The palate is crisp and dry, with a rice-flavored finish. There didn't seem to be any sour or fruity flavors. The taste didn't change significantly on the second day, and it was a beautiful, easy to drink sake.
My favorite brewery, Hakuryu Shuzo's freshly squeezed, unpasteurized sake.
The brewery delivered a new unfiltered, freshly squeezed sake to us on 11/12.
The taste was more refreshing and dry than usual. There was no miscellaneous taste or alcohol, it had a sweetness of rice in the dry taste and went perfectly with Japanese food😄.
I bought some other new sake with them and I'm really looking forward to it 👏.

I was looking forward to trying their Junmai-shu, which can be served either cold or warm. It goes well with flavorful food, and the cold one has a watery taste with a slight sour aftertaste that is unique to Japanese sake. As soon as it's warmed up, it has a deep, sour taste that only a traditional sake can have. I prefer this sake cold.

Hououmida's first Shibori wine is a new kind of wine.
This is the third kind I've tasted since I got to know Hououmida, and they are all delicious😍
Again, it's fresh and mild with no messiness. The message from the brewery doesn't give it that much sweetness or fruity like white grapes or lychee, and I don't think it would be okay for those who don't like sweetness😌.

They have incorporated malolactic fermentation, which is utilized in wine brewing, into their sake.
The first day was slightly carbonated and fruity. It goes well with western food such as nuts and cured ham, and was a shame to have it warmed up.
On the second day, the slight carbonation was slightly less and the fruity and mellow taste became stronger, making it much easier to drink than the first day.
This sake is said to contain an acid called Onshisan, which is delicious even when warmed up, and can be enjoyed at various temperatures. I wish it had been warmed up on the second day.
