I finally came across "Mizubasho"! I had seen the flag of Yamada Nishiki Contract Field for Mizubasho in Miki City and thought I would like to drink it someday. I had thought that I would have to take action to find it, not someday, since there are no stores in the Kansai region that carry it 😁. I let it sit for a while before opening the bottle 😁. It has a very beautiful sweet flavor with a hint of pineapple that cuts through nicely 🥰. It has a slight spiciness in the back of the throat 🧐 that reminds me it's a sake 🐋. Delicious 😝😝. I can see why this is so popular 🐵. My wife also says it's delicious 🌿.

After a very sweet first taste, the aftertaste is a bit dry and cutting. I guess this little sharpness gives the impression of dryness. In parallel, a slight fruity and rummy sweet rice flavor follows, very delicious 😅. I guess it's one of those patterns that can be sweet or dry, depending on who you ask 😙. But delicious 😁🫰. First time drinking it but it's a good one 😁😁.

Today we are going to have a drinking party for kindergarten dads 😁👍. I'm going to serve the best one! Yokoyama no Nama" (Raw in the Yokoyama) 🥰. This will be my first time drinking Yokoyama Draft. I'm looking forward to it 😊👌 I've had a few bottles of fire-brewed sake, but this is my first time drinking a draft 🤔🫰. This is one of my top 3 favorite sakes I've ever had 😘. I can't wait to drink it raw 🥲. I'm happy even before drinking it 😋.

Yoshimura", a gifted sake I was told that it has been a little while 😁. The production date is July 2021. About a year and a half... Chilled in the fridge and opened the bottle 😙👍. The taste is very subtle, with a hint of acidity. It is clear like water. The most subtle taste I've ever had. The alcohol content is also 12 degrees Celsius. The acidity is more noticeable than the umami. It is probably best served at room temperature or warmed. I think I drank it the wrong way... I had it back at room temperature. It is rare to find a sake made from Koshihikari rice 😗👊.

During a business trip to Suzuka I went to the Hayakawa Sake Brewery of "Tamitsu", which I was looking for, but to my surprise, I saw a sign saying that they do not sell directly😅... I convinced myself that they must be taking good care of their dealers 😁.... Just as I was about to go home, I found "Suzuka Federation" at a roadside station. The cheapness of the label gives me a sense of nostalgia after a week and a half 👌. I opened the bottle two days later. A little spicy, with a rice flavor typical of junmai sake. No fruity flavor, more of a Han dynasty sake 😊. This is delicious 🕺. It's good to go for the sake you're looking for, but it's also fun to have a chance encounter like this 🕺. but it's also fun to have a chance encounter like this 🌻.

Sake today, for drinking? I'm not sure 😗. I hiked in the mountains from morning till evening 🏃. I decided to take this opportunity to drink "Suidama" which I had been waiting for 👌👌. I opened the bottle when the chicken dumpling pot was about to boil. From the fruity aroma like Hanamup, sweetness of rice and umami 😊👌👌Because it's a draft sake? I feel the sharpness of the aroma is better 😁The difference between Hanamup and this one is that this one seems to have a better sharpness... 😊😊. I can't get Hanamup that much and haven't had a chance to drink it. I can't tell the difference clearly 😁👌👌I think so 🌿. Anyway, this place is classy. It has a perfect balance and is very tasty.

I finally came across a "寫楽" sake. And it's a bit of a mixed blessing. Is it released twice or three times a year? I had a hard time finding 寫楽's nama-sake, and when I came across it the other day, I said "aha" 😁. I left it a week and opened the bottle after a hike 🫡. The wine has a low acidity and a nice mouthfeel. The aroma of the wine is beautiful. It has a mild grapefruit-like taste in the middle. There is an astringent taste in the middle, but it is exquisite and It has a moderate taste that enhances the umami. Ahhh...well balanced... 🤭. Delicious 👌

Since the end of last year, I've been surprised by what's this? You'll be surprised. I discovered another series of "Takachiyo. 59Takachiyo. I opened the bottle as soon as I bought it. The aroma is very clear, and the ginjo aroma is gorgeous. It has a clear and dry taste with a hint of umami-guchi. Dry and sharp might be the right word. Delicious 🤔. It's very different from the "Xmas label Takachiyo" I drank the other day, but it's just as good 😁. I found a bottle of Tasake, raw, light nigori. I had to drink it, so I saved it until this day 🫡. Opened the bottle. A little strong acidity, followed by the umami that is typical of Tasake! And then Then comes the fruity taste. The light nigori gives it a rich umami flavor, but the aftertaste is clean and refreshing. Tonight is "Oyster nabe"! It is the best taste 🤤.

