The bottle has a malted rice aroma.
When poured, it is slightly carbonated.
In the mouth it has a sourness like strawberries, sweetness from the rice malt, a slight wild woody aroma and bitterness, and an elegant sweetness that lingers on the tongue.
When it is cold, the acidity is noticeable, but when it warms up a little, the sweetness and umami opens up and it is again delicious.
I think it is similar to the Sansudo I drank the other day, but this one seems more refined and elegant. Also, is the koji taste a little stronger?
In any case, it is delicious.
I don't know when I will encounter it again.

Hana Yuu 🌸 that I happened to come across.
The aroma is good old fashioned (about 15 years old?). Daiginjo-style ginjo aroma.
The taste is clear and sweet with no gas, and the sweetness is thicker and mellower than apple or something like that. The middle to the latter half of the brewing process, the bitterness and umami follow each other. Perhaps it is because it is fire-roasted, but the second and subsequent sips are not too spectacular, and it seems to fit in well with the meal.
It has a good balance when drinking with horse mackerel, meat and potatoes, fried bitter gourd, and any of the other dishes. It's a great balance.
After the second day, the sweetness increases a little. The aroma when you drink it is still wonderful, and the umami and bitterness are just right, so you can drink it by itself forever 😌.

This is the first rendezvous I've had at Kouei Chrysanthemum.
The label is cute😍.
I thought it had no gas, but it had a gentle gassy feeling. Then, the nutty flavors I like, like a bed of Koei Kiku Ikubou, with a gentle sweetness, rice flavor, and a square acidity. Low alcohol content, which is great for summer.

The aroma is sweet fruit, like ripe bananas or evening melon? The taste is also the sweetness I was looking for, slight gas, moderate acidity, accented by bitterness after about 5 seconds of delay. It has a thick sweetness, but it is easy to drink because of the alcohol content of 13%.
You can safely open a bottle of Mimuro Cedar when you want to drink sweet and juicy. ❗️

When I opened it, I smelled the aroma of wine 🍷 I wondered if it was a white wine type. I thought it might be a white wine, but it was more like brandy. It was dry, with almost no sweetness.
It looks quite strong 💪 The label says it is 18 degrees Celsius. I see 🧐I wonder if it can be heated in winter? The only other sake with a similar taste that I can recall is a sake I had about 10 years ago from Kosasaya Chiketsuru. I bought that one for heating sake in the winter. It was so long ago that I can no longer rely on anything!

The aroma is not so strong. It smells like a green apple that has not fully ripened.
When you put it in your mouth, you feel green apple + sweetness. The first time you taste it, you will be surprised by the sweetness of the rice cake and the bitterness of the rice cake. The next cup will probably be totally different (in a good way).
If you ask me if it is cool, I think it is a little sweet for summer (I want a little more sourness), but that is my personal choice.
When it warms up a bit to about 5-10 degrees Celsius, the fullness and gorgeousness bring the whole thing together and it's good luck.

It is beautifully delicious. It was like when I first tasted Gunma Meigetsu (apple), and then the sweetness and deliciousness followed in the latter half. After the sake disappears from the mouth, the lingering taste is delicious. This area may have something in common with Takasago, which I drank at home the other day. When drunk on its own, it is thick, but it will settle down on its own to a perfect balance depending on the meal. ☺️
