Following last year, we opened a bottle of Nisato's Yamada-Nishiki raw sake again this year. It is a beautiful sake with a clear sweetness and just the right amount of bitterness that goes down your throat easily. When served hot with a pot of hot sake and a glass of cold sake, it is hard to stop. This is a bottle that will make your cheeks loose in anticipation of drinking another delicious Ni-Utsu next year. Today, I opened a bottle of Gifu's "Kintemari", which I bought because of its cute label and had never had it before. The pleasant aroma attracted me and I sipped it. The soft, mellow flavor that fills your mouth. It is like a cheerful guy who can talk to you without hesitation even if you are meeting him for the first time. This is the first time I've had this brand, but I'm sure I'll want to be friends with him in the future. Delicious. ‼️

These days it feels so cold that you have to worry about your jacket when you go outside. The ban on hot sake for drinking at home is lifted here. This is a junmai sake from Tanzawa. It's great cold or at room temperature, but when heated up, you can enjoy the delicious flavor of the rice. It's also great with white meat sashimi or stewed pork. A fun way to find a sake that is good enough to be heated. Delicious. ‼️

Today, we opened a bottle of our favorite sake from Yoshida Kurau, which is made from "Hyakumangoku No Shiro" sake rice produced in Ishikawa Prefecture and lavishly polished up to 30%. The clear, clean acidity, coolness, and core sweetness and umami are impressive. It is an imposing sake like a straight road going straight on the surface of deep snow. It is a wonderful sake with a clear, clean flavor and acidity that smoothly slides down your throat, leaving you with a happy feeling of having done a good job this year, and a sense of sentimentality. It has freshness, pleasant flavor, bitterness, and slight effervescence. The first bottle of "Nagoshi Sake", the first seasonal sake from Collage, which is my favorite. It is brewed with 100% Hashu Homare, a sake rice from Yamagata. It has a pleasant acidity followed by a fruity taste. It has a seasonal pear-like impression. This sake can be easily matched with any autumnal dishes. I want to taste all of the seasonal sakes from Collage someday. Delicious: ‼️

On the way back from an expedition, we took the Shinkansen for a quick drink. I opened a bottle of Hana-no-Mai junmai ginjo sake. It has a soft taste, but it is a delicious sake with a concentrated aftertaste. It goes well with ekiben, a boxed meal that often has a strong flavor. This is a bottle that can be enjoyed to the fullest on an expedition trip. Delicious: ‼️

Sake of the season for me. Otter Otter is a seasonal sake for me. It is a twice-a-year product, but when I see this sake, I feel that it is almost autumn. This time, I enjoy it in a sake cup with a larger bowl. The gorgeous ginjo aroma wafts into the nostrils, and as it passes down the throat, you can feel the fresh sweetness with a fruity melon-like flavor. This is a highly complete sake that can be served with food, but is also complete on its own. You will want to face the sake with a simple snack such as nuts. I hope I can make time to face this sake again next year. It is such a bottle for me. Delicious ‼️

Kochi sake, which has been a great help to us during our long expedition this year. We opened a bottle of "Kure" hiyaoroshi, which we came across at a local liquor store. The first sip had a beautiful umami that spread after the acidity that tightened up the mouth. I discovered a sake that I had not seen at my local liquor store. The first bottle of "Bunraku Reborn," brewed mainly by the young brewers of Bunraku, was opened. The brewery's concept is "sake with a sour taste like a lemon. The taste is a crisp acidity that squeezes the inside of the mouth, followed by a rich umami that spreads mysteriously. This might be good. A bottle of sake that is both a traditional sake and a new challenge. If you come across it, please try it. It is delicious. ‼️

I've been hooked on Miyagi sake since my Miyagi expedition. Today, we opened a bottle of "Tenjo Yumegen" hiyaoroshi. The label with autumn leaves scattered around the bottle is adorable. This hiyaoroshi is brewed with 100% Hitomebore produced in Miyagi Prefecture. It is a delicious sake with a beautiful mouthfeel and aftertaste. It is a delicious sake that is perfect as a mid-meal drink. This time of year, I personally feel that the sake season has begun. This is a pleasant bottle for such a day. It's delicious: ❗️