It's been a while since I've had a "Saku". And "Masanochi Nakatori" is a good one ✨. The gorgeous aroma you can feel when you put your mouth close to the boar's mouth + the jungin aroma is already playing with the taste 🤭. Fruity sweetness and umami at the beginning, fading out after a very subtle acidity 😋. Beautiful and delicious 🫠. A great sake 🤗

Sake given to me by my brother when I went back to my hometown, Ishikawa at the end of the year. It has been a long time since I have had "Tedorigawa" 😋. Very clear and refreshing impression of rice flavor and slight sweetness. Almost no acidity 🤔. Not too clean, but still has a strong umami. It is a good sake after all. Delicious 👍😊

I liked "Hoshizumi" so much that I went to the brewery to buy some 🫡. The nice and elegant mother told me a lot about it. She told me that "Hoshi-Izumi" written in kanji characters is only wholesaled to 16 stores nationwide, and that She also told me that they only have 5 employees making sake now, and that they used to have a toji (master brewer) from Niigata, but now it is done by the employees.... The brewery does not keep any special sake in the storehouse, and I could feel how much they care about their distributors and other dealers. This time I went there in between jobs, so I decided to go for the "fire-brewed" 😊. Chilled overnight and opened the bottle. It is a Hoshizumi-like sake, full of fruity sensations. A little more acidic than the Hoshizumi the other day 😲. But it's still fire-brewed 😙. It's on a high level! It's so good 😄!

I drank in Nagoya, and it was very delicious! Hoshi Izumi" is the kanji version of "Hoshi Izumi The Kanji version seems to be rare, so we had high expectations for it. And it's made with No. 9 yeast... When I look back at my favorite sake so far, it is usually either No. 7 or No. 9 yeast. I have never paid much attention to the yeast, but I have a feeling that the yeast determines the "feel" of the sake. I immediately opened the bottle. Just as I expected... 😍😍😍😍. I have nothing more to say about it. The flavor chart is similar to "Senkou". The flavor chart is similar to "SENKOKU". This is for sure 😊. This is a level above the rest 😙. Delicious👍

Happy New Year! The first sake of the year was "Mimuro Sugi" last year. It has been a long time since I have tasted "Mimuro Sugi". It has little acidity, a slight effervescence, and is crisp and full of flavor. No doubt about it...it is delicious. This year is going to be another good year...

What is the best sake for this year's closing? After much thought, I decided on this one, which I drank at an izakaya the other day and found to be outstandingly delicious. Takachiyo. This is similar to the "Sanzui" I drank yesterday. The main difference is that the acidity is not as strong. I guess my taste is biased.... I have encountered many delicious sake this year. A recommendation from the lady at the Nishinakajima liquor store I casually walked into! This is a daiginjo, but it costs about 1,600 yen. I had never heard of this brand, so I opened the bottle without any expectations. It has a fruity taste with a hint of acidity. You can feel the acidity all the way through, but in the latter half of the bottle, a slight cloudiness enhances the umami, which is just the way I like it. It reminds me of grapefruit. This is delicious. I didn't know that!

Sake I bought on a business trip to Kagawa This is the first time to drink "Kaijin" at home. It is a junmai unfiltered raw sake made from a local rice called "Oceto". spec. It has a mellow rice flavor, sweetness, and a bit of spiciness that comes and disappears quickly and clearly. After swallowing, the nose is full of rice flavor. Ahhh, it is delicious. It's been a while since I've had a strong sake taste... It's delicious in its own way. Today, we had "stewed rice cake", "burdock root", and "grilled chicken". It's perfect for today's sake!

I bought this sake in Gifu. I bought this sake at a convenience store, and was impressed to find such a sake at a convenience store. This time, I had it neither cold nor warm. It has a soft sweetness, followed by a fruity taste. The balance between the sweetness of the rice and the ginjo aroma is good. Elegant. There is no pungency or sourness, and it is just right. It is the first sake with a good balance in a long time. I didn't expect to find such a delicious sake at a convenience store... Delicious 😊.
