1919 2025/6 Kuromatsu Senjo On a night like this... Shika Tokusyu Boshu Junmai Oragami Nama Shu Hitogochiki 100% from Shinshu 60 16° 24/12 Kurage 25/5 A+ Nagano Ina City Senjo 1800 2970 This sake has been aged for 5 months in the brewery. When the bottle was opened, there was not much fizz, but gradually the lees began to rise slowly and gently from the bottom of the bottle, and over the course of about 10 minutes, it transformed into a pure white lees sake. The taste was light, with a strong nama-shu flavor and just the right amount of sweetness. It was as if the sake had been laid down for a long time to be ready for this time of the year. A good sake.

1918 2025/6 Hanaheizakura Yamahai Junmai Sake Unfiltered Nama-shu 60% 18° 25/5 A+ Ehime Niihama City Kondo Shuzo 1800 3850 There were two types of sake on tap, but I chose this Yamahai, which was brewed by a toji who used to work at Mori no Midori. When served cold, it has a complex lingering aftertaste with a slight astringency after the acidity and deliciousness has passed through. It is quite a tasty and rewarding sake. When warmed, the astringency disappears and the impression becomes more rounded and gentle. Both expressions can be enjoyed, so I enjoyed it alternately cold and lukewarm, or sometimes together, depending on my mood.

1917 2025/5 Wolf Flame Junmai 60 Nama Sake Perfume Dry 60% 15° 25/5 A Yao Honten, Chichibu, Saitama 1800 3080 This is a Chichibu Nishiki brewery. I bought it to try as it seems to be a different brand. When I got home, I noticed the Perfume Dry on the shoulder... Dry is welcome, but is it really? The aroma is sweet on the palate. There is no mention of lees in the bottle, but the taste is relatively light and easy. After the second day, the aroma settles down and it's like a normal, easy-drinking, less-sweet lees sake. It is a very different impression from Chichibu Nishiki, but perhaps this kind of modern sake is necessary for the brewery.

1916 25/5 Takizawa Junmai Ginjo Nama Shu 55% 17° 25/4 A Ueda-shi, Nagano Shinshu Meisho 1800 3471 Kikumori's brewery. The aroma is a little strong at first, but it doesn't bother you too much. It has a sweetness that lingers a bit, though it is described as "umakuchi" (delicious). But this is good in its own way.

The sake shop recommended heating it up, but I wanted to fully enjoy the robust flavor, so I kept it cold until the end. Next time, I may try heating it up.

It is a light nigori, but it is a beautiful clear sake in a glass or in a black vessel. It is a little sweet, but the moderate acidity is pleasant and refreshing. It has a good balance between the two, so you will never get tired of drinking it.

1911 2025/4 Nokomi Junmai Ginjo Arabashiri Junmai Ginjyo Nama Sake Yamadanishiki 55 +1 1.4 16° 25/2 A+ Saga Kashima City Baba Shuzo Brewery 1800 3900 Nokomi for the first time in a long time. I dropped by the liquor store where I used to buy it for the first time in several years and found it there, so I didn't hesitate to buy it. In my memory, I had the impression that it was a powerful Nokomi, in contrast to the gentle and elegant Hokaoru from the same brewery, but when I tasted it this time, I found it to be a combination of the two, a rich and easy-drinking sake. I was impressed by the powerful Nokomi in contrast to the gentle and elegant Hokaoru, but this time I found it to be a combination of the two, rich in flavor and easy to drink. No indication but hazy orikara. Sweet and rich in flavor, with moderate acidity. 1906 2025/4 Kirakucho Dry Junmai Nama Yamadanishiki, Nihiharu 65 +12 1.8 19° 25/3 S Higashiomi-shi, Shiga Kita Shuzo 1800 2530 I was looking forward to drinking this 19° nama sake, and it did not disappoint. Although it is called dry, it has a sweetness to it along with the flavor and robust umami of nama-zake. Low alcohol sake is fun sometimes, but this kind of sake with a lot of body will reset you. It is a delicious sake that makes you drink too much without making you feel its high alcohol content.

Unlike the impression I had in the past, it has a nice mild sweetness and a nice raw sake flavor. Above all, the soft acidity that brings out the overall flavor is very pleasant and moderate. I really think that first impressions are important, but at the same time, it is no good to be obsessive about them.

Setoichi has many variations, so I thought I would start with Sakata-Nishiki, but I found it on my trip and tasted it at the inn. It was elegant and mild, but had a strong flavor and was quite good. Next time, I would definitely like to try Sakata Nishiki.

1901 2025/3 Liquefied sweet sake nigori Junmai Ginjo Nama Shu Toyama Nanto Yuyamanishiki 55 12-13° 24/11 A+ Gifu Yoroi-cho Gyokusendo Shuzo 360 968 This is the first active nigori since the blue bottle was discontinued. It has been a long time since the liquor store I used to go to for this stopped carrying it. The fizz was as strong as ever, and it took more than 10 minutes to open. As before, it was clean, dry, and a little lighter. (14-15° to 12-13°). And I wonder if I can feel a little lees that did not touch my tongue at all. The previous 500㎖ bottle was just the right drinkable size, so I feel a little short of drink, but I could feel like I was reunited with an old friend.

1900 2025/3 Tenjomugen Junmai Dry Namaishu Kura-no-Hana 60 +8 1.3 15° 25/2 A Miyagi Kami-machi Nakayuu Shuzoten 1800 3080 This is the raw sake that was already finished. It is light rather than dry. Easy to drink, but the flavor is light compared to the aroma. I tried heating it up, but it didn't change much. Next time I would like to try the Junmai Nama-nihanzake.
