A first-time encounter at a local liquor store. We opened a bottle of "Wolf Flame" from a brewery that brews "Chichibu Nishiki" in Saitama. Pouring it into a sake cup, I found it to be a beautiful cloudy white orikara. The taste is clear with little cloying flavor that goes down your throat easily. As you drink it and the temperature rises, you can taste the mellow flavor. I wanted to drink "Chichibu Nishiki," a regular sake, to feel the difference in taste. Delicious: ❗️

I went out to a nearby liquor store and opened a bottle of Noon Crescent, the first time I've had Koei Kiku's Noon Crescent. I opened the bottle slowly, feeling a bit nervous when I was warned to open the bottle. I sipped it from a large cup, hoping for a nice, smooth sipping experience. It has a pleasant aroma and a slight effervescence that goes down the throat. The pleasant acidity and refreshing fruitiness can be felt. I think it is irresistibly delicious when drunk well chilled on a sunny, sweaty day. This is one of my favorite seasonal wines from "Koei Kiku". Delicious: ‼️

Kumazawa Shuzo, a brewery in Chigasaki, Shonan, opened a bottle of "Yokohama Soul" brewed with Gohyakumangoku from Yokohama. It has a soft mouthfeel and a gently expanding rice flavor. The taste is gentle and clean, betraying in a good way the impression of sake rice produced in Yokohama. It is a mysterious bottle that makes you feel like you are in the countryside in Yokohama. I opened a bottle of "Miyamizu no Hana", a blue sake bottle in a beautiful blue box that I received as a souvenir from my trip. It was served chilled, and the taste was crisp and clear. As time goes by, the flavor of the rice expands as it approaches room temperature. It seems to show a different face when warmed to lukewarm. I thought it was wonderful to enjoy new encounters with sake that we receive as souvenirs.

We opened a bottle of the 10th anniversary label of "Ni-Rabbit", one of our favorite brands since we first encountered it at a local liquor store. The usual Omachi 48 has a "異" character added to it. The taste is pleasantly balanced between acidity and umami, and the mouthfeel is firm with a strong umami flavor. I couldn't figure out what made it different from the usual Omachi, but it didn't matter in front of the deliciousness. Ni-Utsuri is already in its 10th year. Compared to Maruishi Brewery's 333rd anniversary in 2023, this bottle may not have been born yet, but it is one that I hope to be associated with for a long time to come. Delicious ‼️

Today, we opened a bottle of our favorite "Nito" kijo sake. It has a good balance of acidity and umami, and a soft sweetness that spreads gently on the palate. It is better as an aperitif or an after-dinner drink than as a mid-meal drink. The 500ml bottle is a bit extravagant, but I thought it would be nice to drink it as a celebratory drink on a special occasion. Delicious ‼️

Sake from Kanagawa Prefecture, which was given to us as a gift. I opened a bottle of "Hakone Kaido" which I have never had before. It was served chilled and had a full-bodied, robust flavor. When I ate it with Wasabi-zuke (pickled horseradish), which I received as a gift, the rich flavor flowed smoothly and beautifully, giving it a mysterious delicious taste. It is good cold, but it can also be enjoyed warmed. I was impressed by the good combination of local sake and local food. Delicious ❗️

We opened a bottle of our favorite "Ni-Uto" "Light Nigori Sparling". When we drank it before, it was the usual pattern of rabbits facing each other, but this time it was a baby monkey holding something bad............................ As the bottle opening warning says, it took a few minutes to open, and after a few minutes of holding it for a few minutes, I finally got a gulp. The aroma is pleasantly lactic, and the mouthfeel is a mixture of pleasant acidity and umami. Among sparred sake, this matches my personal taste perfectly. Purple Space" has been a favorite of ours this year. We opened a bottle of "Cotton candy label" with an eye-catching picture of cute cotton candy. It has a good balance of sourness and sweetness, and a gentle taste that leaves a sweet and sour aftertaste in the mouth. Although unfiltered, the alcohol content is kept low at 8 degrees, making it a good aperitif. The sweet and sour taste and low alcohol content makes it easy to drink and fits perfectly with the image of cotton candy. Delicious: ‼️

I opened my first bottle of "Kijoshu" from "Yoshida Kurau", which I tend to reach for whenever I see it at the liquor store. The first sip of this sake was a soft sweetness that spread out in a sizzling sip. It is different from the thick and rich image of kijo-zake, which is a unique approach of this sake. Although it is a pure sake, the alcohol content is kept at 12%, making it a good aperitif. I would like to hear what lovers of kijoshu have to say about this bottle. Delicious: ‼️

