Junmai Ginjo-shu is made from "Kame-no-o", one of the three best rice varieties for sake brewing in Japan. Kame-no-o, a fantastic sake rice, is the result of an accidental mutation, and was grown from three ears of rice that did not fall over and had good fruiting among the poorly fruiting rice. Abeikan Kame no O Junmai Ginjo is a model of a sake made with Kame no O, but made in the way Kame no O is made. This is what Abeikan Kame no O Junmai Ginjo is all about. It is a perfect match for fish dishes. It seems to have a strong following among the local sushi restaurants!

High-quality Junmai Daiginjo sake has been suffering from sluggish sales due to a long drop in demand for souvenirs caused by a sharp decline in the number of tourists. Against this backdrop, we have decided to release Junmai Daiginjo sake at a discounted price because the Junmai Daiginjo sake produced before the Corona disaster (two years ago) is stored in low-temperature tanks and we do not expect a rapid recovery in demand for some time to come. We have decided to release it at a reasonable price. The flavor is a blend of "Junmai Daiginjo," made with Yamada Nishiki from Hyogo Prefecture (milling ratio 38%), which is one of our highest-grade products and has won many gold medals in domestic and international sake competitions, and "Junmai Daiginjo," made with rice suitable for sake brewing from Hokkaido (milling ratio 40%). It has a mild aroma and a light yet rich and elegant taste. Limited release of 20,000 bottles!

Yamagata Mitsuo 2021 Project! The theme is "Encounter with Meat". Fuyu" means chicken and egg, and the name was changed to Yamakawa Chicken Man. The label shows Mitsuo waiting for the chickens as if he were catching sparrows, and the smiling scene of the chickens who don't seem to care about such things at all. It is our hope that you will enjoy a peaceful moment in the midst of the bleakness of Corona. The host brewery for this event was Otokoyama Shuzo. Yamagata's sake rice, Dewa Sanzu, Yamagata yeast, and the sense of hardness derived from well water 100 meters underground support a refreshing taste with moderate acidity to complement chicken, a full-bodied taste such as duck, and a crisp finish.

Refreshing, ramune like nose. The palate is fresh, sweet and juicy with a slight effervescence. On the palate, you can taste the plumpness and sweetness typical of Omachi, as well as tropical nuances. The elegant acidity with a strong presence tightens the flavor and creates a flavor with depth. Although it is low polished, by fermenting at low temperature for a long time, there is little unpleasant miscellaneous taste, and it has an elegant taste that you cannot believe it is 80% polished rice!
