Junmai Ginjo-shu is made from "Kame-no-o", one of the three best rice varieties for sake brewing in Japan.
Kame-no-o, a fantastic sake rice, is the result of an accidental mutation, and was grown from three ears of rice that did not fall over and had good fruiting among the poorly fruiting rice.
Abeikan Kame no O Junmai Ginjo is a model of a sake made with Kame no O, but made in the way Kame no O is made. This is what Abeikan Kame no O Junmai Ginjo is all about.
It is a perfect match for fish dishes.
It seems to have a strong following among the local sushi restaurants!
