This is the second bottle of "Umakoi" from "Asakai" that I got unexpectedly. This one was opened as a heated sake recommended by the brewery. When drunk warmed, the umami spreads more quickly than when drunk cold, and you are fully immersed in the depth of flavor. It can be served with oden, dote-ni, hot stew, or any other hot dish. Sake of the season for me. Otter Otter's Tankoba Kumi. It is a twice-a-year product, but when I see it, I know from the liquor store shelves that autumn has arrived. The aroma of ginjo is gorgeous, and as it passes down the throat, you can taste the fresh sweetness of the fruit, like biting into a melon. Enjoying it with food is fine, but if you pair it with a simple, nutty snack, as if you were facing the flavor of the sake head-on, you will be intoxicated by the deliciousness of sake. I hope I can make time to face this sake again next year. It is such a bottle for me. Delicious ‼️

Today, we opened a bottle of Shoryu Horai, a collaboration sake from the oddball "Megane Dedicated. I was a little curious about this "glasses only" sake. If it is a collaboration with my favorite sake brewery "Oyataka Sake Brewery," I would buy it without hesitation. It has a tight acidic flavor and a gentle sweetness that expands. When I put on my glasses to check the specifications, I was not able to find out anything about it because it is not open to the public. The glasses wipe that was distributed with the bottle was also a nice touch. Delicious ❗️

Kawaguchi Natto" was picked up unexpectedly last year because of the strong impact of the label. This year, I opened a bottle of "Hiyoroshi Genshu". This bottle is brewed with "Sasanishiki" grown in Kawaguchi Natto's own fields in Miyagi Prefecture. The strong, robust flavor and lingering hint of sweetness make this a perfect food sake to pair with the autumn flavors of the coming season. Last year, I drank "Kawaguchi Natto" with sake, but it was a disappointment, so I decided not to drink it this year. The impact of the flavor is as impressive as the impact of the label. Tetorigawa" has been on my mind recently. We opened the bottle without hesitation when we came across "Hiyoroshi", a "Yamahai-brewed" sake that we fell in love with when it was hot. The hiyaoroshi has a mellow taste with a refreshing lactic acidity followed by a lingering rich umami aftertaste. I suddenly thought of a marriage in my mind that would be irresistible when paired with a foil-baked salmon with lots of butter. It is a wonderful bottle that becomes even more flavorful as it is served chilled or at higher temperatures. Delicious ‼️

We poured a generous amount into a large sake cup and sipped it. The mellow aroma and packed flavor spread to the palate, enveloping me in a feeling of euphoria. With its robust flavor, it is a versatile match for the coming autumn flavors. The freshness of new sake is nice, but this is a great bottle to enjoy the calm flavor of hiyaoroshi. Delicious: ‼️

We met again this year, Nilwolf. The concept is to change the theme every year and try a different flavor of sake from Ni-Rabbit. This year's theme is "Secret. We opened a bottle of this sake, which is wrapped in a veil of secrecy, with the sake rice, rice polishing ratio, yeast, etc., all undisclosed. It has a delicious flavor with a good balance of acidity and umami, which is typical of the Ni-Utsuri. We could sense a difference in nuance from the usual Ni-Rabbit, but could not reach a decisive difference. This is a nasty bottle that makes you want to enjoy Ni-Rabbit again and look for differences. But it is delicious. ‼️

The summer heat has gradually eased up. We opened a bottle of hiyaoroshi, a new sake made in March and stored in a cave at the headwaters of the Shimanto River. The taste is mild and tart, with a clean and clear flavor reminiscent of the clear waters of the Shimanto River. As the temperature gradually rises to room temperature, the fullness of the rice can be felt. When I think of Kochi sake, I think of drunken whales, but this is a bottle I would like to recommend to those people. Delicious: ‼️
