I liked "Hoshizumi" so much that I went to the brewery to buy some 🫡.
The nice and elegant mother told me a lot about it.
She told me that "Hoshi-Izumi" written in kanji characters is only wholesaled to 16 stores nationwide, and that
She also told me that they only have 5 employees making sake now, and that they used to have a toji (master brewer) from Niigata, but now it is done by the employees....
The brewery does not keep any special sake in the storehouse, and I could feel how much they care about their distributors and other dealers.
This time I went there in between jobs, so I decided to go for the "fire-brewed" 😊.
Chilled overnight and opened the bottle.
It is a Hoshizumi-like sake, full of fruity sensations. A little more acidic than the Hoshizumi the other day 😲.
But it's still fire-brewed 😙.
It's on a high level!
