I have had this brand before, but this is the first time I have purchased it. The bottle was opened with a swoosh. When I poured the supernatant into a boar cup, I saw bubbles. I hadn't seen bubbles for a long time. And when I looked at the bottle, I saw the cucumbers dancing. In a word, the supernatant is sweet and juicy with a touch of bitterness. Now, let's try mixing in the oli. The basics are the same, but you can taste the umami of the rice. Hmmm. Maybe I should have waited until it was a little warmer. ⁉️

It is not often that I have to rush straight to the liquor store because my stock of sake has reached zero. Today, I hadn't been to a liquor store for a long time. And then, I found the bottle I was looking for. I hadn't seen it in about 6 months. As usual, it has a rich flavor. This time it is junmai, so it has less melon-like aroma like junmai ginjo. It has the characteristic freshness of a directly pumped sake, and the sweetness seems to be a little less than last year's. In today's mood, cheese hamburger steak would have been better than yakitori. It is still a safe bottle.

I happened to come across this sake when I was at a liquor store earlier; it was limited to one bottle per person, but it was usually found in the fridge in the store. It is often on the store shelves these days, but I wonder if they have increased their shipments: ⁉️ Let's start with the supernatant. The taste is refreshingly sour with a hint of sweetness. Finally, it is tangy and disappears quickly. I tried mixing in the oli, but since it had been sitting for a while, it didn't mix very nicely. While mixing, bubbles form in the bottle. The bottle is opened with a light pusher. When the oli is mixed, the sweetness and umami of the rice is added and the flavor becomes thicker. The clear supernatant is very good and can be drunk easily, so be careful. Be careful, it will be gone soon.

I didn't remember much about it, so I read the past comments before I had my first drink. The sweetness comes first, but it is not unpleasant, and the bitterness and pungency come soon. The bitterness and pungency came soon after, but they flowed gently through my mouth. And then spiciness. It is a perfect food sake that can be served with any accompaniments. I have the same comment as the last time, but there are many sake that change their tastes often. In that sense, it is a stable sake. Above all, 2500 yen including tax for a bottle with this taste is too cheap nowadays. And it is helpful.

This is a brand that has been on my mind recently. I don't often see it at my local liquor store, but this time I found it. The price is a little high this time. Well, I guess it can't be helped because it is bagged. I took the plunge and bought it. The basic taste is the same as before, but it is very beautifully finished because of the bag-hanging method. The sweetness comes first, followed by spiciness and bitterness. The spiciness lingers a little longer. At first, it may not be enough, but as you continue drinking it, it has quite a punch. I think it is best to drink it slowly and sipping it slowly.

I was lucky enough to GET it. Well, as usual, I went straight to the liquor store first thing in the morning because they ran out of stock. This time I wanted nigori sake. First, I looked in the fridge for Yongo bottles, and then for Ichimasu bottles, and sure enough, there it was. I knew I would not be able to get any more this season, so I made a quick decision. Then, after purchasing the bottle, I was not sure if I could place it vertically in the refrigerator. However, I found that it managed to fit in the door pocket. It is no use in a household refrigerator. Now, as for the taste, naturally, I started with the supernatant. It tastes less sweet and tangy than I had imagined. I tried mixing in the oli, but it didn't mix very well. Then, small bubbles appeared in the bottle. I carefully open the bottle. It was a success. The sweetness is much less than usual, and it is refreshing. It also has a slight lactic acidity, and is probably a snowball for adults. I felt it was difficult to find the right accompaniment, but it is a bottle that cannot be missed at this time of the year.

It's Hachisen again, but I haven't had the pink label in two years. I bought it immediately because I don't see it very often at my favorite liquor store. It is fire-aged, so the usual green apple aroma is very slight. This year's Hakusen is drier than usual, but the fact that it is ale-soaked gives it a tighter impression. The usual sweetness is present, but the bitterness comes first. From the middle to the latter half of the bottle, the sweetness and spiciness come together. For this brand, it has a strong sake taste. As for snacks, I paired it with a purely Japanese hot pot since it is this time of year, and it was a perfect match. Perhaps it would be good as a heated sake.

The waitress recommended it to me because it was the first sake to be served, so I ordered it. As expected, it was hard on the palate and the bitterness came forward, but because it is a draft sake, it also had a slight sweetness. This year I could not get Senkou's Yukidaruma, so I asked for this Yukidaruma. It is nigori-yu, but it looks light nigori. The taste is just like the snowdrift in Oze, with sweetness and bitterness at first. The sweetness and bitterness come first, and then disappear, but the final part of the taste is sweetened and tightened. You can have a strong flavor or a refreshing one to rinse your mouth. Today, I paired it with a yellowtail and chicken stir-fried with oyster sauce, but I think the stir-fry is the better choice.

