I asked for another pairing because I got Shinsei No.6 at the last pairing, and I got Shinsei with ayu fish! I looked it up and it was 20,000 😅 per bottle. It is similar to No.6, but a bit richer, and goes great with French cuisine!

今流行りの、農口直彦研究所。山廃仕込み復活の立役者とか。新政とはまた違って、白ワイン寄りというより日本酒らしいお酒だけど、程よい酸味と甘みで飲みやすい。

I like Hirano's sake choice! Sake degree, 10 degrees of deliciousness and spiciness. He said that the sake degree depends on the acidity of the sake. Just like coffee...lol! I liked this sake because it was well-balanced.
