Tonight, a bottle of this one here 💁‍♂️ as a continuation of the muddy picks. Oroku Kei Junmai Nigori 2022BY✨ This is a junmai nigori unfiltered from Ohroku's Kei series. It's close to what I drank last time and a little gas rises when you open the bottle 😊🫧. From the top clear (light nigori). It has melon, dried grapes, plums, and a hint of creaminess. The taste has a tingling gas, acidity, and rice sweetness and flavor that I love, and the high alcohol content is full and dry 😋😋😋😋. I like the dryness and creaminess of the wine when the lees are fully agitated and the intoxication goes away faster 😆. Like last time, it's easy to drink but has a strange charm that makes it drinkable 🍶🍶.

I'm going to open a second bottle of this one tonight because I don't want to waste my Collage 💁. The second bottle is a Junmai Yamadanishiki 65 Fire 2024BY✨. I think it's been a while since Nito-san has had a bottle. The name sounds like Tanaka Sixty-five 😆. The aroma is not matured at all, but it has a strong matured aroma like caramel or tortoiseshell candy 😅 The taste also has a momentary acidity, but the sweetness of matured sake spreads and I was surprised that such a matured way of making sake was possible 😲. I think this sake is better to drink at room temperature or warmed up than cold sake. ☺️ In fact, when I warmed it up a little hot, the maturity disappeared and the rice flavor and acidity of junmai sake stood out, which is definitely my favorite flavor 😋. I'm going to enjoy the oxidation and temperature over the next few days 🙌

Good evening, I've been out drinking and my posting has stopped for a bit, but I'm back on track: ☺️ Today is an anniversary, so I'm opening a bottle of one of my favorites 💁. Collage Junmai Ginjo Banshu Aizan The first time I went to the store, I was surprised to find that the price of the bottle was $3.95 per bottle, which is a little over $3.99 per bottle. This one has been aged for a little more than half a year, but since it is fire-aged, the aroma has nuances of fresh strawberries, condensed milk, and white sugar, but it has a refined quality. The taste also has a juicy attack of strawberries and melon, but it is not at all cloying, and the acidity and sweetness are exquisite and definitely delicious 😋😋😋😋. The finish is long and pleasant with a strong rice flavor and dry crispness. I would say it has a magical taste that makes you want to drink more and more 👿. Considering the taste, price, and availability, I think this is a must-buy 💮.

Tonight, I wanted to drink Senkori, so I opened a bottle of this one from the Edobari series 💁. SENKOU Retro Zero 2024BY✨ The last of the trilogy will be this raw sake of Omachi and Yamada Nishiki. The aroma is mainly sweet, with a chemically-intense aroma similar to Omachi, kumquat, and tangerine. The taste is also retro with moderate acidity and a sweet umami to bitter spiciness, and it has a modern classic/neo-classic quality that makes it versatile as a stand-alone sake or as a food sake 😋😋😋😋😋😋 Obviously the catch is modern and classic, but this one will be better liked by the experts. ☺️

Tonight's favorite warehouse x muridorin picks here 💁, the very dark horse of the muddy picks. Gagakuyo ~Kazuka~ 2024BY🌪️🌼✨ Masayo's active nigori type: ☺️ The expectations are soaring ⤴️, but the stopper has a gas hole for safety when opening the bottle😅 (Personally, I don't like it because the gas is released and it weakens the original active sake feeling). (Personally, I don't like it because the gas is released and it weakens the original active sake taste.) That's okay, the bottle is opened immediately and is extremely quiet 😌. The aroma is soft melon🍈 pear🍐 fruity and rice grain. The taste is pleasantly fruity with the stimulation of tingling gas, but the sweetness is understated with a neat dryness all around, very delicious😋😋😋😋. Masayo active nigori may be the No.1 this season 🙌💮 (I wanted to experience it without gas hole w/o gas hole)

Tonight, we will open a bottle of the New Lineup from this brewery 💁. Koueikiku Bikun 2025 ✨ This is a new brand using Miyamanishiki. ☺️ Polishing specs seem to be undisclosed. The opening is not very gassy, which is a recent trend for Koei Kiku. It has the appearance of clear sake when poured into a sake cup. The aroma is clear and sweet with a hint of white sugar, and the taste is quite sweet with acidity and umami following afterwards 🧐 The aftertaste is easy to drink, probably due to the low alcohol content, but there is no sharpness or tightness in the taste, giving a moderate impression overall 😢. It was a shame that it could have been a little more gassy 😇 Oh, it's just a matter of personal taste. It's a matter of personal taste 😅

Tonight, I drank up the rest of yesterday's Jigokin Nigori Nama as fast as I could, so I'm going to take a new step (a bottle). BECCHO 2024BY☔️✨ I've always been curious about this sake, but I never had a chance to get my hands on it, but now that I have it, I'm opening a bottle right away 🙌 The specs are: Jungin polished, all Yamadanishiki from Hyogo prefecture, No.6 yeast, and sake yeast. The aroma is a gentle, simple melon-auri aroma with a hint of Yamadanishiki and No. 6 yeast. The taste is also easy to drink like potassium with a little lactic acidity on the attack 😋😋😋😋, but as it nears the finish, it has a bitter taste and as the name suggests, a full flavor like tortoise shell candy, and the deliciousness is masked 😊. I'm curious about your other brands, Mr. Rainfall 😉.

