The sake we opened around the fire was Shimotsuki from Okuharima, one of our favorites. I had a plan to warm it up, but I decided to try it cold. The soft aroma brought happiness to my nostrils, and when I put it in my mouth, the flavor soaked into my body. It's not glamorous, but the warm flavor is pleasant. Now, let's try it lukewarm or hot. I got the impression that it wasn't quite ready for lukewarm heating, but when it got hot, the flavor exploded. The aroma pierces through, and the umami with acidity fills the mouth. Okuharima Par Parliament is to be reckoned with!

A Happy New Year to you all. So, for the first opening of the new year, we chose a local sake, Hououmita Akaban. It's a time of year like this, when I don't get to drink with people as much as I used to, but I wanted to give thanks to my relatives who come to my house at times like this. We had a beautiful origarami sake in a beadro glass. The aroma was gentle and clear. When I drank it, it had a refreshing image of passing through in the umami taste, and a good acidity mixed in, and it went through smoothly. It's a beautiful sake. The evaporation seems to be fast, and I felt like it happened very quickly when my head was feeling a little stiff.

You can't have a big year-end party, but the quality goes up when you do it in the comfort of your own home. It would be a shame to carry it over to next year, so I took the plunge and opened the package. The aroma is fragrant, and when you put it in your mouth, you can taste the sweetness and sourness of Aizan, and it ends with a pleasant bitterness. The most impressive thing about this product is the time it takes to go down your throat after you put it in your mouth, and I thought the balance was superb.

When it is served cold, the aroma of lactic acid, which is unique to traditional sake brewing, goes through the nose. The taste is of rice with a strong acidity and a bitterness goes away quickly. If you return it to a cold temperature, the aroma will remain mild, but the balance of the flavor will instantly improve. The aroma of the rice and the sweetness of the sake rise to the surface, and it goes right into the body. Well, I enjoyed my bottle of Junmai Ikatamoto.

I bought it from Sawaya Matsumoto's Shibasake series because they have released a year-end party. Just hearing that it's unfiltered unpasteurized sake makes the taste seem intense, but we opened the bottle. The pleasant swooshing sound reminds you of the subtle fizzing sensation you can only get with eyelashes. First drink. When I tasted it, I got the impression that it tasted a bit more substantial than the previous eyelashes, which were lighter. Looking at the bottle, USUNIGORI. ! If you look there, you see the sediment. It's a re-division. Shake it slowly and try again. I suppose it may be partly due to the visual effect, but I had the impression that the flavor was even more pronounced when the ori was added. This is a bottle that you can go for a drink alone. It's good to have a drink to enjoy 🌱.

Stable Tenmei. It's here again this year. It's one of the safest brands to drink. It has a calming flavor when opened. It starts cold and gradually warms up as you drink it. If you drink it at around 40 degrees Celsius, the taste of the rice swells up, but even if you drink it cold, the pleasant lactic acidic flavor goes down your throat very nicely. It's a good drink.

The name "mozu" comes from the fact that mozu can imitate the sound of any kind of call, and the sake was named with the hope that it will serve as a bridge between the drinker's sensibilities and various dishes. I've had Kamikimoto several times this year, and I'd say it's a very exemplary sake. This sake was also well-balanced, and while the aroma was mild, it had a solid flavor and a refreshing, five-mangoku-like quality. Excellent as a foodie drink, I felt.

The father of the liquor store I always go to. When we were chatting about how we couldn't get tired these days, she gave me a bottle of the sake bottle and said, "By the way, we haven't drunk this yet, have we? By the way, I haven't tasted this yet, have you? We always talk about this sake, but this time I decided to buy a bottle. The Terada head family has been brewing this sake since the Enpo era, and it was very interesting to hear that this sake was brewed with rice given to them by a neighboring farmer while singing a song about making sake. The cork is opened with a pleasant crunching sound, and then it is poured into a wood-hewn sake cup. The aroma has a nostalgic scent with the unique lactic acid scent of the sake brewery. I wondered what it was, but when I put it in my mouth, I still felt a nostalgic, inexplicable flavor. I was wondering what it was, but I couldn't explain it all in the end. However, the taste is pleasantly crisp and fresh, and if you leave it in your mouth for a long time, the unique flavour will change to the lactic acidic notes that are typical of the sake brewing industry. I paired it with Kanzanji miso, but you could also pair it with a more stovetop-friendly version of the motu stew type of flavor! It's a magical drink.

I'll have a glass of AKABU from Iwate prefecture for this evening's dinner. When it was cooled down, it had a mild fruity scent, but although the taste was beautiful, I had a strong impression that it was very zesty. After it was cooled down, the flavor became more apparent and the sake became gorgeous but with the strength of the junmai, and it changed into a drink that we can enjoy sipping on. A blend of Junmai and Jundais from Dai-ichi Shuzo. Its cost performance is in the amazing ¥1,200-range! I'll be entertained by the label on the front and taste it with the pork stir fry. The aroma isn't that obvious, but the flavor is well-balanced. The taste is soft and sweet. It was also a little fruit-like and juicy 🙂 The flavor spreads through the air and the aftertaste is crisp and clear. Hurray for the locals!

I bought a drink that a friend of mine had recommended to me on the internet for the first time. The only sake from Kyushu that I knew of was Nabeshima and Koro. This drink is very good. Calm aroma typical of hiyaoroshi. The sweetness, umami and bitterness of the Oyama seems to be the best part of it, but when I drank it, I found that it had a calm taste, along with the umami. I paired it with the fallen fish on the label. It's like drinking in food. Hmmm, I'm still having trouble with the hiyaoroshi, but I'll try it again later in the day when it's warmed up!

The scent when you open it is subdued. Does the scent become milder when it's laid to rest? But you can still smell the pleasant aroma. I've had a few bad experiences with Miyamanishiki, but the first sip of this sake was... no questions asked. I expected the flavors to swell and become more complex as I laid them down, but I got the impression that this was pure flavor. The sweetness smoothly enters the drink, and with a pleasant sourness, it is full and crisp. It is like an amplifier of flavor when used with sashimi or yuba. Of course, it's good on its own. I think this is one you should definitely try if you find it.
