I finally opened a bottle of Kaiun that I had bought at the end of the year!
There was still some gas in the bottle, and you could tell it was freshly squeezed by the bubbles in the glass. The aroma of grapes fills the mouth, and the umami and spiciness rush in. It is a junmai, unfiltered sake, so it is full of umami. The last part of the bottle has a bitter taste and a beautiful finish. The alcohol content is 17 degrees, which makes it a very pleasant drink.
It was a Kaichu sake that is sure to be a great sake this year as well 🥰.
