Expedition & empty sake. Opened the bottle empty with memories of the trip. It is in an aluminum can, but I posted it in the cup sake club. It is a beautiful sake with a clear flavor that goes through the tongue easily. It is a beautiful sake with a clear flavor that passes through the tongue smoothly. The beak that appears in the bottom of the print is a "Kumagera," a species of woodpecker that is protected as a natural monument in Hokkaido. It is a tasteful illustration. Otokoyama seems to have a wide variety of sake cups, so I wanted to try something else. Delicious ❗️

Expedition & Train Sake. When traveling on a trip, I can't resist the combination of local sake with a boxed meal from the train station. We opened a bottle of Takasago Shuzo's "Hourabuki". This junmai sake is brewed with "Yukihikari," Hokkaido's sake rice grown in Nakafurano, a farming village in Hokkaido. It has a nice acidity and umami flavor that would be great with dried seafood. It would be fun to drink it hot, which is not possible since we were in the car. The name of the sake, "Hourabuki" (meaning "blowing a big trumpet" in Japanese), is derived from the idea of "living a year in a cheerful mood by drinking delicious local sake. A bottle of sake that made me feel warm and happy.

Expedition & Train Sake. This time, we opened a bottle of the brewery's first pressing, which we got at the Takasago Shuzo brewery in Kokushimusou. There are many different types of Kura-shu Ichiban Shibori, but when in doubt, choose Junmai-shu. This is freshly pressed sake that is bottled raw without being heated. It has a refreshing ginjo aroma, and while it goes down the throat easily, you can taste the umami flavor. If you are not aware of the fact that it is unfiltered raw sake with an alcohol content of between 18 and 19 degrees Celsius, you can easily drink it. This is one of those bottles that makes you feel the pleasure of visiting the brewery. Delicious: ‼️

Today, I opened a bottle of "Yamaitachi" from "Kuromatsu Senjo", which I am interested in at a nearby liquor store. If you are curious about the reading of the kanji characters, please continue (smile). Yamaitachi" is "Yamaitachi", or "Okojo", a fairy of the forest. It has a wonderful flavor that is full of flavor but also light. As a hanami sake, you will want to drink it under the cherry blossoms, looking at the lovely label of Yamaitachi. This is one of the seasonal sake from Kuromatsu Senjo's animal series that you can't take your eyes off of. Delicious: ‼️

Although it is still chilly, we opened a bottle of Kirakucho's Sakura Bottle, the same bottle as last year, to enjoy cherry blossoms in full bloom at the table. The refreshing acidity and flavor of this food sake spreads softly and slowly on the tongue, just like the petals of cherry blossoms fluttering down. It is a perfect sake for cherry blossom viewing on a warm day. Delicious: ‼️

Today's drink is an odd one. We opened a bottle of "Tsukihi", a collaboration between our favorite manga "Space Brothers" and Hibi Brewing. The sake cup next to it is also a special partner of the collaboration. A little time has passed since I bought it, and when I opened the bottle, it shuffled open as if it was pushed out from inside. It has a light acidity and a pleasant umami flavor. Although it is a pure sake, it is light with an alcohol content of 11 degrees and makes you imagine the difference in gravity between the earth and the moon. It is nice to have a once-in-a-lifetime experience with a sake that is planned, but this is a wonderful bottle that I wish I could drink all the time. It is delicious. ❗️

Sake of the season for me. Otter Otter Tamaba Kumi. It is a twice-a-year product, but when I see it, I can feel the arrival of spring on my tongue. This sake is served in a Japanese style wine glass. As you drink it, you will be surprised by its gorgeous ginjo aroma, and when it goes down your throat, you will feel its fruity, fresh sweetness and umami flavor. The versatility of the sake on its own makes it a luxurious sake that makes you wonder what dishes to pair it with. I hope to be able to spend time with this sake again next year. We opened a bottle of Junmai Nakadori Namaizu Sake from "Yamori" that we came across at a nearby liquor store. The first sip reveals a pleasant acidity, and the flavor is slightly effervescent with a delicious umami that goes down the throat. The alcohol content is a solid 16 degrees, making it a versatile sake that can be served at any table, Japanese, Western, or Chinese. I would like to try other brands of Yamori to see the difference. We opened a bottle of "Thirteen Nights" from "The Moon After the Rain", brewed at Aizan with a special brewing process by a liquor store (Kissho). The mellow aroma and umami spread to the tongue, bringing the flavor to the forefront. Although it is a pure sake, the alcohol content is kept at a low 14%, which makes it easy to drink. This is a great bottle to drink regularly, not just as a special brew. Delicious. ‼️

This is a draft sake from "Kunoshininin Kuheiji". The label reads, "A sweet time (time) foretold," and I opened the bottle. The first sip reveals a clear flavor, pleasant acidity, and fizziness, and a lingering aftertaste that lingers down the throat. This is a luxurious taste. It is often given as a gift, but it has been a long time since I drank this bottle at home and was intoxicated by its deliciousness. It is delicious. ‼️

