Tonight, we are opening the second bottle. Yamazan Junmai Ginjo Yamae-Nishiki Hitogochiki 50-50 2023BY✨ This is an unfiltered, unfiltered, unadulterated, unblended sake of Yamae Nishiki and Hitogokochi from Yamazan, whose popularity is on the rise. ☺️ The aroma is a mature apple 🍎 The taste is juicy, sweet and acidic, with a rich brown sugar flavor with a little bit of maturity. The finish is quite dry and bitter, which is typical of sake 😋😋😋😋 It suits this season, which is becoming a bit like autumn, but personally I would have liked a little more acidity 😊.

Tonight is the middle day of the holiday weekend, but I'm postponing (skipping) my workout to tomorrow and it's a saket workout 💪😅. La Jomon Junmai Sake Malo 2024BY✨ I've found Malo again this year and I'd like to try it 🤗. It is made from 66% polished Dewanosato rice, K601 and YK2408 🍶. The aroma has a melon-like flavor from the No. 6 yeast and a banana🍌 flavor from the vinegared iso. The taste is junmai sake, but the acidity is the backbone of the sake, and the sweetness and umami of the rice is beautifully balanced by the long aftertaste and the final sharpness 😋😋😋😋. It's too good to waste, I want to enjoy it after tomorrow, so I'm going to change to other sake: ☺️

Tonight we open a slightly different bottle 💁. ANTELOPE x haccoba Pink (pale) 2024✨ This is not a sake, but a collaboration between ANTELOPE, a mead brewer, and haccoba, a craft saké brewer, which has been on my mind lately 🤗. When poured into a glass, the color is light red or yellow peach and the aroma is very nice and complex. The taste is also very delicious, like a soft vinegar of grape and apple vinegar, or a quirky taste like natural wine or orange wine, but also like a mixed juice with a bit of gas. It was very good 😋😋😋😋😋😋.

Tonight, I opened this bottle of Akita sake, which I haven't had in a while 💁. Harukasumi Chestnut Label Yellow Yamadanishiki 2024BY✨🟡. The standing aroma is mild and almost odorless, with a hint of melon and grapefruit. The acidity is rather firm and changes from a soft rice sweetness to a crisp dryness in the second half. ☺️ Good Taste😋👍

Tonight, we open a bottle of this one, as the 10th of every month is Tenbi Day 💁. Amami Junmai Daiginjo Hi-iri 2023BY✨✨✨✨ As expected, it has been aged for 9 months, but this is the Fujioka Amami from last season 🤩🤩🤩🤩🤩. The bottle was opened from a very cold state, and the gorgeous muscat aroma of ginjo is still wonderful. The first sip is greeted with a fresh sweet acidity ☺️, followed by a soft umami and a dignified dryness that is still unquestionably delicious 😋😋😋😋😋😋. Ugh, I'm sad that I can't drink it for whatever reason or circumstance 😢(I especially want to drink Yukiten and Momoten again)

Tonight, the world is in the season of hiyaoroshi/akiagari/nagoshi sake, but our family is still releasing summer sake at full throttle 😅. Saint Hizirizm Yamadanishiki Active Sake 2023BY✨🫧. We love Hizirizm's active sake line, they released 3 different types but we were only able to get this one, but we are looking forward to it so we opened it right away 🙌! The aroma is a fresh flavor of Japanese pear. This is a girl who will drink this one up quickly 😊.

Tenpyo Junmai Daiginjo Tojo Yamadanishiki 2024BY✨ This is a sake brewed by Nishi Shuzo, famous for their Imo Shochu, Hozan 🍶 This is the first sake from Kagoshima 🙌 This is the high-end line of Tojo Yamadanishiki, but how is it? So let's open the bottle right away: ☺️ The aroma is a melon aroma from the melon with the elegant and gorgeous aroma of Yamadanishiki. The taste is smooth and slightly viscous on the tongue, and the mellow sweetness and umami of the rice flows through the nostrils and down the back of the throat, leaving a dry aftertaste at the end. It is an orthodox sake, but very delicious 😋😋😋😋😋.

