles are placed side by side. This is a wonderful attempt. Delicious ‼️

The early summer heat is making us feel like Japan is turning into a subtropical zone. We opened a bottle of this one, attracted by the pop label and the word "tropical. The aroma is sweet like molasses, and the taste is impressive with a soft sweetness. Although it is a pure sake, the alcohol content is kept at a low 14%, making it easy to drink. It has the sweetness of a sake cocktail, and it would be delicious in a cocktail glass decorated with salt. This is the kind of sake that makes you want to toast to beer on a hot day. Delicious ❗️

Expedition return. Second bottle of Izakaya Komachi. This is the first "Manazuru" I have had. Pale gold in color, it has a rather robust flavor. We had it cold, but it would also be enjoyable heated. (Heating sake in the car is not an option, though. I would like to enjoy other brands of "Manazuru" as well. It is delicious.

Sake sold on a sightseeing train during an excursion. I thought it was an unfamiliar brand, but it was from the Yamawa Sake Brewery of "Yamawa". It has a soft, clear sweetness with a refreshing aftertaste. It has a reassuring taste that makes you feel at ease. The accompaniment was dried hoya from Sanriku. Full of the aroma of the sea, it was a perfect match. A bottle of sake to enjoy the pleasure of local sake on your trip. Delicious ❗️

Local liquor obtained on the expedition. I drank it without any preconceived notions, but I was relieved by its clean mouthfeel and gentle flavor. I am sure it would be even more flavorful if drunk in winter. It is delicious.

I opened a bottle of "A-Sakura", which is a regular item at a nearby liquor store, but I never had a chance to drink it. It has a clear, crisp acidity and a core flavor. The alcohol content is high at 17% because it is a pure sake, but it is easy to drink without getting tired of drinking it. It is perfect for the early summer months when you are sweating. This is one of the bottles that made me think about digging into "A-Sakura" at the sake shop even more. It is delicious. ❗️