It's Hachisen again. This year's sake is unstoppable. Pouring it into a sake cup and drinking it right away, you can feel the unique freshness of new sake. It is quite strong. After a while, it settles down and is very mellow for this sake. However, it is not so dry. The aroma does not have much of the usual green apple flavor, but it is very sharp. Today I paired it with Hokkaido albacore, and I have no complaints. It might also be good with yellowtail. It is delicious.

I'm so motivated that I'm posting this in succession. And this sake was also a gift. This time of year is a scream of joy. This brewery seems to have changed the quality or taste of their sake recently. I can't say for sure because I can't get it locally, but it used to be spiky and not really my favorite, but last year and this year, it has become sweeter. The sake rice is called Terroir, and it seems that they use No. 7 and No. 9 yeast. It also has a sweetness. Is this a recent trend? The image of this sake is similar to that of Tobiroki, but it has more sharpness than Tobiroki. It seems to go well with simmered dishes with strong flavors and other rich foods.

It is a brand that you can always find in the liquor section of department stores. It has a sweeter and mellower taste than I expected. To put it better, it is rich. It is a gift. This sake has a hard, hard drinking image, but it is interesting because it is a Junmai Daiginjo. The aroma is mild, but as is typical of Junmai Daiginjos, it smells strong. When you take it into your mouth, you will taste a slight sweetness, followed by spiciness and bitterness. It is an elegant sake with a strong flavor, without the unpleasant sweetness that is so common these days. It can be served with anything, but it might be interesting with Chinese food. French cuisine may be a bit tough. We received a delicious gift at the end of the year.

The sake is as stable as ever. Although the mouthfeel is calm for a sake made from directly pumped water, a slight piquancy gives it away. When you put it in your mouth, sweetness comes first, but soon there is bitterness and spiciness. And then there is the piquancy. It is really a versatile drinker. It can be used with all kinds of Japanese food. However, because of its pickiness, it is a little uncomfortable in vinegared dishes. I have no complaints about homemade pickled Chinese cabbage.

I was at the liquor store the other day and found a sake I hadn't seen much of, so I bought it on impulse. It was also called "micro-foam. And when I looked at the production date, it was May. Despite my apprehension, there is fortune in leftovers. So I bought it. Even though it is a slightly sparkling wine, there are a lot of bubbles when the bottle is opened. We started with the supernatant. It has a strong sweetness. I tried to mix in the oli and drink it, but as expected from a half year of aging, it didn't mix well. In addition, there are a lot of bubbles (laugh). This is Calpis for adults. I thought it might be, but I can hardly taste any sourness. It is more like an adult amazake with Tan-san in it. Considering the production date, it must be a summer sake. It has been a long time since I have had a shuwa shuwa. We enjoyed it very much.

This year's Hachisen. This is the third edition. I think it used to be arabashiri with a silver label, but this time it is silver label and the arabashiri notation is gone. The opening of the bottle is sober and juicy. And the very aroma of green apples is wafting through the air. In the mouth, it is tangy but fresh, characteristic of nama-shu. It has sweetness, but the spiciness and bitterness are strong for a Hachisen. I like it very much. However, after drinking it, it feels a little sticky. It may be because it is a rough-running sake. It is a very tasty sake.

It's almost the start of the New Year and the liquor stores are getting busier and busier. So I went to my favorite liquor store first thing in the morning. And this is the sake I wanted. The usual woman is Santa Claus. I didn't see anything on the back of the bottle, so I didn't write anything about it. But at the liquor store, she was called Santa Claus (lol). It is a nice label, isn't it? I can guess what it tastes like, but what do you think? It tastes the same as usual. The sweetness is followed by spiciness and bitterness, and the taste is crisp and clean. What makes it different from the usual is that it is a daiginjo and 100% Yamada-Nishiki is used. The polishing of the rice suppresses the unpleasant tastes, and it seems as if anything that might get in the way has been removed. The balance of the Yamada-Nishiki is very good. As is usual with this sake, the arosoke does a very good job. It was a little expensive, but it is a satisfying bottle.

This is the second Hakusen, Nouveau Direct Kumi. Like last time, it was not on the store shelves, but was brought out from the refrigerator in the back of the store. It is the 3rd day after opening the bottle. This year's Hachisen is still tight. On the first day, the taste is full of freshness. The aroma is subdued because it is a special junmai, but the usual green apple aroma is still there. And what's more, the spiciness and bitterness are more pronounced this year than the previous year. It has a sweetness, but it also has a good kick. We hope to complete it this year.