Tonight, another year of sleep 💤 series😅. AKABU SPARKLING GALAXY 2023🌌🫧🌠. It looks like this season's one is about to be released and I've captured one for now, so I'll finally open one from the previous season 🥂. I started to open the bottle but I couldn't see any bubbles rising from the bottle 😅 I proceeded little by little in the bathroom to make sure but the visibility was so bad that I spilled a little bit 😢 Oh well, it's all good. I'm sure it tastes good because I've had it many times at past events, but I'll try again. When poured into a glass, it has a cloudy white color and there is a good amount of gas. The aroma is very mild. It has a slight hint of Japanese pear. The overall quality of the sake is dry and never gets boring, so you can drink more and more 😋😋😋😋. It is one of the best AKABU 💮.

Tonight, I'm opening a bottle of this sake, too, since it's been laid up for half a year 😅. Banjo Kotobuki Golden Slumber 3.11 Memorial Sake 🥲. This is a memorial sake for a brewer who was affected by the 3.11 disaster in Fukushima and moved to Yamagata to make sake. On the other hand, a sake brewery in Yamagata went bankrupt today, so it is difficult to continue making sake for a long time. The aroma is fresh, reminiscent of apple cider, with a crisp acidity and bitterness that transitions to a dry taste, making it very light and delicious 😋😋😋.

Tonight, Ni-Rabbit was empty in no time at all, so I opened a bottle of this sake 💁. Kaze no Mori ALPHA6M Respect for No. 6, Midori pick 2023 🌪️❻🌳 This sake has also been laid down for more than a year 🤦. The sake rice is Akitsuho because it uses Shinsei yeast, but the freshness and lushness of the deep and elegant melon can be seen in the aroma. The taste is also very pleasant with the sweetness and umami of the rice from the soft gases and acidity that has lost the strong gases of the usual Wind Forest 😋😋😋😋 It also has a mildly bitter aftertaste: ☺️

Tonight, I'm opening a bottle of sake that I would normally drink on New Year's Day 😅 at the halfway point of the year. Two Rabbits Zodiac Sign Bottle 2024 DRAGON vs RABBIT First of all, the jacket is cool, looks like Dracula in the early days 😊. The aroma is rich and mellow, like the sweet honey at the center of an apple. The taste also has a freshness and flavor like biting into the honey at the center of an apple, and combined with the chili gas, it is easy to drink and very delicious 😋😋😋😋😋. It was a level max sake for the two hare braves 😊.

Tonight, we open this bottle from Nichinichi after a long absence 💁. Nichinichi Itoshima 2023BY✨✨✨✨ This sake is brewed with Itoshima-produced Yamadanishiki from Itoshima Shuzo, known for their Tanaka Rokuugo 🍶. The aroma is gentle and refreshing with the coolness of herbs and wildflowers🌿 and the fruitiness of grapes🍇. The taste is also low-alcohol, so it is mainly soft sweetness and acidity with a clear and transparent quality, but the bitterness in the second half is impressive and the dryness of the finish is enjoyable😋😋😋😋. The price is not cosy but it is a delicious sake 😋☺️

Tonight, I would like to try this Kijoshu 💁. Yoshida Kurau Ishikawa-mon Kijoshu +A for UA 2024✨ This seems to be the third UA collaboration. It seems to be easy to drink as it has a slightly stronger acidity. ☺️ As the etiket says, it has a fresh fruit aroma of grapes (Delaware), petit gas and juicy acidity, which makes it easy to drink with low alcohol 😋😋😋😋 The finish has a full flavor and crispness, which is more like a white wine than a sake. It is more like a white wine. This one feels like it will be empty soon 😅.

Tonight, we have a first series of sake from Fukushima Aizu here 💁. Yuri Junmai Daiginjo Gohyakumangoku 2023BY✨ It was made in September last year and I want to drink it 😅. It was brewed by a female toji, a mother and daughter 😀. The color tone is light nigori, and the aroma is mild, ranging from gourd aroma to Kemi aroma. The taste is characterized by a soft melon-like sweet and acidic attack and is very easy to drink 😋, but the aftertaste is sharp and clean with a spiciness that feels fresh and dignified 👍. After all, Fukushima's sake has many layers 😊.