It's been a long time since we have had a bottle of kijoshu. This time, we opened a bottle of this one, brewed to commemorate the "123rd anniversary" of Yamamoto. To commemorate the 123rd anniversary, it was cold aged for 12.3 months in a thermal tank cooled to 1.2°C. The numbers are elaborate. It has a tender texture that is typical of kijoshu. The taste is soft and has a honey-like sweetness that lingers as an aftertaste. Although it is a kijo-shu raw sake, it is also nice and easy to drink with an alcohol content of only 14 degrees. This is one of those bottles that made me want to enjoy Yamamoto's kijoshu as a regular. Delicious: ‼️

Today, we opened a bottle of "Kiku-Masamune" special junmai sake brewed with Hyogo Koishiki, a fantastic sake rice grown exclusively for Kiku-Masamune with Yamadanishiki as its parent. The gorgeous ginjo aroma spreads softly. The first sip is a machete-like cut with a robust umami flavor that quickly passes down the throat. We served it cold, but since it is a high alcohol (18% alcohol by volume) sake, it can be enjoyed warmed. A bottle that will change your image of Kiku-Masamune. Delicious. ❗️

2025 Many encounters with "Purple Space". This time, the war was opened (corked) in the "Army Label". This Junmai Daiginjo is brewed with 100% Yamadanishiki from Ishikawa Prefecture. The taste is straightforward, with a full aroma and a well-rounded umami flavor that comes at you in a single gulp. The image is that of a cavalry battle in the Warring States period. You can enjoy a variety of sake rice, but this bottle reminded me of the goodness of Yamada-Nishiki. It is delicious. ‼️

Nama sake pressed early in the morning on February 6. I received it as a surprise. We were very grateful and opened the bottle. When the bottle is opened, the fresh aroma spreads slightly. The taste has a refreshing aroma of herbs and herbs, acidity, and umami that comes afterwards. Unlike the more subdued flavors of Tensei's standard sake, this bottle has a freshness to it. We are looking forward to this year's Tensei. It is delicious. ‼️

Risshun morning pressing. I opened a bottle of Senkou morning pressing, which I have admired every year after reading your review. The first sip had a refreshing grapefruit-like acidity that made my throat feel tight, and a definite umami flavor that went down my throat smoothly. The alcohol content is 13% even though it is a draft sake. It is very drinker-friendly. I don't know if I will be able to encounter it again next year, but I would definitely like to drink it again next Risshun. Delicious: ‼️

It has gotten much colder, so today we will be heating up the sake at home. This time, we opened a bottle of "Dewazuru", which was the first time we had ever had a bottle of "Namaishige Junmai-shu". It was recommended as a heated sake at the sake shop where we went for a short trip. First, we sipped it at room temperature. It has a strong, rugged flavor that is typical of a sake brewed from a traditional sake yeast yeast yeast yeast yeast. Warm it up and sip it. The mellow flavor fills the mouth. The aroma is a delight to the nose. The pleasure of heating up sake. It's irresistible. This is a bottle of sake, but you will finish it in no time. Delicious. ‼️

We opened a bottle of "Music Note Label" from "Purple Space", which we came across at a liquor store on a short trip. The cute musical note label is said to be an image of Bibai City in Hokkaido, from which Yumepirika rice is sourced. It is very stylish. The taste has a beautiful flavor with a pleasant lightness. Perhaps because it is brewed with Yumepirika rice, it also has a moderate sweetness, making it a versatile all-around food sake. When I looked at the notes on the bottle, I thought that the notes might be a sequence of "shi", "so", and "la", which gave me a warm feeling. Delicious. ‼️

I came across this unfiltered, unpasteurized Omachi sake from "Koei Kiku" at a nearby liquor store. I opened the bottle with great anticipation. When I opened the bottle, I was greeted with a gentle floral aroma from the bottle. Pouring it into a sake cup and taking a sip, the gorgeous aroma spread throughout the bottle. The flavor is like biting into a ripe grape. It is an unfiltered, unpasteurized sake with an alcohol content of only 14 degrees Celsius, so you can't help but keep drinking it. I was surprised that I have never tasted such a gorgeous Omachi sake. Delicious. ‼️

Iraka Sake Brewery is the "newest sake brewery" that has completed construction of a new brewery and started brewing in the fall of 2024. We had "Kuro" and "Ai" last year, and this time we opened a bottle of "Beni". The first sip was a beautiful sake with a smooth acidity and a subtle umami flavor that quickly settled on the tongue. As we continued drinking and the temperature rose, the fruity umami expanded, which was also delicious. This sake is more enjoyable as a food sake than Kuro or Ai, and can be served with more substantial dishes. Although it is an unfiltered, unpasteurized sake, the alcohol content is only 15%, so you will not get tired of drinking it. It is a little extravagant sake, but we hope to see more of it this year.
