Aizan is a breed of rice that has Yamadanishiki and Omachi as its parents, and has a heart-white ratio equal to or higher than Yamadanishiki. At present, it is cultivated only in a part of Hyogo Prefecture, and the yield of this rice is quite small. This special junmai-shu, made from the rare Aizan, is characterized by a subtle, soft aroma, moderate acidity and a rich umami flavor. It can be enjoyed cold or lukewarm.