Otter Otter is a twice-a-year product. We unexpectedly got two bottles of this twice-a-year product, so we opened the bottle a little earlier to enjoy the freshness of this luxurious Otter. When we opened the bottle, we could smell the gorgeous ginjo aroma. The taste is more than lush, with a fruity umami that lingers on the tongue. Personally, I am attracted to the freshness of the wine right after it is sold, but I am also attracted to the charm of this wine after a little time has passed. I feel guilty about delaying the opening of the bottle because it is a seasonal sake, but it also has an appeal that makes me want to experiment and enjoy the flavor of the sake that has been laid down for a while. We opened a bottle of "SPRING LIGHT", a seasonal sake from Shinkame. This sake is brewed with Aomori Prefecture's Hanafubuki sake rice. It has a gentle taste with a soft sweetness that lingers on the tongue. The alcohol content is a little high at 16.5 degrees, but you can easily drink it without noticing. The cherry blossom color surrounding the label makes me want to enjoy this sake as a Hanami sake. Delicious: ‼️

A souvenir from the expedition, a cup of sake officially approved by the Asahiyama Zoo, is opened. The illustration is by Michiko Abe, an illustrator active in Asahikawa. There are three kinds of illustrations, and this one is "Hokkaido (northern land)". The clear acidity and pleasant umami are impressive, and the taste is refreshing with a hint of the northern land. There are three different illustrations, so I would like to collect the other two and display them on my next trip. Delicious ❗️

Expedition & empty sake. Opened the bottle empty with memories of the trip. It is in an aluminum can, but I posted it in the cup sake club. It is a beautiful sake with a clear flavor that goes through the tongue easily. It is a beautiful sake with a clear flavor that passes through the tongue smoothly. The beak that appears in the bottom of the print is a "Kumagera," a species of woodpecker that is protected as a natural monument in Hokkaido. It is a tasteful illustration. Otokoyama seems to have a wide variety of sake cups, so I wanted to try something else. Delicious ❗️

Expedition & Train Sake. When traveling on a trip, I can't resist the combination of local sake with a boxed meal from the train station. We opened a bottle of Takasago Shuzo's "Hourabuki". This junmai sake is brewed with "Yukihikari," Hokkaido's sake rice grown in Nakafurano, a farming village in Hokkaido. It has a nice acidity and umami flavor that would be great with dried seafood. It would be fun to drink it hot, which is not possible since we were in the car. The name of the sake, "Hourabuki" (meaning "blowing a big trumpet" in Japanese), is derived from the idea of "living a year in a cheerful mood by drinking delicious local sake. A bottle of sake that made me feel warm and happy.

Expedition & Train Sake. This time, we opened a bottle of the brewery's first pressing, which we got at the Takasago Shuzo brewery in Kokushimusou. There are many different types of Kura-shu Ichiban Shibori, but when in doubt, choose Junmai-shu. This is freshly pressed sake that is bottled raw without being heated. It has a refreshing ginjo aroma, and while it goes down the throat easily, you can taste the umami flavor. If you are not aware of the fact that it is unfiltered raw sake with an alcohol content of between 18 and 19 degrees Celsius, you can easily drink it. This is one of those bottles that makes you feel the pleasure of visiting the brewery. Delicious: ‼️

Today, I opened a bottle of "Yamaitachi" from "Kuromatsu Senjo", which I am interested in at a nearby liquor store. If you are curious about the reading of the kanji characters, please continue (smile). Yamaitachi" is "Yamaitachi", or "Okojo", a fairy of the forest. It has a wonderful flavor that is full of flavor but also light. As a hanami sake, you will want to drink it under the cherry blossoms, looking at the lovely label of Yamaitachi. This is one of the seasonal sake from Kuromatsu Senjo's animal series that you can't take your eyes off of. Delicious: ‼️

Although it is still chilly, we opened a bottle of Kirakucho's Sakura Bottle, the same bottle as last year, to enjoy cherry blossoms in full bloom at the table. The refreshing acidity and flavor of this food sake spreads softly and slowly on the tongue, just like the petals of cherry blossoms fluttering down. It is a perfect sake for cherry blossom viewing on a warm day. Delicious: ‼️

Today's drink is an odd one. We opened a bottle of "Tsukihi", a collaboration between our favorite manga "Space Brothers" and Hibi Brewing. The sake cup next to it is also a special partner of the collaboration. A little time has passed since I bought it, and when I opened the bottle, it shuffled open as if it was pushed out from inside. It has a light acidity and a pleasant umami flavor. Although it is a pure sake, it is light with an alcohol content of 11 degrees and makes you imagine the difference in gravity between the earth and the moon. It is nice to have a once-in-a-lifetime experience with a sake that is planned, but this is a wonderful bottle that I wish I could drink all the time. It is delicious. ❗️

Sake of the season for me. Otter Otter Tamaba Kumi. It is a twice-a-year product, but when I see it, I can feel the arrival of spring on my tongue. This sake is served in a Japanese style wine glass. As you drink it, you will be surprised by its gorgeous ginjo aroma, and when it goes down your throat, you will feel its fruity, fresh sweetness and umami flavor. The versatility of the sake on its own makes it a luxurious sake that makes you wonder what dishes to pair it with. I hope to be able to spend time with this sake again next year.
