My wife selected this sake (we told the waiter what we liked and he picked it for us), which was also our first sake.

I was nervous when I opened the bottle because of the warning label, but it was ok😅.
As a side note, the fact that it is made from "glutinous rice" reminded me of my very local Yanagisawa Sake Brewery.
When I opened the bottle, it had a nice aroma.
I poured only the top clear liquid in the first glass.
It has a gentle sweetness, like a pre-ripe melon. The slight gassiness combined with the refreshing sweetness made for a very tasty sake.
After the second glass, I slowly stirred the lees, but there was no change in taste.
It is a type of sake that I have never encountered before, but it is very nice.
On the second day, the taste changed drastically, with more sweetness (less gaseous) and a surge of umami, and a slight bitterness that was not noticeable on the first day appeared, transforming it into a deeply flavored sake.
Considering the purchase price, I felt the cost performance was quite good.
I would like to buy this sake if I could repeat the purchase.
The aroma is subdued yet slightly sweet, and the mouthfeel is sweet, with a hint of graininess and sourness. The sweetness lingers in the aftertaste.

Summer carp is a limited edition product available only during the summer months. It is made with high-quality sake rice (Hitogokochi) grown under contract in Iizuna-machi, a town next to the brewery, and glutinous rice produced in Nagano Prefecture, and brewed by local people using a yeast developed in Nagano Prefecture. It is a clear, umami-guchi type sake with a cool, refreshing taste. A water purification system using Shindai crystal is used.

The gasiness is quite strong, and as you drink it, the settled oriole gradually dissolves, making it a summery bottle that you can drink all the way through without getting bored.
Be more careful when opening the bottle than when opening sparkling wine!
First of all, the aroma stands out well, pear-like. The mouthfeel is very refreshing, with just a touch of acidity and an aftertaste. The taste is very complex. The taste is quite strong, so it went well with harissa-flavored grilled dumplings.
