Mimurosugi木桶菩提酛 山田錦
酔nosuke
The first Mimurosugi in a long time is an unfiltered, unpasteurized, unblended orikara sake made from Bodai-Hashidashi Yamada-Nishiki in a wooden vat.
When the bottle is opened, gas is released and the top clear liquid with a little bit of orikura that had accumulated at the bottom of the bottle is served first.
In addition to the clear sweetness without any clinginess, there is the aroma of wooden vats in the distance. However, the aroma of the wooden vat is very slight and does not interfere with the flavor.
When you mix the orikiri well, the sweetness is reduced, and a bitterness that was not present in the supernatant comes out a little.
The sweetness of the sake is controlled and a bit of bitterness that was not present in the supernatant is released when the oriki is mixed well.
