1939 2025/9 SENKAME Nigori Sake Karuku-fuku Junmai Nama-zake 80% 11° 25/3 B Saitama Hasuda-shi, Saitama Shinkame Shuzo 300 495 I happened to see this one by chance, so I haven't had it for a while. It is a low-alcohol active nigori sake that has been offered separately from Shinkame for some time. I had drunk it several times before, but my impression was different each time, so I wondered if it would be the same this time... A few minutes after opening the bottle, it was quite light and acidic with a little bit of a peculiar aroma, although the sweetness was quite moderate. I wonder if it will be Shinkame's active nigori this time.

1938 2025/9 Hakuisen Dry Junmai Unfiltered Nama Sake 70% 16° 25/7 A+ Izumi Shuzo, Kobe, Hyogo 1800 3190 I've had many different kinds of sake, but there was a time when I stopped looking for new ones and just drank the ones I liked. Some of the breweries have stopped making sake or made it difficult to find, but one of the sake I used to drink a lot back then was this Hibokuizumi. It's been five years since I last had this sake, but it reminded me of my own tastes and flavors.

1937 2025/8 Kagatobi Summer Junmai Nama 65% 16° 25/5 A Ishikawa Kanazawa-shi Fukumitsuya 1800 2785 It is a dry sake, so I thought so at the first sip, but after the next day, it became lighter and lighter, which is a summer sake.

1936 2025/8 Goshoizumi Ginjo Araubashiri Unfiltered Nama 60% 16° 25/3 C Takeuchi Shuzoten, Kanazawa, Ishikawa 720 1265 I was looking forward to drinking this sake because I wanted to drink a rich, high strength sake and it was alky but unpasteurized at 20%. The aroma was a little strong, but not so much as to be overpowering, but when I drank it, I didn't taste any flavor and didn't detect any alcohol content, so I decided to leave it overnight. The next day, I checked the label and found that it was 16 degrees Celsius... It was not a pure sake, but I was disappointed because I had high expectations for the sake. It's not the sake's fault, but the gap between my expectations and the sake itself... I almost wouldn't have chosen the sake myself if it were alsobe watered.... Later I wished I had tried it heated.

1935 2025/8 Okunoto Shirakiku Special Junmai Unfiltered Nama-shu Gohyakumangoku 73 Yamadanishiki 27 55% 17° 25/7 A+ Shirafuji Sake Brewery, Wajima City, Ishikawa 720 2200 The first bottle was sold out, so we had a 4gou bottle. The rich umami of the raw sake is pleasant along with the flavor of the raw sake. I had the impression that Shirakiku was sweet, but it was just right, and the bottle was empty in less than two days.

1934 2025/8 Kikusui Anaguchi Ichiban Shibori Honjozo Nama-no-genshu 70% Niigata rice 19° 25/5 A+ Kikusui Shuzo, Shinobata City, Niigata 200 340 I had ordered a bottle of sake, but it hadn't arrived, and the local liquor store was already closed. I used to drink this sake many times on my way home from business trips, but this is the first time for me to record it. I was very happy to find that I could not enjoy such a powerful and drinkable sake with low alcohol content. It is a pure rice sake (?) with a high alcohol content even if it is more alky than the original. I would like to try a little more high alcohol content pure sake.

1933 2025/8 To Kai Special Junmai Super Dry Nama Sake Aomori rice 60 16° 25/7 A+ Rokka Shuzo, Hirosaki-shi, Aomori 1800 3520 This is a brewery of Jyobari (Jyobari itself has been gone for a while?). It is super dry, so the first sip is a bit harsh. But it settles down the next day, and you can taste the umami and a hint of sweetness. It is good that you don't get tired of drinking it, regardless of who you drink it with.

1932 2025/8 Shinkai IY-3 Rin Junmai Namaishu 60 16° 25/8 A Koka-shi, Shiga Fujimoto Shuzo 1800 3520 I was a little confused by the name of the yeast on the front and the label, but it was my first brand and not a low alcohol one, so I gave it a try. (There are a lot of low-alcohol brands with a classical body these days.) A little sweet, mild aroma, but lingering aftertaste. But it is easy to drink. After the second day, the sweetness gradually becomes less and less.

