Another bottle of sake, this time from Gifu Prefecture.
This is a cloudy sake from Kaba Sake Brewery in Furukawa, Hida City, Gifu Prefecture.
We recently visited the brewery. Purchased new sake.
This was purchased at a supermarket in Takayama City.
The aroma is like doburoku, a sweet sake with the sweetness of rice.
The supernatant has a weak acidity and a rich rice sweetness.
When combined with the muddiness, the umami flavor is added and the richness increases.
Misogi thinks that this richness is good for doburoku.
There was a kind of product exhibition in Minami-Osawa,
I bought it there.
Alcohol 17%.
Polishing ratio 60
It seems to be a limited edition product and is not usually available for purchase.
It is dry, but the first sip has a slight sweetness from the rice and a long aftertaste.
A limited edition sake. When you put it in your mouth, you can feel the acidity, but it soon disappears and gradually changes.
Is the Yamahai feeling weak?
I couldn't understand the "cheese-like flavor" described on the back of the bottle as a beginner.
There are not many reviews of this sake, so I would like to know what other people think of it 🧐.
It starts with a refreshing aroma, and the full flavor of umami, sweetness and richness can be tasted. It is my favorite to drink it chilled and crisp.

Founded in the first year of Hoei era
The name is derived from "Shiramayumi", a Hida-hanbun pillow talk.
The 24th sake brewery in Gifu Prefecture.
The main brand of Kaba Sake Brewery in Furukawa, Hida City.
Purchased at the brewery.
The ginjo aroma is strong, and the lees appear to be floating and hazy.
In the mouth, there is a bitter taste from the shwashiness, and then the umami and sweetness spread out.
The aftertaste is clean and dry, so you can't help but drink more and more.
