Tonight, we open a bottle of this very major sake that we haven't had in a long time 💁. Tasake Junmai Daiginjo Yamadanishiki 2023BY✨✨✨✨ I got this one by chance for some reason, but it had been sleeping for less than a year again 😅. I didn't have high expectations for it because it's 100% junmai yamadanishiki, so I thought it wouldn't be too bad but it wouldn't have any interesting taste. I am here to say that I really don't care about the criticism that it is not interesting 😋😋😋.

Tonight, we open this bottle 💁 to get through the extreme heat 🥵 while having a normal business day during the Obon season. San-Do Homasu Shi-Noh Brewing 2023✨✨✨✨ It's been a while since I've had a San-Do. It's my favorite Hozasu. It is slightly cloudy and gassy, with a soft and gentle lactic acid aroma and aromas of pear and melon fruits. The taste is also very light and tasty with a lively gas bubble, acidity, and a rich sweetness on the palate 😋😋😋. The astringency and spiciness on the back end are exquisite, making it a sake that will make you want another sip and then another 🍶.

Tonight, I've been working out 🏋️ because I feel like I'm taking in too many calories from yesterday's Ueda excursion, and my guilt is slightly lowered, so I'm opening this bottle without any sexual misconceptions 💁. Takachiyo GRAPE label SPARK 2024BY🍇🫧. I decided to drink only this brand this year, so I opened it early because it was perfect for the hot summer. The aroma is refreshing and not too grape-like. The taste is very light and addictive, with the sweetness and juiciness of rice blended with the tangy gas 😋😋😋😋 There is a slight spiciness on the back end, but it is easy to drink and will disappear soon 😅.

Shinshu Kamerei Hitogokochi from Nagano Prefecture Junmai Ginjo Unfiltered Nama Sake 2023BY I was curious about Yumemizuho, which is only sold directly at the brewery, I was so curious about Yume-Mizuho, which is only sold directly at the brewery, that I decided to take the bullet train to Ueda. It was a fun one-day excursion. ☺️ Well, I was in the mood to buy this one recently, but I realized it's been half a year since I bought it 😅. It has a sweet and sour aroma of apples and white sugar, which is typical of Shinshu Kamerei, and a full flavor, and in the second half, it becomes bitter and dry, and the balance and sharpness are very delicious 😋😋😋😋.

Tonight, in honor of the 666 check-in, we're comparing No. 6's X and R 🙌 (unfortunately, the S is out of stock). Shinsei No.6 R-type 2023 ❻❻❻✨✨✨ Lot No: 23NR-01 This is this season's R-type: ☺️ From the nose, it has the same soft melon aroma as X, but with a fresh melon flavor 😃. On the palate, the pleasant sweet and acidic aroma suddenly turns into a dry, dry taste, followed by the astringency of the wooden vat, which has a good sense of roughness and is delicious 😋😋😋😋😋. It's hard to compare the two, but I think I prefer R.

Tonight, I'm checking in at 666, so here's a goofy little celebration: ㊗️ Shinsei No. 6 X-type 2021 ❻❻❻✨✨✨ Lot No: 21NX-08 This bottle has been opened after 2 years of aging, breaking the brewer's order 😅 (or is it rare?). The aroma is a gentle melon aroma, with no aging aroma at all. The aroma is a gentle gourd aroma with no aging aroma at all, and when you take a sip, the balance between the elegant and pleasant acidity and rice sweetness is very good 😋😋😋😋 The finish is dry and very tasty from the light bitterness and astringency in the back mouth 💮. Unfortunately, the S-type was out of stock after this. I will compare it with R-type 🙌

Tonight we're opening a craft saké for a change 🙌 Tsuketaro Sake Shop Asaura Sencha Sake Saemidori 🍵. This is a sake x sencha craft saké, but it's so off-the-wall that I can't picture what it tastes like at all 😅 The color is light brown like sencha and the aroma is completely plum liqueur 🤩 The taste is sweet, bitter and umami, similar to kijoshu or brandy, and it doesn't taste too much like green tea. It is a perfect description of a liqueur, so I felt it would be good on the rocks or with soda 🤗. It's interesting to see how many new and challenging drinks are coming out one after the other. ☺️

Good evening, I've been posting the same series of abbeys in a row 😅. Abe White (x Tatami Seishukudo) 2023BY✨ It's a fire-entry, missing out on this season's draft sake type 🔥. Slightly cloudy color. Aroma is modest, but a little lactic and herbal freshness 🌿 Taste is adult potpourri. It tastes like adult potassium. The sweetness is like stevia. The taste is like stevia with a dry aftertaste.

Tonight, the first bottle of Houou Mita Mikumari was so delicious that it was emptied quickly, so the second bottle was opened in a hurry😅. Garakudai -Rokka- 2023BY Masayo's high-end sake line? (specs for the competition?). I'm going to drink it now that I've put it to sleep for a while 🙌. The bottle opened a little gassy, but it's a clear sake. The aroma is a mild cucumber and herbal aroma similar to No.6 yeast. ☺️ The taste is not too dark and light and refreshing, but the balance is excellent with the swelling of umami on the back end 😋😋😋😋.