Tonight, I'll open a second bottle as the first Collage is gone in no time 🙌. Senkou UA Sakura Fubukiyo 2023BY🌸🌸🌸 I'm not sure if it's the spring season sake here, but I completely passed on this one 😅. It's like a pink or orange wine in color. It has a sweet and sour aroma and taste of cherry blossoms (Cherry blossom), after all. ☺️ The aftertaste, however, is bitter and pungent, and it can be enjoyed as an adult sake. Unlike Sentori's usual lightness, it has volume and weight, which is also delicious when drunk occasionally 😋🤤😋.

Tonight, I'm starting my evening a little early 😊 I love this brand so much that I've put it away for another year 💁. Collage Junmai Ginjo Banshu Aizan The taste is very calm and serene with a hint of grape, and it has a graceful taste that disappears without stress. Tonight, I'm excited because it's the weekend ⤴️ I like to drink good alcohol on such days, so here's my favorite brand 💁. Garakudai Zuika Do-bottled Nigori Nama-zake (Sase Sake Shop Betsuatsurai) 2023BY✨✨✨✨. This is Masayo from Sase's Bespoke 🤩. I think it was the first one. (I can't trace what and when I bought it and where it is anymore😅) I think this was your first Zuika series 🙌 When poured quietly into a glass before lees mixing, the color is clear to slightly cloudy, with subtle gas bubbles 🫧. The nose is gentle with hints of melon and pear. It is sharp, crisp, and can be served as a mid-meal sake, while still having acidity and the sweetness of rice. The overall volume of this sake is very similar to that of Shinmasa Seiosei, which I have the impression is very similar to Shinmasa 😳. When the bottle is stirred well, the cloudiness increases and the overall creamy texture changes, this time closer to Abe 🤗. Bottom line, it was a very delicious bottle 😋😋😋😋. Looking forward to opening the others😊.

Tonight, we will open a bottle of this one because the hot weather is still continuing and we want to drink a schwarish drink 💁. Mikotsuru Junmai Ginjo Activated Nigori Nama Sake 2023BY✨🫧. I saw this on sale during our recent excursion to Ueda, so I had to buy it 🍶. It was cold, so I was able to open the bottle quietly at all, I decided to start with the first sip. When I poured it into a glass, it was fizzy and had a fresh aroma of green apple🍏🍏, which is typical of Yamane Nishiki sake rice. ☺️ The fresh apple cider🥤 attack was followed by the full flavor of rice, and the crisp, bitter, spicy finish was blissfully delicious😋😋😋 Stirring the starch enhanced the flavor of the rice 👍 Very satisfied with the taste this year 🙌 (I'm going to run out soon, so I'll repeat 🤔)

Tonight, I wish I had drank during the 🥇🥈🥉 Olympics 🥇🥈🥉, I had no regrets here💁. Sairai Junmai Daiginjo 2023BY🥇. It is a rare Gold Sara 🥇. It was an unfiltered, unfiltered, raw sake, but it didn't have much of a matured aroma. The original aroma is like a mild soup stock (ripe?). It has a mild broth-like aroma (ripe?), but once you take a sip, the fresh Sara-like acidity, pear, melon, and muscat fruits, and the bitterness and spiciness in the aftertaste are perfect, leaving you with a delicious aftertaste 😋😋😋. This is the sake I will buy when it is available this season. ☺️

Tonight, I'm opening a bottle of sake from this sake brewery, which I think of when I think of Gunma 🍶. Tsuchida 12 2022-2023BY✨✨✨✨ The rice specs are unknown, but the sake is made with a raw yeast strain, No. 6 yeast, low whiteness, mixed white and yellow malted rice, and aged for 2 years...very Tsuchida-like in its metamorphosis (compliments) ☺️ When poured into a glass, it has a yellowish hue and a standing aroma of smoked brown rice and matured honey. The taste is not a kijoshu, but it is full-bodied, delicious, and gorgeous, and this is delicious 😋. It would be nice to warm it up, but it's the middle of summer so I'm a little reluctant 😅.
