This 100% Hiroshima sake is brewed with Hiroshima Momiji yeast, a cross between Hiroshima Ginjo yeast (13BY), which is also a Hiroshima original yeast with a gentle flavor and strong fermentation power, and Hiroshima No. 21 yeast. It has a fruity and gorgeous heady aroma, and is dry despite its fragrance.

A revived sake from Iki Island, Nagasaki, Japan; it was dormant from 1990 to 2017, but was revived in 2018. Slightly fruity and sweet, with a fullness from the top to the middle, and a soft, persistent finish that fades away quickly. It is one of my favorites among the recent ones.

Sparkling rice wine. It tastes like wine, but with a strong rice flavor.
The sweetness of the rice aroma spreads with the carbonation, and the umami flavor remains a little while it fades away with the carbonation.

Active nama-shu. The shwashiness is irresistible, and the yogurt-like acidity accentuates the freshness and crispness of the raw sake. Great for summer sake. But it's not just that, it's also estery, with a hint of fullness in the second half.

Upright aroma is gorgeous. Pineapple-like esters. No gassiness on the palate. Dryer than expected.
The ginjo aroma is solid and a bit unusual.

The Shiki series expresses the seasons with the same rice and the same rice polishing ratio. It is an unfiltered, unfiltered, single shot fire-refining sake.
It has a refreshing taste that is perfect for summer. It is dry but more gorgeous than expected with a touch of sweetness. The acidity is good.

Why is Saga sake so good? Junmai sake with excellent rice fullness. This body goes well with fatty mackerel. Slightly sweet and robust.

Outstanding clarity and the umami of rice that is typical of junmai sake spreads on the palate. It is round and full, but also has a refreshing summery flavor. This is my favorite summer sake so far. The label is also refreshing.
Shichida is the best.
