Tasake Tokujun and Nabeshima Tokujun are my standard sake for good balance.
This was the first time I drank them outside of the house, and they were definitely good, with the various elements harmonizing without interfering with each other 😊.

After the standing drink, my senior invited me to go to a restaurant he liked while we were walking around.
It was a classy place with a nice selection of drinks 😊.

This summer, I had more opportunities to drink dry or umami sake than usual, and my wife, who loves sweet and juicy sake with gas, missed me.
So, we tried this one for the first time.
Yamada-Nishiki and No. 9 yeast.
When the bottle was opened, it had the expected ginjo aroma. Poured into a glass, it is clear and gassy😊And the taste is sweet as expected❤️ sweet bitter juicy? There is almost no acidity, it's like there is a good amount of rice bitterness laying in the background of the juicy sweetness. It is delicious. Our fridge is 0°C, so it's better if it warms up a bit to let the sweetness, flavor, and gas rise up 😊 delicious!

A friend of my mom's bought this for me as a souvenir from Wakayama.
It was my first time to try Kurogyu.
It has a slight aroma and a slightly amber color.
When you drink it, it has an umami taste, a firm rice flavor with an acidity that is not too assertive, and a slightly spicy taste when it goes down your throat.
It is better to drink with a meal than by itself 😊.
It's better when it's slightly warmed up than when it's fresh out of the fridge, as it's mellower and more umami.

It is wrapped in a kind of fruit net and taped at the bottom, so you can tell it was bought at Miyajima 😊 Even if it is the same sake, there is something reassuring about sake from a store that manages it with love.

The aroma is sweet with a hint of Nagano. It's not like fruit, but I'm sorry I don't have the vocabulary for that.
When you drink it, it has a beautiful acidity and umami, and if I were to describe it in color, it would be yellow-green or fluorescent. It has a good balance with the sweetness of the aroma. The umami spreads further, and then it ends with bitterness. It leaves a nice aroma on the tongue. Delicious. ❗️

The taste is a good combination of red wine and sake. The aroma and acidity are wine-like, while the mild sweetness and umami of the rice is sake-like.

The aroma isn't very strong, but when you take a sip, the ginjo aroma is wafting. It is a bit melon-like?
Thickness on the tongue. Beautiful sweetness, acidity in the middle, spiciness and light bitterness in the second half, and sharpness.
The sweetness may be that of Aizan. The thickening is rich, but the sharpness in the second half invites you to take another sip.
It's like a Daiginjo from Hiroshima that I haven't had in a long time.

Even with our 0 degree cellar, the lid popped with a shpon when I opened the bottle 😊The contents are fine.
When I poured it, it was very gassy as expected. The aroma is slightly fruity like lychee or something.
When you drink it, it's not as sweet as I expected, a bit late and softly ginjo aroma. When the oli is mixed in, it has a fruity or rather sweet sake flavor without sweetness. The acidity is not too assertive, but has a moderate bitterness, and while it may seem dry and smooth, the hints and acidity are well integrated into the whole.
