Akita's famous sake. The brewery has a long history, founded in Genroku era. It has a gassy feeling. We chose this sake at the suggestion of the liquor store as an accompaniment for the end of the year. It has a gorgeous aroma and is juicy. Scallops from Abashiri with salt and olive oil. Satisfying.

Iki Island's only sake brewery, famous for its chingu. sake making has been revived since 2018. According to the people at the sake counter, the toji has experience training at Jyushiyo. Anyway, the gorgeous aroma is amazing. Bliss while watching the fireplace at an acquaintance's house.

Wakayama's famous sake. The summer version of Kido. It is light and easy to drink. The cool label is very nice. It is served with Yude peanuts from Chiba. Heiwa Shuzo is a model brewery where the fourth generation succeeded in branding Kido. The price is reasonable and good.

Rich and polyacid. This sake is made from rice without pesticides and chemical fertilizers. This sake brewery is located in Isumi City, Chiba Prefecture, the site of the exciting Olympic surfing event. Normally brewed at 7-8 degrees Celsius with the addition of lactic acid for brewing, it is brewed at a high temperature of 55 degrees Celsius with live lactic acid bacteria. In the post-war era of mass-produced sake, the brewery did not rely on preservatives, and its unique method of brewing sake is gentle on the body.

Date Seven (Katsuyama, Suminoe, Hakurakusei, Haginotsuru, Yamawa, Miyasankanbai, Koganezawa) made in seven different breweries over seven years. This is the final year of the project, which rotates every year, with the leader brewery releasing a bottle on Tanabata. This is the last year of the project. I was very pleased with the oysters.

Natsukoshi room temperature aged unfiltered unpasteurized sake! All topped off with a slight aged color. The alcohol level is 20-21%, so it will give you a big kick. It goes well with darker flavors such as grilled shrimp with salt. Personally, I liked it just fine on the rocks, slightly diluted.

This is a special sake that the brewer buys from the brewery and gives it an original label. Not only is it delicious, but it also has a nice original feel, including the mouth of the bottle. It is called "Tank-kumi" because it is drawn directly from the tank.
