1847 2024/8 Tocho Mutsukoro-san Jungin Unfiltered Nama Sake 60% 15° 24/7 A+ Ureshino-shi, Saga Segashira Shuzo 1800 3190 Tocho had an image of being quite sweet. When we tried it, we found it to be sweet and light, but it is a delicious sake with a solid flavor and acidity. It makes you think that if the taste is strong, the sweetness and spiciness are just a bonus.

1844 2024/8 Rikishi Junmai Unfiltered Nama Sake Sai no Kizuna 90 16° 24/7 A+ Kamaya, Kazo-city, Saitama 720 1760 Kamaya released a limited edition of 300 bottles of this 4-ounce sake as the new Rikishi. It is 90% polished rice, but the flavor, acidity, and umami of the raw sake are honest. It is interesting in a good way that it is not only clean but also has a face that sometimes shows that it is not just clean.

1843 2024/8 Kaze no Mori Yamadanishiki 807 Junmai Unfiltered Nama-Shu Hyogo Yamadanishiki 80% 16° 24/6 A Nara Gosho-shi, Nara Aburacho Shuzo 720 1496 For my first Kaze no Mori in three years, I chose Yamadanishiki 807, which I liked. It opened with great vigor and a slight effervescence as usual. But when I tasted it, I wondered if it was the change in the brewing process or the change in the drinker...it was quite different from the impression I had before. I waited 3 days after opening the bottle and tried it again. The taste was a little fuller, but it was not as rich and delicious as before, supported by the rich acidity. Was it my strong feelings that had inflated my impression? I drank more than 20 bottles of Kaze no Mori over the past 2 years since 5 years ago. I was taught that the expression of the sake changes dramatically not only depending on the rice used, but also on the degree of polishing and the degree of alcohol content. Does that mean it is still changing...

1842 2024/8 Ichijiru Senzan Comet Rough Running Nama Junmai Nama-shu 100% Comet from Hokkaido 60% 15° 24/7 A+ Gifu Ogaki City Takeuchi 720 1870 The aluminum cap, which had been peeled off while holding it down with a finger, popped off and the lid flew up to the ceiling. The lees soared up from the bottom and gave off a pleasant fizzy sensation. It has a soft and sweet taste on the palate, but overall it is a sparkling sake with a clean and refreshing taste.

It has a refreshing flavor typical of nama-shu, and as it is super-harsh, the aftertaste is certainly clear and dry with a slight bitterness, but when the lees gets involved, the impression on the palate is soft and sweet, and this impression gradually increases as the day goes on. The change in expression is quite enjoyable and above all, delicious.

It's like a summer sake, but not so-called low-alcohol or light, and it's nice that the brewer has kept the solid strength and flavor of the original sake while not letting it drag on.

But it gradually mellows out with the second and third cups. On the second day, when it was warmed to lukewarm, it became softer and sweeter. This is the joy of nama-sake. 1833 2024/6 Kinshi-Morinori Junmai-Ginjo Nigori Sake Hyogo Yamadanishiki 60 16° 24/5 A+ Kakogawa City, Hyogo 720 1890 I heard it was an active nigori, but was it fire-aged? The fizzy sensation was quite strong, and although I was very careful to open the bottle, I almost blew out even on the second glass. The taste is dry at first, but thanks to the very smooth orization, the sweetness and umami come slowly later. It can be enjoyed not only as a sparkling sake, but also as a deeply flavored nigori sake. Sake-no-wa, I see that I can no longer log in from my PC: ......

1831 2024/6 Okutamba Natural Sake -Ameshu Junmai Ginjo Unfiltered Nama Sake Organic Omachi from Bicchu Kurashiki Yamada Farm 60% 15° 24/3 A Tanba City, Hyogo 720 1980 Soft aroma and elegant mouthfeel. Although it is 15%, it has a good umami taste as it is a draft sake. If I had to say something, I would say it could be a little more powerful. A side note: Recently, low-alcohol (low alcohol content) sake has been on the rise, but I wonder if there is still a lot of demand for such sake. Of course, there are some good low-alcohol sake, but there are also sake brands and product names that have become completely different from their predecessors, even though they are still called sake.... I suppose the purpose is to increase the number of new sake fans, but we also have to be careful not to lose the existing fans.

1830 2024/6 Asahi Wakamatsu Junmai Unfiltered Nama-shu Omachi (blue label) Omachi 70% +5 2.0 2.4 10 series 19° 24/3 A+ Naga-cho, Tokushima Naga Shuzo 1800 4840 I was torn between this and the white label, but I went with this one. The first sip has a faint, fresh aroma of nama-zake. First, drink it cold and savor the rich flavor. After the second day, the aroma settles down, and I mainly drink it cold with a mild flavor, sometimes warming it up. When heated, it becomes smooth and tasty even when cooled. And you don't even notice the 19 degrees. I decided to let about 3.5 gou of sake sit for a while. 2024/6/20 I was going to let it sit for a while, but I ran out of stock and it's been two weeks since I opened it... The impression is the same, but the taste is calm and delicious.

1829 2024/6 Kaga-no-tsuki Nama-no-shu Hyakumangoku No Shiro 60 ±0 2.3 17° 24/4 S Ishikawa Komatsu City Kaketsu 720 1980 I had the impression that Kakoshi has a variety of brands and flavors. I tried this "Kaga-no-Month" pure rice sake, which is a pure sake made from the same yeast and yeast. The result was a great answer. Although there is no description, the taste suggests that it is probably a pure sake. The aroma is mild and unctuous, and the rich acidity is not overpowered by the richness of the umami-guchi. But it never feels heavy or dull. I happened to be comparing it with Asahi Wakamatsu's nama sake (both were served cold), and while they were different in flavor, they were no less delicious. I should have bought a bottle. The label did not come off well.

1828 2024/6 Shoryu Horai Kimoto Junmai Omachi 70 Unrefined unpasteurized sake straight from the tank Specially grown rice without pesticides and chemical fertilizers Omachi 70% from Okayama Mame Farm +4 17° 24/5 A+ Aikawa-cho, Kanagawa Oyataka Shuzo 1800 3960 This is the 11th bottle from this brewery since the Hourai days, including the Zanzou Hourai. The taste of Shirokushiki left a strong impression on me, but the taste of the low alcohol type and other types of sake were very different from one brewery to another, so I chose a Shoryu Horai that I used to like (previously Yamada Nishiki, now Omachi). The first sip had a slightly distinctive flavor with a hint of nama-zake. The taste is firm and umakuchi, with a pleasant acidity. It becomes more straightforward when heated, but it is also too smooth, so the acidity is more pronounced when it is cooled. After the second day, the flavor has lost some of its character, and I enjoyed the different expressions by alternating between cold and warmed sake.
