The metallic label is cool! Although it is unfiltered, unfiltered, raw sake, it is relatively low in alcohol content at 15 degrees, making it easy to drink 😄. Chiebijin" has an image of being deliciously sweet, but this one, as shown on the pop-up in the store, has a moderate sweetness. The gasiness and the acidity that comes in the aftertaste are well-balanced, which may be the reason. Perhaps it is because I have a preconceived notion that it is brewed with Omachi rice, but the umami of the rice is well blended and full-bodied, giving it a special feeling!

I found this at a 7-Eleven on the way home from work and got it! This one seems to be a famous sake from Shimane that is exported to countries all over the world 🍶. The taste is smooth and mineral with a slight tingling sensation afterwards. I guess it's a raw sake with an elegant taste suitable for a meal 👌The aroma has a nice fruity feel to it 👌It seems to go especially well with fish dishes.

The blue bottle is very refreshing and evokes the image of summer. It is a summer sake brewed by the only sake brewery in Shonan, which is understandable 😀. It has a calm aroma and flavor, but is light at a low alcohol content of 14 degrees Celsius, and is easy to drink, with a sourness that cuts through without any cloying taste!

Sake is the best for venting your anger. I see...interesting name! It tastes dry, but you can taste the gentle sweetness and umami of the rice, and it is rich in flavor. It is refreshing, so I think it is suitable as a mid-meal drink. Tonight we had it with vinegared melon.

Purchased an Aeon limited edition. It is a Junmai Daiginjo made from 50% polished Yamadanishiki from Hyogo Prefecture. It was packaged in a white box and priced at about 1,500 yen including tax, which was very reasonable! The sweetness and weak acidity go down smoothly, with a gorgeous, mellow finish. If I had my way, I would prefer it to cut through a bit more quickly, but the ginjo aroma is elegant, and combined with the modern-leaning drinkability, this is a perfect example of perfection 😁. I had it with hamachi sashimi😄.

I thought it was "Tempu", but it seems to be read as "Tembu". The name of the sake is quite difficult to read. As described on the official website, "It expresses a seamless finish where sweetness, spiciness, acidity, bitterness, and astringency each come together in harmony." It is a food sake with a clean finish with a sense of complexity: ☺️ The new series was launched in 2020 on the advice of Jyushiyo's creator, Mr. Takagi, and with its fruity apple-like aroma, slight effervescence that makes it easy to drink, and well-balanced flavor, it really makes for a smooth and easy drinking experience!

It is a sake with a lot of time and effort put into the five-stage brewing process, but the price is reasonable 😄. The aroma is mild, but the high alcohol content of 19 degrees Celsius, which is the original sake from the brewery, gives it a strong impact on the palate. However, you will get used to it as you drink it. On the other hand, perhaps because it is made with soft water, it is a local sake that is not dry and light, but rather has a mellow, moist flavor that keeps you from getting tired of drinking it. It is said to go well with rich, thickly flavored mackerel simmered in miso and grilled chicken. The pale blue bottle is very fresh and summery!

It is said to be Iki's only sake that has been revived after 30 years. It is said to be the only sake from Iki that has been revived after 30 years. It has a refreshing pineapple-like aroma and a clean, crisp taste, with a fizzy, acidic flavor that makes it very easy to drink. It seems to go especially well with dishes with a sour taste, such as pickled horse mackerel. The summery bottle design was a hit with me (^_^.)

Sake from a sake brewery in the northern part of the prefecture, located in the famous production area of Hachitan-Nishiki, Hiroshima's representative sake rice. The brewery has been working on it since the rice was first produced. The name of the sake is "Miwa Sakura" instead of "Miwa Zakura," which I had been misreading for a long time. It is said to be dry, but the quality of the sake is relatively soft. It has a nice sharp aftertaste and is easy to drink. It is quite my favorite 😋. I had it cold, but I think it can also be served warm.

It is a daiginjo-shu brewed with yeast extracted from apple peels, and this series was once an Imperial New Year's sake. There are three types of Daiginjo-shu, from the most expensive to the least expensive: black box, red box, and white box (the black and red boxes are too expensive for me to afford). The cool and refreshing aroma of the white box was very refreshing and easy to drink, with the umami of the rice intertwined with the gentle acidity produced by the apple yeast! The black and red boxes must be even better.

I have wanted to try this sake for a long time. It is a junmai sake brewed with 60% polished rice from Iwate Prefecture's Ginga Ginga. It has a well-balanced aroma with a hint of sweet fruitiness, umami of rice, and moderate acidity, and is easy to drink with a meal because it has a little gas and cuts cleanly.

Omachi rice, which is representative of Okayama, is used. It has a slightly fruity aroma and is a slightly dry sake with both umami and sharpness, making it easy to drink and suitable as a mid-meal drink. We enjoyed it with meat and potatoes and pickled horse mackerel Nanbanzuke. ☺️ The origin of the name is that it was a sake offered to the Mimasaka Katsuyama clan. I learned a lot about it.

This local sake was recently introduced in a local newspaper and was served to the leaders at last year's G7 summit. Brewed with rose yeast from "Mr. Lincoln" with the cooperation of Fukuyama University, we were curious to know what it tasted like, so we bought it as soon as we got the information that it was on the store shelves 😊. It's a gorgeous sake with a floral, subtle aroma, but the overall atmosphere is similar to that of a white wine. The mouthfeel is gentle, with just the right amount of acidity and a subtle aftertaste. Very easy to drink! I felt 😄. This sake has been selected as the welcome drink for the World Rose Conference to be held in Fukuyama City next year.

At the liquor store where I sometimes stop by, I found a four-pack of freshly-arrived Tasake. Of the five bottles in stock, I bought one without hesitation. Should I have bought another bottle? I regretted it a little. It has a light fruity aroma, full flavor, refreshing acidity, and a hint of bitterness that are well balanced. We paired it with gyoza (Chinese dumplings), and the oiliness of the dumplings was easily washed away. The sharpness of the aftertaste is outstanding!

It was the only sake on the menu at the neighborhood yakiniku restaurant where I went with my family, so I ordered it cold. First impression is that it has a sweet taste on the palate. Other than that, it is a well-balanced type of sake with no particular peculiarities, and it is easy to drink. I think it would go well with strong-flavored dishes such as yakiniku (grilled meat).

Purchased because of the spring-inspired label design. The moderate cloudiness and a hint of ori (ori) give it a springtime sake feel. The cherry blossoms have fallen, though. As the light cloudy appearance suggests, the overall flavor is fresh and sweet, with a lingering acidity that gives the sake a crisp aftertaste. Brewed with Hachitan-Nishiki from Hiroshima Prefecture, it is a cohesive 🍶 that fits the "Kasumi Sake" moniker perfectly, and is very tasty.

This sake is a reconstruction support sake from a Noto sake brewery. It is a blend of miraculously leftover Noto Hatsusakura Honjozo and Tengumai, a sake with a rich flavor and a clear aftertaste that leans toward the classic style. We sincerely hope for the recovery of Noto's sake breweries, as the disaster area is also a region where sake brewing is flourishing.

The name of the sake was given with the hope of becoming the best sake brewer in Japan. It is unfiltered, so the mouthfeel is a bit impactful, but the overall fruity feeling, the umami of the rice, and the acidity that comes later are well balanced, so it can be served as a mealtime sake, or on its own, it is delicious enough 🍶. It is reasonably priced and a local sake that can be drunk casually and without restraint 😁.
