1870 2024/11 Toyobai Junmai Shiboritate Junmai Namaisake Koji 55, Kake 60 +1 to +3 1.4 to 1.6 In-house yeast 16° 24/11 A Hirosaki-shi, Aomori Miura Shuzo 1800 3630 This is the first Toyobai Shiboritate in a while. It has a mild flavor and taste but seems lighter than the Shiboritate I remember. Checking the old records, I found that the previous bottles were 17-18 degrees Celsius. I checked the old records and found that the previous bottles were 17-18 degrees, but this one was 16 degrees, so maybe that's the difference?

1869 2024/11 Chichibu-Nishiki Special Junmai Nama-shu Shiboritate 2024BY Nagano Miyamanishiki 60 +2.6 1.9 18.6° 24/11 A+ Yao Honten, Chichibu-shi, Saitama 1800 2860 The third new sake is Chichibu Nishiki. It has a firm umami taste with a freshness and youthfulness that is typical of new sake, complemented by the acidity. The best thing about it is that the 18% alcohol content doesn't make you feel it's too much. Like "Kasumi", I really appreciate the fact that they can brew such an easy-drinking and tasty sake without using low alcohol.

1868 2024/11 Hiroki Sparkling Special Junmai Activated Nigori Nama Sake Hitomebore from Iwate 60 ±0 15° 24/9 A+ Shiwa Shuzo Brewery, Shiwa Town, Iwate 720 1650 When I turned on the cork, the foaming was mild... but it almost blew out as soon as the lees came to the surface and I hurriedly closed the cork. The bottle was opened after about three minutes while slowly stirring the lees. The taste was clean with a moderate sweetness, and the lees did not touch the tongue at all despite its richness.

1867 2024/11 Mousou Sangyu Dry Junmai Ginjyo Oorigarami Nama Iwafune Koshitanrei 55 15° 24/4 A+ Niigata Murakami City Taiyo Shuzo 1800 3300 The Sanyu was delicious last year. I decided not to drink it right after it was released from the brewery in the spring, so I kept it over the summer as I did last year. The first sip has a fresh flavor with a slight effervescence. It has a subtle leesiness and umami supported by acidity. Although it is said to be dry, it is moderately sweet. It was kept cold and was empty within 3 days.

1866 2024/11 Sansen Sakura Junmai Ginjo Kutouryu 55 Junmai Ginjo Nama-Ginjo Nama-Shu Kuzuryu 55% 16° 24/5 A+ Higashikawa-cho, Hokkaido Sanzen Sakura Brewery 1800 4121 Creamy sweet with a slightly thickened feel. The slight bitterness in the aftertaste, however, helped me to drink it without dragging it down too much.

1865 2024/10 Choryu Sobo Junmai Genshu Aged Sake H29BY Rusubafu 65% -8 2.5 -8 2.5 Yamanokami yeast 13-14° 23/11 B Nara Hiroyo-cho Choryu Shuzo 1800 2640 24/10/12 (Taste test) The Futaho was impressive at the Choryu brewery. Although there is no mention of it on the label, I was looking forward to drinking it as it was aged for 7 years in H29BY (7 years old). The aroma was mild at room temperature, and no matured aroma could be detected. I expected it to be a darker, sweeter sake because of its low alcohol content, but it was unexpectedly light and easy to drink (later I checked the sake's nihonshudo (sake alcohol content) level and found it to be -8, which is quite different from my impression of the sake). The acidity only slightly subsides when heated, so I decided to refrigerate half of the bottle and leave the rest at room temperature for a while in anticipation of changes after the bottle is opened. 10/28-: After about half a month, there was not much change, so we kept it chilled and heated.

1864 2024/10 Yuri brewing Junmai Ichibanzake Junmai Unfiltered Nama Sake 2024BY Hachitan-Nishiki 70 -5.2 2.6 Association No.9 17° 24/10 A+ Oita Hita City Inoue Shuzo 1800 3520 This is the first sake brewed with yuri, which was very tasty in the spring. This season there was also a bottle available, so we didn't hesitate to order it. It is a little sweet but packed with acidic flavor. It was a bit younger or harder than last year's new sake, but I guess that could be due to the difference in the time of year when we drank it (March before) or the difference in the rice used (Yamadanishiki to Hachitanishiki). But it was delicious all the way through (served cold all the way through).

