I've taken a bit of a break from posting this evening, but I've had a little thankful sake from a brewery I haven't had in a while 🍶💁. Ise no Kuni Dedication Hakusake Oise-san 2024BY⛩️🙏 It is said to be a sacred sake dedicated to the god of Ise by Mimuro Sugi/Imanishi's brewery 🍶. It's a sacred sake, but it's a nigorami/nagori sake, which is very fashionable 😎. When I opened the bottle and poured it into the sake cup, there was a gas that made it sound delicious at this point 😋. The aroma is like Yamadanishiki? It has a melon and greenish herbal taste. The mouthfeel is tingling and moderately gassy, and the sweet and sour flavor of the rice and lactic acidity spreads out in a jolt 😋😋😋😋. It has a sharp aftertaste and I can't stop drinking 😆. It's been a while since I've had a sake from Imanishi Shuzo, but they exceeded my expectations 😊.

Tonight, I'm going to be a kitchen drunk while making dinner as is my custom after a routine Gym workout 🏋️ 😅 I'll drop another first series 🤗. Yamawaboshi Junmai Daiginjo Orikigarami Nama Sake 2024BY⛰️⭐️ It seems to be a collaboration sake between Yamawa Brewery who makes Miyagi's "Yamawa" and Shinzawa Brewery who makes "Hakurakusei" 🍶. I think it's been a long time since I've had a rice rice sake 😊. The aroma is mainly fruity grape and pear 🍇, but there are also greenish mint and celery-like freshness. A sip of this wine will fill your mouth with juiciness as if you bit into the fruit 🍇🍹 and it also has a bit of leesiness and a touch of calpiciness that will make you gulp it down 😋😋😋😋😋. In no time at all, there is only about 1 cup left 😆.

Tonight, I was sorting through my sake stocker and I want to drink this one that I had to put down for a long time 💁. Collage Junmai Ginjo Hatsushibori Nama Sake 2022BY✨ I forgot about this 2 year old sake again 😅 I'm afraid to open the bottle 😆. From the first aroma, it smells like caramel and honey with a good amount of maturity. The taste has a good acidity and turns into a sweet and tasty brandy-like sake like a kijoshu, perfect for a nightcap 😇 It has a clean and dry aftertaste that makes it delicious as a kijoshu 😋. I was reminded once again that I should drink nama-zake as soon as possible 🙇.

Tonight, this will be my 777th 🎰 bottle and I've thought a lot about it, but I'm opening this one 💁. Kaze no Mori Akitsuho 657 NeXT 2024BY 🌪️🌳❼ It is said to be a slightly lower alcohol content sake than the traditional Akitsuho 657 🍶 I can't compare, but I'll start with the tachika. I like the tropical 🏝️ which is like a vinegar iso🍌🍓. The gas is not so strong and the acidity is more dominant, and the fruit sweetness and bitterness are impressive and easy to drink 😋😋😋.

Tonight, I'm opening a bottle of this Reisake for the mid-week turnaround economy 💁. Shinshu Kamerei Junmai Sake Hitogochi from Nagano Prefecture Unfiltered raw sake 2024BY I got this season's Junmai Hitogochiki Unfiltered Nama-shu, so I'm going to drink it without letting it sit too long: ☺️ The aroma is distinctly sweet with a hint of white sugar. The sweetness and acidity of the apple honey comes in the mouth, but the strong bitterness and spiciness follow from the mid-palate, giving the impression that they are fighting each other a little 🙃. This is delicious though 😋🤤. I'll drink another sake 🤤🤤 hoping it will be more harmonious and tasty after tomorrow 🙌

Tonight, we decided to enjoy a clear sake once in a while, so we opened a bottle of this one. Ibigawa Special Honjozo 2024BY ✨ Ibigawa is a brand of sake originally distributed in the prefecture by Sugihara Shuzo, famous for its Imi sake. From the standing aroma, there is a chemical cementiness, a weak pineapple tropicality, and a refreshing herbal crispness. ☺️ The taste has lost some of the sweetness and flavor of the Imi brand. It has a slightly aged, caramel-like richness and acidity, with a crisp, tight, aluzoe-like quality that I like a lot 😋😋😋😋. I'll try it later as it looks even better heated up to increase its fullness 🙌

Tonight, the cloudy picks are still going on, so we opened a bottle of Masayo's Okinini's Rara Konnichiwa 💁. Garakudai -Zuika- Togobottori nigori Hi-iri ❄️ The release was in May last year, so it had been laid up for a little more than half a year, but as the back etiquette says, "zuika" means snowflake, so I'll drink it with positive thinking that it's just right for the season 😊. First of all, the top clearings were removed so I went ahead. The aroma is weak with muscat-like fresh fruit aroma, gentle acidity in the mouth, clear sweetness, soft dryness on the back end, and overall light taste, easy to drink and beautiful. ☺️ When the lees are mixed, the sweetness and richness of the yogurt increases on the attack, and the bitterness is added on the finish, giving the impression of a more distinct contrast. It was hard to choose between the clear sake and the nigori sake, and we were able to enjoy both again 😋😋😋😋😋.

