This sake is made from rice without pesticides and chemical fertilizers. This sake brewery is located in Isumi City, Chiba Prefecture, the site of the exciting Olympic surfing event. Normally brewed at 7-8 degrees Celsius with the addition of lactic acid for brewing, it is brewed at a high temperature of 55 degrees Celsius with live lactic acid bacteria. In the post-war era of mass-produced sake, the brewery did not rely on preservatives, and its unique method of brewing sake is gentle on the body.
