Sumikawa Brewery, which has produced many popular sake brands, such as "Genjiten" and "Ippo," has created its newest series, "Jundo Ichizu. These words were given to President Sumikawa by his mentor, Koichi Yoneda, a Tajima toji (chief brewer), when he was an apprentice. He still treasures these words: "No matter what happens, you must live your life dedicated to sake brewing, now and in the future. The ginjo aroma is gorgeous and lychee-like, and when you drink it, the sweetness spreads like the honey of a well ripened apple. While the umami and sweetness have a strong presence, the moderate acidity adds a refreshing touch. This gives the sake a refreshing and light aftertaste despite its rich flavor. Jundo Isshu Series A new series of Junmai Ginjo-shu with a 50% rice polishing ratio. Each month, a total of seven different types of sake rice are used, and the characteristics of the rice are maximized. The sake is unfiltered and once-fired, so it retains the freshness and original flavor of the sake.

When we think of Yokoyama, we think of its signature product, "Yokoyama Junmai Ginjo SILVER7," which uses No. 7 yeast, but this time it is another potential signature product, "Yokoyama Junmai Ginjo SILVER Super Spicy 7. It is named Choharashi 7 because it uses yeast No. 7 and has a sake strength of +7. Yokoyama-mato may have a strong image of fruity and sweet, but this release is "super-harsh. It is fermented slowly at a low temperature to preserve the umami and sweetness within the spiciness. It is perfect for sashimi, sushi, amberjack shabu-shabu, and other Japanese dishes.

Basically, all "brewer's kuheiji" are "bottle-warmed and once-heated", but this "usunigori" is a raw sake! Specifications are undisclosed except that Yamada Nishiki from Kurodasho is used. This junmai ginjo-shu has an elegant ginjo aroma and a full yet crisp flavor, brewed with koji rice Yamadanishiki and kake rice Gohyaku-mangoku. While it has a strong acidity and umami flavor, it can be easily paired with both Japanese and Western cuisine, and the spiciness that is typical of Zoga makes it an excellent food sake. It is a taste that can be enjoyed in a relaxed manner. Panda no kimochi unfiltered undiluted sake has been released from Juhachimori Shuzo, which brews Juhachimori and Tagaji in Kojima, Kurashiki City, Okayama Prefecture. This is the first in the "Black and White Animal Series", a new seasonal product that will be released four times a year. Panda no kimochi is an excellent blend of "Tagaji Junmai Daiginjo Asahi" and "Juhachimori Asahi Junmai Daiginjo". It is a perfect blend of Tagaji Junmai Daiginjo Asahi and Asahi Junmai Daiginjo. It is recommended for those who are new to sake. The sharpness goes well with meals. The concept of this product is "to think about someone else. It is difficult to think about someone else's feelings. It is difficult to think about the feelings of others. We wanted to use the tool of sake to provide people with time to think about someone else in their busy lives. For the design, we focused on cuteness and adopted a panda that can be accepted by men and women of all ages! As a series, we will use animals to represent the important "someone" that we can't easily meet through Corona Damages.

The first three were very popular and sold out. This is the fourth in Oyama's test brewing series. The theme this time is "mellow ✖︎ sharpness" with low-pitched aging. Super limited edition! A fruity aroma with freshness and depth reminiscent of fresh grapefruit and blueberries. In the mouth, the juicy flavor and sharp acidity are well-balanced and harmonized in a moderate thickness and volume, and a slightly ripe and aromatic mouth aroma like rum raisins gently spreads. A slight sense of gas tightens the impression of the aftertaste, and the sharpness is good. It is a good match for a wide range of food, including Japanese, Western and Chinese dishes. Quest4-Ohyama is based on the concept of "exploration" and is a sake that will continue to evolve with free ideas.

While the Honjozo "Tarereguchi" has a mellow, fresh flavor and a mild sweetness that covers the entire bottle, the "Jun Gin Tarereguchi" is a light nigori with a refreshing, mellow, dry flavor that is typical of Junmai Ginjo. In other words, you can enjoy a different flavor from the Honjozo "Tarerekuchi".  The aroma is luscious, with a fresh fruitiness reminiscent of melon, apple, and white peach. It has the sweet aroma of young koji that only freshly squeezed sake can have. You can also enjoy the strawberry and apple aroma on the finish. Overall, it has a refreshing and sweet fruity aroma that is very pleasant.  The mouthfeel is silky. It is easier to drink than nigorizake, and you can enjoy the slip of the tongue that only tailings can provide. The moderate sensation of the tailings is very refreshing, and unlike most sake, you can enjoy the unique and mysterious sensation of this sake.

Like a comet, Omine has appeared on the Japanese sake scene and is quickly becoming a household name. It took about eight years to get to this point, as there were no suppliers willing to sell the rare rice "Aizan" to the unknown brewery, which was revived in 2010 after more than 50 years of dormancy. It took about eight years to get to this point. Omine's beautiful sake has a refreshing, slightly sweet rice flavor. I have always wondered what would happen if such a brewery used Aisan, but finally, here is Aisan brewed by Omine. The aroma is sweet and sour, full of the freshness of tropical fruits, and the sweetness of Aizan's richness is an added bonus. I'm struggling to contain the flavor that is spilling out! This time, we collaborated with the artist Kosuke Kawamura. For the sake bottle design, the grains of rice in the Omine Shuzo logo are represented by Kosuke Kawamura's masterpiece, the Shredder Collage. A collection of premium sake rice "Aizan" and a famous artist. A must-see.