Tonight, I'm opening this one with my daily muddled pick 💁. Sentori Classic Zero Nama Sake 2024BY✨ I tasted this at the SAKE PARK and liked it so much that I bought it 👛. When I opened the bottle, the gas was so strong that it almost spilled 😅 When I poured it into the sake cup, beautiful light snow bubbles 🫧 rose up and I was intrigued by the vinegary banana🍌 melon🍈 standing aroma. It has a creamy sweetness that is understated by the tingling gas, and a light, smooth, crisp and bitter finish that makes it easy to drink 😋😋😋😋. Thanks again for a great week 🙇😋.

Tonight, I'm not sure how many bottles of Nigorin Pick I've already opened, but I'm not sure how many bottles I'll open without drinking this baby 💁. Miyazumi Junmai Nigori Nama Sake 2024BY✨ Last year, I couldn't get it because I was too lazy to get it after it was released, so I wanted to drink it this year 😅. I opened the bottle relatively quietly, so I started with the clear sake. The aroma is creamy melon. The crisp gas, the fruity rice sweetness, and the slightly milky yet crisp dryness had me captivated instantly 🍈. I was instantly captivated by the taste. When mixed with lees, of course, the creaminess is increased, but it also changes from sweet and tasty to sweet, bitter and spicy. It's a different way to enjoy it from the Collage's nigori. It's great 🙌

Tonight is the second installment of the first series of posts from the brewery around the end of last year 💁. Iraka, silver and indigo ✨✨✨ I was curious about the second series of this new sake brewery that was created as a result of business succession 😅... I can't tell the difference from the Gin Kuro from the specs on the back eticket 😆. Like the Gin Kuro, there seems to be a nice gassy feeling when you open the bottle right away. The standing aroma seems to be green apple and muscat. The taste is also very delicious, with a balance of sweetness and deliciousness of rice and sharp acidity and spiciness that I like very much 😋😋😋😋😋😋. I'm trying to compare the difference with silver black by looking at past posts but I have no idea because of my stupid nose and stupid tongue, 😅😅😅🤣🤣🤣🤣 Hmmm, I thought maybe the sake rice is different ⁉️, so I looked it up and they are both "Hitogokochi" ‾. Ummm that's not so easy to tell 😔🧐🤔

Tonight, I'm opening a bottle of this classic sake to start off another cloudy day. Koei Kiku SNOW CRESCENT 2024BY❄️❄️❄️ The first Snokure in two seasons, right? This is a sake that is synonymous with Koei Kiku. I'm excited about it. ⤴️ Opening the bottle was a surprise with a loud pop like a sparkling 🍾 😳 but the bottle didn't fly open or spill 😌 and it was safe 😌. The taste is pleasantly gassy and gusty, and the sweet bitterness of the grenfre is addictive 😋😋😋😋😋😋. I haven't had snoclet in a long time and it's very tasty 🤤😋😋.

Tonight, the 10th of every month is Tenbi Day, so I'm opening this bottle that has been in hibernation for a long time 💁. Amami Junmai Daiginjo Akaban Omachi Namaishu 2022BY✨. This is a raw type sake made only for the Jun Daiginjo Akaban Omachi served at the CSW in spring 2023 🥳(usually only hi-iru) When I drank this at the CSW, it was shockingly delicious and rated itself as one or two of the best of the event, so I managed to buy a bottle of it but it was too good to waste 😅. First of all, it has a nice aroma like sweet and sour apricot with a little bit of maturity scent on it. ☺️ A sip of this wine will make you happy with its lively acidity, the warm sweetness of Omachi rice, and the bitterness of the finish 😋😋😋😋. It is so addictive that you will be drinking it in no time 🤩😋😋.

Tonight, we will have the first new sake from this brewery in a long time 💁. Okuroku Tokubetsu Junmai Sake First Nama Shu 2024BY✨ I was so curious about Okuroku's first Shiboris of the season that I had to get my hands on it 😆. The bottle is light nigori, but the sake is clear 🍶. The nose has a gorgeous ginjo aroma of muscat, Japanese pear and lactic acid. The taste is very good with fresh and fresh acidity and sweetness of rice 😋😋😋😋 The aftertaste is a little bit heavy like Japanese sake and you can enjoy various tastes. ☺️ I thought it had a very déjà vu taste, but then I remembered that it tastes very similar to Sairai, a famous sake from Saitama 😊.

