永久の輝 古酒 1993 岡山ヴィンテージ Eikyuu no Kagayaki Koshu 1993 Okayama Vintage well-cured Sake 精米歩合 不明 アルコール 18% Seimaibuai undisclosed Alcohol 18% Room temperature 22°C Smells like dried shiitake Wow! First sip hits with waves of flavors… Soy sauce Chocolate Caramel Butterscotch Coffee Reminds me of Sherry but even better! Dominated the flavor of 帆立刺身 Possibly too strong for マグロ、シャケ あん肝 味付け玉といくら paired better with this full flavored sake. Definitely approach this sake like a Sherry or Port.

With dessert, it was an acceptable match with まんじゅう(アーモンド、 栗、 梅) Almond brought out some bitterness