This evening, we opened a bottle of this highly rated sake, which is also highly rated by the reviewers of Sakegawa. Houou Mita - Mikumari - FLY HIGH 2024🐦‍🔥 I missed drinking this Mikumari at CSW, so thanks for the 🤦 bottle release 😊. When I opened the bottle, the gas was released with a lot of energy and when I poured it into the glass, it was nice and bubbly 🫧. It has a ginjo aroma of melon and pear 🍈, juicy sweetness on the palate with the gasiness following later, but it's quite dry and sharp with a crisp finish that I really like 😋😋😋. I don't know if they release this every year, but I think it will be popular: ☺️

Tonight, we opened a bottle of this craft saké 💁. Happy Hop Doburoku from Pukupuku Brewing This time it is a collaboration with Happy Brewery in Shiga. It is brewed with low-polished Omachi with hops. The aroma is of steamed rice with a hint of sourness. First of all, I really like the taste of just the top clearings, with the attack of sweet and sour lactic yogurt and the bitter sourness of lemon peel🍋😋😋😋😋😋. I like the lemon yogurtiness when made into a sloppy doburoku, but it was very smooth and delicious 😋😋.

From the freshness of the grape and pear 🍇, the slightly viscous sake has a juicy sweet and sour fruit nectar that fills the mouth, but is soft, elegant, and easy to drink with no unpleasant taste 😋😋😋😋😋😋. The middle to finish has the dryness and crispness of an arugula, so you can drink it without getting bored 😊.

Tonight, I want to drink Senkou after a long time, so I opened this bottle 💁. UA Natur Trinity 2023BY✨✨✨✨ It's a Natur collaboration sake with UNITEDARROWS & using white malted rice 😊. It has the standing aroma of grapes and bananas that I like, and the taste is very delicious with the usual Sengoku acidity that is powered up and refreshing, perfect for hot nights 😋😋😋😋😋😋. The lactic acidity from the sake's raw yeast yeast origin gives the taste a three-dimensionality and umami as it gets to the latter half of the bottle, so you can easily drink it without any of the thinness of the low al 12 degrees ☺️ I want to repeat this but I don't know if they sell it anymore 😢.

Tonight, another brand from this brewery that I enjoyed very much the first time I drank it the other day: 💁‍♂️ Yamazan Junmai Daiginjyo Yamae-Nishiki 40%5% light nigori 2023BY✨✨✨✨ Following Hitogokochiki, this is a light nigori Yamae Nishiki. When you open the bottle, it seems to be gassy. The aroma is quite mild and herbal 🌿 A sip and you can feel the chilli gas on the tip of the tongue, but there is a strong attack of fruit sweetness (dark cherry, orange, grapefruit, white peach) and it is so easy to drink and delicious with a fullness like a juice 😋😋😋😋. The finish is bitter and crisp, as is typical of Yamae Nishiki 🙌.

Tonight, we'll open a bottle of summer sake la here: 💁‍♂️ Ohmine 3 grain Summer's coming 2023BY🧜. This is the second bottle of Ohmine's popular summer sake we've had at home, so we're opening a bottle. The sake is clear and has no gassiness. The aroma is almost odorless, but there is a slight scent of spodori. It tastes like a dry adult cider 🥤😋😋😋😋😋 It has a light and smooth aftertaste and is very suitable for summer. ☺️

Tonight, it's been quite a while since I've been to this brewery 💁. Laughing Shiki 612 INTENSE Momo 2023BY🍑🍑🍑🍑🍑🍑🍑 Sake made with yeast No. 6 x. Watanosen No.2 Sake 🍶🍑🍑🍑. The aroma is not flashy because it is a No. 6 yeast, and there is a faint aroma of peach, but when you put it in your mouth, the juicy peach flavor comes with a bang, just like the label says. However, the bitter and spicy aftertaste, perhaps due to the characteristics of Watabune No. 2, is refreshing, and you find yourself pouring more and more cups. I'd like to try the other one, butou🍇🙌

I'm dropping my first series tonight 🙌 Nozomu Junmai Ginjo Hitogokochi Unfiltered Bottle Warmed and Heated 2023BY ✨✨✨✨ I've seen the kanji jackets many times but this is my first time so I'm looking forward to it. And it's my favorite sake rice Hitogokochi😃. The bottle was very quiet when opened. The nose is clear with citrus grapefruit. The attack is a slight chilli gas 😋😋😋😋😋😋.

Tonight, we will compare these two bottles in support of Noto's sake brewery 🙌 Here is the second bottle 💁. Takeba Junmai Ginjo Noto Gohyakumangoku Okazaki Shuzo Mfg. This is a bottle that we commissioned to Okazaki Shuzo of Kamerei, Shinshu. Sake brewed by bringing in Gohyakumangoku produced in Noto. ☺️ The aroma is apple and muscat aroma typical of Shinshu Kamerei. The taste has that sourness and sweetness that makes it a Shinshu Kamerei sake, but the rice is Ihyakumangoku, so the spicy bitterness in the back end has a nice edge and is light on the throat, making it very delicious 😋😋😋. Both bottles were meh, so next time I'm going to try the pure Takeba 🙌