Tonight, I am posting my first series. Here💁 of Shimane's famous sake. Ohroku Junmai Izumo Kojiya 2023BY✨ The cloudy nmpics are still going on, but this brand seems to be a second fermentation sake in the bottle 🫧. When opened, there is no spillage but when poured into the sake cup, there is white foam with quite strong gas🫧🫧🫧🫧🫧🫧. The standing aroma is mild but has a lactic acid Yakult or Bickle-like aroma and steamed rice nuances. The taste is characterized by a dryness with a punch due to the high alcohol content, while it has a soft rice sweetness and umami with a gas buzz. If you mix a significant amount of lees, the rice flavor and bitterness will become stronger and more drinkable: ☺️

Tonight, I'm opening a bottle of this one because I've almost finished the sake I opened at New Year's 💁. ABE THE SAZANAMI Ihyakumangoku 2024BY It seems to be released as SAZANAMI this season due to good rice melting. When you pour it into the sake cup, you can see slight gas bubbles rising. The aroma is a thin Japanese pear 🍐The taste is a pleasant tingling gas bouncing on the tongue while the mature sweet and sourness is so addictive and delicious that I want to repeat it 😋😋😋😋 The quality is just as good as it gets with a good bitterness on the back end 😋😋 The sake is too good to be true and I am afraid that it will go down the drain too fast 😊.

Tonight, the first day after the New Year's vacations, I feel like I'm starting off on a fairly low note, but I want to keep my spirits high (⤴️), so I opened this bottle for the first time in a while 💁. La Jomon Yamahai Junmai Shu Takumon Nama Shu 2024BY✨ We were lucky enough to get the first bottle of the new brewing year, so we're going to open the bottle as per the ironclad rule that you should drink your sake as soon as possible 🤗. The aroma is gentle, as you would expect from yeast #6, with refreshing notes of pear, muscatel fruit, citrus and herbs 👍 The taste is also simple, with a hint of citrus and herbs. The taste is also simple but has a deep acidity and an edge of bitterness and spiciness that is delicious 😋😋😋😋. I have the impression that the acidity and bitterness are clashing a bit since it is quite cold, but I expect it to harmonize and become more delicious after tomorrow, so I'm looking forward to its potential 😊.

Tonight is the last day of the consecutive holidays, so we opened this bottle to say goodbye and to pledge to give it our all from tomorrow. Shinsei PRIVATE LAB Flax Cat Spark 2021BY😸🫧. Lot No:21PAS-03 Since the end of the year, the three meeja giants are all here 🤣. Also, this cat bubbly has been laid up for over 2 years but was left almost unattended because of the gas 😆. The opening of the bottle was completed quietly 🫡 From the standing aroma, you can enjoy the freshness of Japanese pear and citrus (Greffle, lemon) which is typical of No.6 yeast and white yeast 🫧 The taste is also very drinkable with a delicate gas 🫧, sourness with citrus stimulation, slight bitterness to a slight gentle sweetness. It is easy to drink and quite delicious 😋😋😋😋😋😋. The year-end and New Year's sake activities have fully recharged my batteries 🍶🔋🤩.

Tonight, I'm still in the New Year's mood 😂 & I've been working out at the gym 🏋️ to lower the guilt of eating and drinking too much during the holiday season, so I opened this bottle 💁. Jikin Special Junmai Unfiltered Nama 2022BY✨✨✨✨ Again, a 2 year old special junmai unfiltered draft 😅 I poured it into the sake cup with a half expectation and half regret. Wow, it has a fresh apple, muscat, green bamboo and herb nuances without any aged aroma, and it is very youthful. ☺️ The first sip reveals no matured flavor, but rather a firm acidity and a perfect balance of sweet and savory rice flavors. The second half of the bottle has a weight of alcohol and a fullness of flavor that I frankly felt was of high quality 😇. Sieg JIKON Sieg JIKON 🙌

Tonight, we will open a bottle of this year's zodiac sake as an early evening drink: 💁‍♂️ Tamitsu Junmai Ginjyo Shinshu: Snake, single-bottle fire-infused, 2024BY This is the first time for us to have a bottle of Tamitsu's new sake with the Chinese zodiac 🐍🐍🐍🐍🐍. It seems to be 100% Kami no Ho sake, but I think this is the first time for this sake rice too 🤗. The aroma is characterized by a clear, pineapple-like ginjo aroma. The soft acidity and fruity sweetness in the first sip form a light and easy to drink sake that is hard to stop drinking 😋😋😋😋. The aftertaste is even better with a firm alcoholic sharpness that keeps you from getting bored 😊. I'd like to continue to give you a few more sakes for the year of the snake 🙌!

Good evening, this is the second one for the New Year, and again, as if I'm a bedtime story, here's one from over a year ago: 💁‍♂️ Shinshu Turtle Age Hexagon 2023✨🐢✨ Lot No 1244/1456 I've been putting the flagship sake of the same brewery away for a while now, but I'll drink it on New Year's Day 🤗. It will be my first Hexagon as I have probably never had it outside 😉I can't stop excited ☺️ This one is made with 100% Yamadanishiki from outside of the prefecture. It has a gorgeous ginjo aroma of white peach and melon. The taste has a nice acidity that is typical of Shinshu Kamerei, but at the same time it has a viscous, elegant sweetness like a fruit nectar 😋😋😋 (I think I prefer this one... 🥰). The flagship of Shinshu Kamerei is a must 🤩🤩.
