It's been 25 years since I first had this sake, and I remember the bitterness of the first time I drank it.
Unlike the impression I had in the past, it has a nice mild sweetness and a nice raw sake flavor.
Above all, the soft acidity that brings out the overall flavor is very pleasant and moderate.
I really think that first impressions are important, but at the same time, it is no good to be obsessive about them.

I have wanted to try this sake for a long time.
Setoichi has many variations, so I thought I would start with Sakata-Nishiki, but I found it on my trip and tasted it at the inn.
It was elegant and mild, but had a strong flavor and was quite good.
Next time, I would definitely like to try Sakata Nishiki.

This is the first active nigori since the blue bottle was discontinued.
It has been a long time since the liquor store I used to go to for this stopped carrying it.
The fizz was as strong as ever, and it took more than 10 minutes to open.
As before, it was clean, dry, and a little lighter. (14-15° to 12-13°).
And I wonder if I can feel a little lees that did not touch my tongue at all.
The previous 500㎖ bottle was just the right drinkable size, so I feel a little short of drink, but I could feel like I was reunited with an old friend.

This is the raw sake that was already finished.
It is light rather than dry.
Easy to drink, but the flavor is light compared to the aroma.
I tried heating it up, but it didn't change much.
Next time I would like to try the Junmai Nama-nihanzake.

This is a Hideshiyoshi cold-brewed sake that was worth the effort of bringing back a bottle from Kakunodate 25 years ago.
I found it with the same label as back then, so I bought it without hesitation.
This time, the aroma is a bit more floral and you don't get a sense of the alcohol content.
But it has a strong, robust flavor, and the imbalance between the aroma and the taste is interesting, in a good way.

I bought it because it was a draft sake, and when I got home I checked the label and found it was labeled "Ura-yanma".
It was a little sweet as described, but it was easy to drink with a robust flavor that didn't linger too long.
Next time, I would definitely try it from the front...

The recent past has seen a series of relatively light and soft sake, but this is the first simple, rich and umami sake in a while.
While there are more and more delicious sake with different tastes these days, this one made me feel like I was back on my home turf.

The first Akishika in a while was a nigori.
When I turned on the perforated cap, there was no fizz at all.
But since we are here, we had a clear sake for the first drink.
There is no effervescence, but the acidity is pleasantly refreshing and dry, but the taste is firm.
When I mixed it with thick lees, it became a little more robust, but it was not sweet, so the cup went on drinking.
It might have been different if it had a fizzy taste, but I think I preferred the clear sake this time.
