A large brewery.
It seems to have a large production volume.
The name of the brewery is Chikuma-Nishiki, but it seems to be a little far from Chikuma River, so it may be from the Asama mountain range.
The aroma and taste are sweet.
It does not taste fresh, but it has a sourness that is not too sweet and leaves a slight astringency at the end.
It is easy to drink and delicious.
I did not know the brand name Kiyama.
And what is Ura-Kiyama?
As the label says "super dry", there is no sweetness at all.
It is refreshing.
However, it still retains some umami flavor.
You can taste the bitterness that only a fresh wine can have.
Very good!
We chose this sake because we heard that it is a brewery that makes buckwheat shochu (buckwheat shochu)! It is quite dry and has a slight ginjo aroma that matches well with food. It goes very smoothly!

Rated 4.4

Freshly squeezed and super dry. In contrast to the fruity and sweet Kiyama, Ura-Kiyama has a super dry taste. It has a clear and clean mouthfeel. It has a fresh, lush flavor with a bit of fruitiness. It has a crisp, super-dry finish.

Limited edition of 500 bottles.
The aroma is like muscat and banana.
It is unfiltered, so it is slightly cloudy and yellowish.
The moment it enters the mouth, it is very fruity and sweet, reminiscent of pears, peaches, and bananas.
The aftertaste is dominated by sourness and bitterness.
The drinkability remained the same even when the temperature was changed, and it was interesting to see the various expressions change.