1862 2024/10 Okuharima Strong Yamahai Junmai Nama-junmai 60% +13 3.2 No.7 20° 24/10 A Shimomura Shuzoten, Himeji City, Hyogo 1800 3630 The impression when opened cold is that it is very robust. When heated up, it becomes a little more amiable and the umami can be tasted more clearly. I thought it would be better to let it sit for a while, but after the second day, I started drinking it in various ways: hot, sometimes cold, or a mixture of cold and hot sake.

1861 2024/10 Hououmida Hatsu Shibori Junmai Ginjo-shu Junmai Ginjo Unfiltered Nama Shu Gohyakumangoku 55 16-17° 24/10 A Kobayashi Shuzo, Oyama-shi, Tochigi 1800 3080 The first new sake of the season is Houou Mita after three years. The first clear sake is very light. The next day, when the sake was on its lees, it seemed to soften a bit and expand in flavor, and the lightness helped to keep the volume up until the end of the third day, when it was served chilled.

1859 2024/10  四季咲 菊花開 純米吟醸無濾過生原酒 岡山高島産雄町 55% +1 2.0 16-17° 24/9 A 奈良 広陵町 長龍酒造 1800 3740 季節に応じて7種類を出しているらしいけどこの時期嬉しい夏越しの生。 穏やかだけど爽やかな風味、酸の程よい中口。 燗にすると全体にまろやかになるので冷酒とぬる燗を交互に楽しんでいた時に、たまたま器に移したまま燗するのを忘れて常温の状態を飲んだら生の風味と燗のまろやかさを同時に味わえたので、後半は冷酒を常温まで戻して楽しんだ。

1858 2024/10 Kameizumi Junmai Ginjo Unfiltered Nama-shu Gin no Yume 60 +3 1.5 1.2 AC-95 16° 24/9 A Kochi Tosa City Kameizumi Shuzo 1800 3410 Kameizumi is a sake that I had been avoiding for a while because I felt the yeast was ahead of its time. It has been a while since I found one that wasn't so. The aroma is fresh and pleasant on the palate, but a bit of bitterness lingers, so I tried heating it up and found it to be just right. By the third day, the bitterness had subsided a bit, so I enjoyed the second half of the bottle heated and sometimes cold.

1856 2024/9 Koshi Junmai Ginjo Nama Shu Hanayaka Nama 58% 16° 24/9 A+ Iinuma Honke, Sakasai-cho, Chiba 1800 3520 The first sip has a sweet aroma, a fresh flavor, and a slight effervescence, with a bitter aftertaste that nicely balances the sweetness. After the second day, the fizziness and bitterness subside, but the acidity balances the sweetness nicely, and the sake goes down smoothly and without hesitation. I enjoyed it cold. The label is in contrast to the name.

1854 2024/9 Harunomine Special Junmai Unfiltered Nama Sake Shiga Koka City Tamakae 60 17° 24/8 A Shiga Koka City Tanaka Shuzo 1800 3300 It doesn't feel like a pure sake. It is a bit plain and dry when cold. On the second day, it becomes softer when heated, so from then on it should be served sometimes heated and sometimes cold. After the fifth day, you can taste its mild sweetness when heated.

1853 2024/9 Kyo no Haru Junmai Nama Nigori Sake 67% 17° 24/8 A Ine-cho, Kyoto 720 1945 The bottle was warned to be opened with caution, but there was no fizziness at all, and the lees did not move even slightly. The first thing I did was to pour the clear sake into a cup, and even there I did not feel any fizz. But the taste is quite refreshing and delicious. After the second glass, I mixed the lees with the nigoromi (nigori)... Perhaps because the lees is so thick (about a quarter of the lees in stillness), the sake was a little heavy, beyond soft. It might be exquisite if gas were involved...but I kept on drinking. I had the impression that if there was a sense of effervescence... if there was no effervescence, the clear sake would be better.... On the second day, I had the clear sake and light nigori. Since I was enjoying Ine-Manbaike at the same time, I thought it would be good if they were from the same brewery, so I combined the remaining lees with Ine-Manbaike and enjoyed it as a mellow pink sake.