Good evening, how nice to find out that I was ㊗️800 check-in 🎊 The last round of the Nigorinpic? The winner of the Nigorin Pick is here 🤗. Jikin Tokubetsu Junmai Nigori Sake Nama 2024✨ I was disappointed to have missed out on capturing this season, but luckily I got this one just in time 🥹💁. The long awaited Yezikon nigorinama ‼️ Normally I would let it sleep for 2 years 💤😅flow, but since it's a fresh sake, I'm putting it in at the last minute 🙌 When I opened the bottle, I could feel a solid gas rising up. At first it was a light cloudy color, but it was stirred naturally and turned to a cloudy white color. 🌨️ The aroma is clear dry melon 🍈 A sip is very delicious 😋😋😋😋😋😋😋😋 The finish is close to the end with strong bitter taste and spicy taste from the alcohol. and the full-bodied drinking experience 😊. Tonight, we open this season's bottle of Hizirizm sake mother active sake, not cloudy rizm 👏. After arriving at our house, it had been resting for a little while in Lemacom, but I was afraid to open the bottle 💦 However, as other reviewers have written, it was so quiet that it was surprisingly quiet 😅. What was that? I was wondering what was going on, but when I drank the top clear, there was a slight tingle on my tongue, and the flavor was adult calpis, but there was almost no soda... 😨. No, it tastes good. However, it is better to think of this as something else, and since it is not an active sake mother, there may have been a gap between the sake quality design and the finished product ❓❓❓❓ I'm going to let the other bottle sit in the hope that the secondary fermentation in the bottle will progress: ☺️💤

Tonight, on the last day of the three-day weekend, we will be drinking this sake 🍶💁. Sairai Tokubetsu Junmai Unfiltered Nama Sake 2024BY✨. It's been quite a while since I've had a Sara ☺️ I especially like the "Red Sara" as it is called here 😉. The aroma is a strawberry milk 🍓🥛 with a sweet and gorgeous ginjo aroma. The flavor also has a juicy attack, like eating fresh strawberries, but the second half has an interesting transition to mainly greffle-like bitterness, as is typical of Tokujun. The finish was crisp and delicious as expected 😋😋😋😋.

Purple Space Junmai Ginjo Star Label 2024BY✨🌌🌌. Sake brewed with Ginga no Shizuku sake rice from Iwate Prefecture 🍶 Lately, I'm starting to realize that I prefer indigenous varieties over major varieties 😉. I love the balance between the acidity, juicy fruit sweetness, and bitterness, which is like a grenfre with a dash of white sugar, while the aroma and taste are both refreshing and easy to drink 😋😋😋😋😋. There are so many variations of Purple Space that I haven't caught up with all of them, but I'd like to try other brands little by little 🤗.

Tonight, we will open this bottle as it is the night before a three-day weekend 💁. Chiyonohana Special Junmai Sake Namazume 2024BY✨. This is a special junmai sake from the same brewery as the Imi. It looks like it was originally distributed in the prefecture, but thankfully it's becoming too popular with the Imi community. ☺️ I don't know the rice specs, but it has a sweet smell of white sugar and a slight pineapple nuance that I think is mainly from Ibi no Homare. The taste is also easy to drink as it has a rich sweet/umami base with a bitter, pungent, sharp taste in the second half 😋😋😋😋😋😋. Sugihara-san's sakes have a warmth that makes you feel relaxed 😉.

Tonight, I'm not tired of drinking out, so here's a bottle to accompany my nightly drinks 💁. Iraka Gin Beni Unfiltered Unrefined Nama Sake 2024BY✨. This is the third sake from Iraka 🍶. The sound of the gas being released when the bottle is opened is wonderful💓. The aroma is of cupped apple nectar and pear, typical of Shinshu sake. The taste is also juicy with a firm acidity ☺️ and then the rice is sweet and tasty with a sharp taste that I really like 😋🐴😋😋 I had a happy moment with a series of refills right away. One more day to go this week. Let's keep up the good work 💪.

