I thought I was buying hiyaoroshi, but when I took a sip, I thought, "No, this is summer sake, right?" But when I looked it up, I found out that it seems to be a freshly pressed sake. But when I looked it up, I found out that it was a freshly squeezed, freshly minted sake. So it is not surprising that it has the taste of Omine's summer sake, with a little bit of acidity and a lot of umami. It has a feeling of being only available at this time of the year.

It is a local Niigata wholesale sake from the Murayu Brewery, which I personally recognize is hard to find these days. I bought it a few weeks ago on my way back from a beer drinking trip to Niigata. It is not like a Niigata brand, but Murayusuke is a sweet and umami sake. This one-of-a-kind feeling is wonderful.

Amaneko is the Spark, which I got a while ago. This is... too good, I was shocked. This is the most shocking thing that has happened to me in the past few years. I might have thought that I had underestimated Shinsei in the first place.... I am very impressed.

My first impression was "Wow, there's no way this is hi-ire, it's beyond nama-shu, how is that possible? I was told that it is a bottle-warming hi-ire, which takes a lot of time and effort (I checked)... but I was impressed by the effort (of the brewery). Thank you very much, I hope you will give it a try, if you have a chance.

Well, the taste is changing rapidly after the bottle is opened. When the bottle was opened, it was full of acidity, but it gradually became milder. In the latter half of the bottle, the bitterness and umami become apparent while retaining a sense of freshness. It may not be the taste of summer sake, but this changeable taste may be nice.

I bought this sake before the holidays...oh yes, I remember where I bought it...at a liquor store in Sano, Tochigi. It's dry, refreshing, and I thought it was a good summer dry sake. Summer is coming to an end, but the summer drinking of sake will continue (probably)!

The third "back home" snack is "Haneya". It is the kind of sake that tastes good the moment it enters your mouth. It has a wonderful aroma that goes into the nose, is not too sweet, and is easy to drink. I am now waiting for my delayed flight at the airport.

The second bottle? The second one is a 300ml version. It is said to be mellow and dry, but it has a nice lingering aroma after the dryness. It's a feeling I've never had before, and I've never felt before. It's wonderful!

During a trip home, I bought some at a liquor store near my parents' house. It was my first visit to this liquor store, but a quick look at the lineup was quite impressive, including drunken whale, Kenkonichi, Haneya, Daimine, and Kamikawa Taisetsu. Then, I found this Yukino Kayasha, which, come to think of it, may have been the first time I drank it. It has a refreshing aroma and a crisp, dry finish. It was a little bit of a healing drink in the midst of a busy trip back to Japan.

I was drinking this at the same time as the Semishigure that I uploaded yesterday, the one that is not Omine's Summer Nocturne...but it has a more mature balance, with less acidity (for Omine's summer sake) and a fuller flavor, so I honestly wondered which one should be the best summer sake of the year? I was wondering which was the best summer sake of the year until yesterday. So here it is, the tentative second place.

I think it was a comment on a YouTuber's video that triggered my search. I looked around for a liquor store in Nagano and other prefectures, but couldn't find it. Just when I was about to give up, I came across a liquor store in Koshoku. The moment I found it, I was so excited. When I told him that I was looking for this one, he said that it was probably the last one in stock, and that it had a great citrus flavor. I may be biased because of how I got it, but the mouthfeel is fresh and acidic. It has more punch than Koueikiku Sunburst (though I haven't had it this year). This swing to acidity is wonderful. I have concluded that this is this year's number one summer sake. Try it if you can.

Sorry for the consecutive posts, but I've seen a lot of your posts recently about Kangiku's new Discovery series. I heard that there are 4 kinds of this series, but 3 of them were in stock at a certain liquor store in S. Prefecture. I think it was either Identify or Adapt (I forgot). I could only buy one bottle due to carrying capacity, so I chose this one. At first sight, it is sweet, sweet and slightly carbonated, but as time goes by after opening the bottle, the flavor becomes more pronounced (like a spawning ground). Kangiku is always a discovery, isn't it?

The summer sake season is in its second half, so how are all you sake lovers doing in this hot weather? This time, we will have a summer sake, Tsukiyo, from Kamikigen. Gulp.... ...A nice balance of acidity, umami, and sweetness. A little bit of spiciness and bitterness that is also a nice accent. I'm sorry, I'm just saying that this is what I think of Kamikigen as a summer sake.
