The sixth bottle 🍶 This sake is not on the menu, but they have Shinmasa. I don't like it very much to begin with, but I chose it because it is a rare H-type sake. It is delicious, but I still don't like it. Maybe it's the acidity that's not my favorite. Maybe it's because the sourness of the first Flax Cat I drank had too much impact. I can't...can't...can't. I'm stuck in the past😅

Fifth bottle 🍶. Although not labeled sparkling, it had a strong fizziness and a winey acidity that I personally don't like. It was a delicious sake that matched those who liked it so much that some people even recommended it as today's first prize 😋. Hmmm? Was the strong fizziness a different sake?

Whenever I go back to Nara, my friend always arranges a table for me 🍶 I chose an imported Otters sake for the first bottle. This one is Type 50, a Junmai Daiginjo with the specs of Yamadanishiki. The rice is Japanese. It is a clear sake. It is also low in alcohol, so it is light and easy to drink. I think Americans would drink it in large gulps. It was so delicious that some people chose it as today's first prize 😋.

Fermenter: No additives Japanese Sake Degree: -3 Acidity: 2.3 Alcohol content: 15 Enishinomai is a relatively new variety of sake rice produced in Shimane Prefecture and officially named in February 1991. It is expected to be a high-quality sake rice that can be used to brew daiginjo and other types of sake. Now, let's see what it tastes like: ...... A really faint yellowish color. The aroma is sour🍶 and the taste is fresh and sweet, like a melon or muscat, which is typical of ginjo. The beautiful acidity that is typical of "Kimoto" follows it. The taste is clean and refreshing, like water, while giving a sense of refinement. The bitterness that lingers in the mouth is a nice accent. My daughter wanted to eat oysters, so we bought rock oysters. This time, we tried eating them raw. It was hard to open the oyster. But the taste was great. The taste doubled when combined with yellowtail sashimi 🍶.

Raw material rice: Sakonishiki Percentage of polished rice: 50%. Fermenter: No additives Japanese Sake Degree: -8 Acidity: 8.0 Alcohol content: 16%. Purchased because of the 8.0 acidity. It was originally intended to be made as Mukai Tenjoh Saika, but because normal lactic acid bacteria and alcohol-resistant lactic acid bacteria increased at the same time in the sake mother stage, yeast fermentation and lactic acid bacteria fermentation took place simultaneously, resulting in a very high acidity sake for a Japanese sake. The sake was named Saika Ara (Sakeru) because of the roughness of Saika. It is truly a white wine😋, but when you roll it around in your mouth, you can taste the umami of the rice. My partner, who loves wine, says it is not wine.... I tried mixing it with soda. The beaker that came with the Kaze no Mori is now on its way 🤭 The best choice is 3 parts Saika Ara and 2 parts soda. According to the liquor store, after opening the bottle, the acidity settles down and it mellows out. I'm also looking forward to warming sake, but I don't think it will be as good as Hanaboe, somehow. I wonder if the sweetness will come out if it is warmed up?

Strawberries we picked and rock oysters we got to share cheaply and 😋. I was going to drink it before going to bed, but I opened it without thinking😅. The supernatant has a clean taste. When I mixed it, the acidity was all over the place. It was unexpectedly a very cloudy sake 🍶.

When it is time to open the bottle I opened the bottle with trepidation because there was a handwritten "Caution" sign on the bottle, but it didn't react much. Next up is Rihachi🍶. Tabe Takeshita Brewery took over the business from Takeshita Honten. Production began in November 2022 with up-and-coming Touji Hamasaki. It is a fruity sake, which is rare in the San'in region. Mild acidity overlaps with an underlying umami flavor. Delicious 😋 This will be a good competitor to Gassan😍.

Drinking bus not drinking iron 🙂. Unlike a train, it's hard to drink because of the vibrations 😭 Faint umami accented with classical sourness. After swallowing it, it leaves a bitter taste and goes sharp. The bottle is about to tip over so I'm going to gulp it down and go to bed😅.
