It was very mature and I have to admit, I didn't like the taste of it. However, when I paired it with food, it was a huge transformation. When I paired it with a fish dish, the fresh and faintly sweet taste became strong and the fishy smell of the fish disappeared. The taste of fish and the smell of fish disappeared.
I would like to try this with other dishes again, but it's a shame that it's a project and not widely available. Sake is a once-in-a-lifetime experience.

According to the shopkeeper, it's not an Akita sake. Akita sake is sweet and light, which is the exact opposite of what you would expect from an Akita.
The flavor of this sake hits you right away. The rice flavor and sweetness coexist, but the aftertaste is not harsh. It has 17% alcohol content because it is an unpasteurized sake, so I drank it easily. But it is an unprocessed sake, so it has 17% alcohol content.