Tonight, I opened a bottle of this for the first time in a few days after a long day of drinking outside. Jikin Junmai Ginjo Hachitan Nishiki Unfiltered Nama 2022BY✨. It's been a while since I've had a bottle of Jigikon, but I let it sit for 2 years 😅The jacket has already been redesigned, so the retro austerity shines through 😎. I started with the aroma, wondering about the degree of aging. The aroma is clear and transparent, with a hint of wild herbs and sweet white sugar. The taste is on the contrary, a little matured honeyed apple sweet and sour with a delicious umami flavor 😋😋😋😋😋. The aftertaste has a nice sharpness 👍 I must say it's a quintessential example of high perfection 😉. Sieg JIKON

I was out of town tonight on a wild business trip, so I'm posting at this hour. Here💁 from my favorite sake brewery in Akita. Harukasumi Chestnut Label White Sake Komachi Nama 2024BY✨🌰. This one uses Kameyama yeast. The aroma is clear Japanese pear, grapefruit, and herbs. The mouthfeel is very pleasant with a refreshing acidity, followed by a delicious sweetness from the rice 😋😋😋😋😋. A great bottle of sake with a harmony of sake-like and modern drinkability👍

Tonight, I would like to drink this one by Sentori as a relay from yesterday's Tanaka Sentori 💁. Sentori Organic Naturals X 2024 Sparkling ✨🫧. I wanted something a little more refreshing for my first drink of the weekend, so I chose this one: ☺️ It was cold in Lemacom, but the secondary fermentation in the bottle was in progress. From the aroma, you can feel soft rice malt and lactic acid as if it were naturals as it is named because it is a sake with a raw yeast yeast and additive-free brewer's yeast. The taste has a full-fronted dryness with a crisp and neat character, starting with a shrieking gas. As you drink it, the lees gradually become entangled and it turns a cloudy white color, increasing the lactic acidity and the delicious richness of the rice. Again, I'm in the mode to drink it up as fast as I can 😆.

Tonight, I was rummaging through Lemacom for a weekend dinner and found this collaboration sake, so I'll have it 💁. Tanaka Sengyo ver.2023 Itoshima pesticide-free Yamadanishiki Junmai Sake✨. This is a collaboration between Tanaka Rokugo's Itoshima Sake Brewery and SENKYO, and it looks like the pesticide-free Yamada Nishiki from Itoshima was made by SENKYO using the SENKYO Naturals method of pesticide-free, live yeast and brewer's yeast, and then returned to the Itoshima Sake Brewery to be finished in the main brewing process 👀. The aroma and taste are both very clear, with a greenish wild grass nuance and a beautiful acidity, and the sake is light with no rice clutter. The back palate has the appearance of an orthodox junmai sake with a full flavor of rice and a nice sharpness. The simple and innocent sake from the Itoshima Sake Brewery is delicious after all 😋😋😋😋😋.

Good evening, my favorite brewery for a series of bespoke sake, following on from yesterday, but it's been a while 😊. Yoshida Kurau - Ishikawa-mon Kojo-shu Sparkling - ✨🫧. This may be my first Sparkling from the same brewery. I opened the crown cork but it didn't go out of control, so it's safe. ☺️ When poured into the sake cup, it has a light nigorigo color and gas is weaker than expected. The standing aroma is honey sweet behind clear herbal and chemically-like aromas. The taste is a harmony of the attack of the tangy gas and the sweetness of the kijoshu and the dryness of the yamahai, with excellent balance 😋😋😋. Overall, the transparency and lightness of the structure of the sake, which does not feel too much like a kijoshu, makes anyone who drinks it roar that it is delicious 🤗.

Tonight, as a continuation of the Nigorin picks, we had our first sake from this brewery in a long time. Shinomine Ginwa Junmai Daiginjo -Yamadanishiki Rough Running Light Nigori Nama Sake-✨✨✨✨ I've had Shinomine and Kushira before, but what is this Ginwa? I thought, "I've had Shinomine and Kushira before, but what is this Ginwa? The aroma is creamy and fruity with hints of melon, muscat, and pineapple, typical of Yamadanishiki. The taste of rice and lactic acidity give depth to the flavor, and the aftertaste is very crisp 👍. This is one of the best tastes of Nigorin picks 😋😋😋😋😋😋.

Tonight, I'm dropping an oddity from a brewer that I haven't seen in a while 💁. Rice and Honey (Aged in Oak Barrels) 2024🌾🍯. It's a collaboration sake between Ina and Agave Brewery and Tsukegoro Brewery 😊 I think this is the first time for Ina Agave, isn't it? Sake and mead, and aged in oak barrels 😉. When opened and poured into the sake cup, it has a slight yellowish hue. The aroma is very complex, not only honey, but also lush aroma of wild grass, smoky oak, and energy drink elements like cola, guarana, and Oronamin C. The taste is slightly sweet on the attack and has a slight sweetness to it. The taste is a slightly sweet mead on the attack, but in the second half, there is a sourness, a sake-like rice flavor, and a dry aftertaste that is extremely delicious 😋😋😋😋. Craft saké is gaining citizenship, but mead x sake seems to have even more room for growth in terms of interest: ☺️

@Pon-chan. Good evening 😊 Inaga-san is getting a lot of attention in terms of regional development and local promotion! Okasumi-san's skill in taking advantage of the fact that he couldn't get a sake brewing license is amazing, but it's the simply delicious saké that appeals to me 😋.