1931 2025/8 Ryuki Junmai Natsu-oi Unfiltered Nama Ogedara Fujioka Fukuda Farm Kame-no-o 45 Asahi 55 60% No. 9 16° 25/7 A+ Fujioka-shi, Gunma Matsuo Shuzo 1800 3410 The store told me to be careful about opening the bottle, but it opened quietly. It's a little sweet, but it's just right, easy to drink, with a strong flavor, and it goes down easy without a second thought.

1930 2025/8 Daijiro Namaishiki Junmai Yamadanishiki Junmai Namaishu R5BY Yamada-Nishiki 65% produced by the Shiga Tomin Hyakusho no Kai +5 2.4 No yeast added (brewer's yeast) 17° 25/7 A+ Higashiomi-shi, Shiga Hata Shuzo 1800 3380 This is a raw yeast sake from the second summer of the R5BY. It has a mellow but deep flavor that retains the freshness of the original. It becomes softer when heated, so we enjoyed comparing it with cold sake.

1929 2025/7 Zanso Horai Shirokushiki Tokubetsu Junmai Unrefined unpasteurized sake made directly at the brewery Made with 60% Nagano Miyamanishiki Acidity 3.1 16° 25/7 A Aikawa-cho, Kanagawa Oyataka Shuzo 1800 3630 It's been a long time since I've had a Shirokuchiki. When I drank it for the first time, I had a vivid impression of its strong acidity and its firm taste that was not defeated by the acidity, but after tasting it for the first time in a while, I found it to be lighter than before. The alcohol content is now 16%, and although there seems to be a slight difference, I wonder if this difference is significant.

1927 2025/7 Jukishin Nikomaru Junmai-shu Light Nigori Nama Nikomaru 100 65 -1.5 1.6 16° 25/4 A+ Ehime Saijo City Shuto Shuzo 720 1650 Slightly effervescent. It is a little sweet, but the overall balance is good, making it very easy to drink and keep going. I decided to go with 4 gou because I have a tendency to spill the bubbly sake when I drink it in a bottle with bubbles.

The next day it softened a little, so I heated it up and found that the brusque wild samurai became a little calmer... I'll be heating it up from now on.

1925 2025/7 Kyo Hina Fukayama Tokubetsu Junmai Nao Kumi Nama Sake 60% 16° 25/5 A+ Ehime Uchiko Town, Shiroku Shuzo 1800 3355 The taste is gentle and deep. It is a little sweet, but the acidity is good enough to keep you from getting tired of drinking it. Side note: I drank it slowly, remembering Shinya Shoda's "Drunk on Ancient Sake," which I read that day.

1923 2025/6 Shiraoi Derakara Junmai Directly pumped from the tank, 75% pure sake +12 2.1 1.3 Tokokai No.7 17-18° 25/5 A+ Tokoname City, Aichi Sawada Shuzo 1800 3520 Dry with a fresh flavor and strength. It has a pleasant slightly burly feel. There are light and soft sake, and then there is this kind of drinkable sake. That is why sake is fun.

1922 2025/6 KIRITSUKUBA Honnen Special Junmai Sake Gohyakumangoku 60 Ogawa yeast 15° A Tsukuba City, Ibaraki 1800 3465 This is the first Kiri-Tsukuba in a long time. I found a draft, so I didn't hesitate to drink it. I felt a slight bitterness in the back of my mouth when I first sipped it, but it disappeared as I continued drinking. The taste is soft and gentle, and the acidity is moderate, but it's good once in a while.

1921 2025/6 Takeba Noto Junmai Unfiltered Nama Sake 100% Yamadanishiki from Noto 55 17° 25/1 A+ Kazuma Shuzo, Noto Town, Ishikawa 1800 3960 The wine has a slight brown lees and looks very tasty. When opened, it has a rich umami that does not disappoint. It has a rich flavor that does not disappoint when you open the bottle. Some of the sake that I have liked for a long time are no longer made or no longer available, but I appreciate the fact that it still has the same taste and expression.

1920 2025/6 TANI-IZUMI Junmai Nama-no-Harazake 58% 15° 25/3 A+ Tsuruno Shuzo Brewery, Noto-cho, Ishikawa (Manufactured by Yoshida Shuzoten, Hakusan City) 1800 3740 This sake was brewed at a brewery in Tedorigawa by Taniizumi, whose brewery was completely destroyed in the earthquake. It is a little sweet, but the acidity is just right, so it does not linger even after continued drinking, and the mellow flavor can be enjoyed all the way through. It must be difficult to rebuild the brewery, but it is nice to be able to drink good sake like this.