At a liquor store, I found a bottle of sake wrapped in a strange cloth. Upon closer inspection, I noticed a single character, "Saku". With high expectations, I opened the bottle. It is a junmai ginjo made with 60% polished Yamadanishiki and named after the flint that saved Yamatotakeru's life. We were told that a large glass is recommended, so we sipped it in our favorite relaxed sake cup. It has a full, clear, and refreshing flavor. The taste is like a beautiful round glass ball. As the temperature drops, the flavor becomes rounder and more rounded, which is also delicious. A great bottle to drink little by little and enjoy the changes in flavor. Delicious. ‼️

The Bizen Yumachi is a very good wine. The best way to get a good idea of what to expect is to look at the pictures. From the first sip, the straight and direct umami was a big hit. I fell in love with the core flavor. Even if you start it cold and the temperature goes down little by little, the core flavor continues to be the same as the first sip. I opened a bottle of "Kawaguchi Natto" hiyaoroshi sake, which I have been curious about every time I see it at the local liquor store, but have never been able to get my hands on it until now. Kawaguchi Natto" is a sake brewed with "Miyamanishiki" and "Gin no Iroha" from rice fields grown by Kawaguchi Natto in Miyagi Prefecture. The taste has a mouth-clenching acidity and a lingering umami aftertaste. The persistent umami is impressive, as is the original sake. We served it with genuine Kawaguchi natto (fermented soybeans), which we found by chance to accompany the sake, but the natto as it is is not a good match. I will do my homework for next year to find out how to cook it to make it a good match. This sake made me realize that there are still many unknown and delicious sakes in the world. Delicious ❗️

The Akaban Omachi is a lucky one to come across at this time of year. This year, we also have a spring draft, so we can compare it with the other two. The first sip has a gentle aroma that spreads, and the taste is full of flavor and sweetness. I couldn't help but say, "It's so good! The first sip was cold, and as the temperature dropped a little, the umami flavor came to the forefront. The freshness of the raw sake is good, but I can't get enough of "Akaban Omachi" at this time of year when it has been hi-iru (fired) and has settled down. It is delicious. ‼️

Having been recognized as a sake lover, I opened a bottle of Omachi Junmai Daiginjo from "Tamanomitsu" that I received. From the first sip, it had a strong umami flavor and an honest taste that made my throat tighten. Although it is a junmai daiginjo, the umami comes to the fore rather than the flamboyance, and when served cold, it gives the impression of an honest young man who can't lie. We started heating it up this year, as it is recommended to be served lukewarm. When heated, it gives the impression of a soft, honest young man with a gentle smile. I had never had a chance to try "Kurosho Senjo" although I had seen it at a local liquor store. I opened the bottle, attracted by the cute black bear. The soft sweetness and umami in the first sip spread gradually. If you want to enjoy this sake in the coming fall, it would go well with fried mushrooms with butter, just like it is served in Shinshu. The cute label of this bottle is very appealing and very satisfying. Delicious: ‼️

We met again this year, Nilwolf. The concept is to change the theme every year and try a different flavor of sake from Ni-Rabbit. This year's theme is "Low Refining". It is brewed with 80% polished Aizan. It has a clean taste with pleasant umami and acidity. Although it is a low-polished sake, you can taste the typical Aizan flavor. Chibiri with a dish using tomatoes produced in Okayama City, Aichi Prefecture, the same city as Maruishi Brewing. A good partner that gently supports the flavor of the dish. It is a bottle that gives you a different taste from Ni-Utsuri once a year. It is delicious. ❗️

Today's drink is an odd one. We opened a bottle of "Tsukihi", a collaboration between our favorite manga "Space Brothers" and Hibi Brewing. The sake cup next to it is also a special partner of the collaboration. A pleasant sound when opening the bottle. We poured it into a large sake cup and took a sip. The taste is light and refreshing with a refreshing acidity. The lightness of the sake, with an alcohol content of only 11%, makes you think of the difference in gravity between the earth and the moon. I would like to drink it again on the moon when I travel to the moon someday. Delicious: ‼️
