A total of four varieties named "Prototype" in the "KANKENBAI" series. This series pursues a fresh taste while still being fire-aged.
M" is brewed using "Meiri type yeast".
Akari yeast? I looked it up, and it seems to be the same yeast used in Jyushiyo. Sorry if I'm wrong...
This one has an impressive freshness and sharp aftertaste, perfect as a food sake 🥰.
On a different note, I drink a four-pack bottle very slowly, so it takes me about a week to finish it. I like it best on the second day after opening the bottle, and after a week I still feel the taste deteriorating 😢.
When I was having this problem, I was looking on the internet and found a great product ⁉️ VacuVan that creates a vacuum inside the bottle!
I tried using it and...oh! It keeps the taste of the second day forever 😳 Good thing I guess!
