Well, this time I brought home for the first time Takashi's Tsukasa🟢, a new challenge for us, although we are a dobrokku family when it comes to summer muddiness.
When I open the bottle, it's just a pusher. The aroma is koji. When you put it in your mouth, you get a gentle gas, koji & 🍡 a taste like the white stuff of dango. There is also a yogurt taste in the middle and latter half of the bottle. The sweetness is quite strong. The aftertaste is clean 😊Mom says it's delicious 😋.
In contrast to the Senkou Beetle 🍋 I've been drinking lately 🎯.
When it gets warm, the sweetness makes it a bit potpourri, so I prefer to drink it well chilled.

The first sip is a whiff of sweetness.
As the temperature rises a bit from fresh out of the cellar and as you drink more, you can more properly taste the ginjo aroma and umami when it swells in your mouth, and the bitterness in the second half.
The sweetness is balanced and harmonized with various elements scattered in the darker sweetness, but the main thing is the mellowness, which I am sure is Omachi's character. I have a stupid tongue.
I think it is sweeter and fuller than the hi-ire I drank in February. I like both.

This is my first Takasago ✨.
I had read in various reviews that it was dry and suitable for a food sake, but when I opened the bottle, I was pleasantly surprised by the ginjo aroma. It's much more fruity than ‼️ imagined 🍎🥝and a little bit gassy because it's just opened. It is a bit gassy because it is freshly opened, but from one moment to the next, it is filled with a cascade of acidity that is like a fresh yeast yeast strain. As if dancing on top of it, there is the umami and astringency of rice from the mid-palate, then bitterness on the tongue in the second half, and finally the umami and sweetness of the rice lingering in the aftertaste.
And this is all so wonderfully balanced in such a short time that it makes you want to drink the next one again💦.

I thought it didn't have much of an aroma, but when I drank it, I knew it was Mimuro Sugi 😊.
Like a ramune with a bit of vanilla. Slightly slightly carbonated. Fluffy sweetness spreads, maybe a little dry from the middle to the second half. Slightly dry in the middle and second half.
No matter which Mimuro Cedar you drink, you'll never go wrong ✨.

I thought it reminded me of YK35, a 35% polished Yamada-Nishiki. I don't remember exactly what I drank, but I do remember that it was quite a tasty sake, a little more modern than I expected, but at the same time mellow and calm. I think there are some good sake from Okayama, too.

I was surprised to be able to get a bottle of Jyushiyo 😵.
I often see comments that it is sweet, so I had imagined it to be sweet, but the sweetness is elegant and not too assertive, and the dignified and contoured acidity and umami are beautifully balanced and easily quenched 🟢.
This is certainly delicious. It was delicious no matter how many glasses I drank to make sure 😊.

I saw this Tazake at a liquor store with a label that popped up a lot 😵 but it was still there the next week. Personally, I like the label with a big "Tasake" written on it because it makes me feel at home in the cellar.
The taste was calm among the sake of the day and stable enough to go with a meal 😊.
I've always thought that regular sakewa drinkers wouldn't dare to buy Kubota, but this one came out today and I was betrayed, in a good way 😵.

This is the second Shinsei I had today.
It is a little sweeter and more astringent than the No.6 X-type I had earlier. When you want to savor it slowly, this one might be better 😊 Either way, it's delicious 😋.
