Banshu Aiyama, a junmai daiginjo series brewed with representative sake rice from the four prefectures of the Seto Inland Sea, is released for the first time in two years, using the same rice polishing and yeast! The second batch will be a Junmai Daiginjo brewed with the same rice polishing (50%) and yeast (1401). The second product is Aizan from Hyogo Prefecture. While bringing out the sweetness typical of Aizan, the change in yeast has resulted in a smart balance.

I had some time before a drinking party with my college classmates, so I dropped by Hasegawa Sake Shop at Tokyo Station and found a bottle of Genzai that I wanted to try, so I bought it. I had been curious about it since it appeared briefly in "Zujyu Tabi". I picked up a bottle of Kaygetsu for the same reason, and it was delicious, and I am sure this one must be good, too.
Personally, I found it delicious with a fruity taste that reminded me of the excitement I felt when I drank 寫楽やabe. It's insanely delicious. I didn't expect it to be this good (sorry 😖). If I see a dashi raw as good as this in a fire-roasted version, I'll definitely buy it. If I see it, I mean, even if I have to track it down, I want to buy it.

Congratulations to Mashidaya for starting to carry it 😊I checked and found that there are only a few distributors, but that's how it should be with local sake...anyway, by all means, get it 🥳.
It has a thick texture, sweet and refreshing, and a little fizzy.
It contains a lot of air, and the bubbles crackle and pop in the mouth.
The texture of the sake rice also remained faintly present, making for an enjoyable drinking experience.

Mellow aroma derived from grains. The combination of rich sweetness and acidity like plum wine with a firm but elegant effervescence is pleasant.
The second cup is Koei Kiku, which I haven't had in a while. Citrusy and fruity. After a long time, it has a cool, slightly carbonated taste. Delicious. Now that I've reset myself, I'm going home.
I'll be working late today and will return from Tokyo Station. I wondered if they were still doing it. I looked and found it was still open. The first cup was a Hiragana no Gonotsuki. It is light and refreshing, with a nice bitter aftertaste. It's a nice refreshing sigh of relief.

When he gulped down the sake, the word "Celebration" was written at the bottom of the sake cup! It seems that the celebration of Mitsuo Yamakawa's 10th anniversary will continue.
