Ms. Wadaya. It is a sake with the sourness and umami of a "za-sake" feeling. It is a sake that is well worth drinking. We enjoyed it with grilled and soaked chicken and fresh onions and bacon soup. Afterward, we sipped it while eating salt rice crackers. It has a sour and umami taste with a hint of sweetness. It is a strong sake, but for some reason I want to drink it again. The price is reasonable and I would like to repeat it again. It seems to go well with marinated fish and other strong flavored side dishes.

Wakamatsuya Junmai Ginjo version of Kubota's Daiginjo Yobitomo I bought it because it seems to be a new release. It has a mild aroma and a banana-like sweetness. It has little sweetness, a dry taste, and a sharp aftertaste. It is a delicious sake that goes well with meals. We enjoyed it with grilled herring, stir-fried pork and onions, and soup. It is an easy-drinking sake that tastes great with fish. It has few peculiarities and is easy to drink.

Purchased with Unzan at the Shinetsu-Hokuriku product exhibition at Tobu Ikebukuro Department Store. More cloudy. It has a strong body. It is a crisp nigori sake with little sweetness. It is a nigori sake that goes well with meals. We enjoyed it with fried mackerel with sweet vinegar sauce and beef tongue salad. I think the level of Nagano Prefecture's sake is quite high. I would like to visit Kami-suwa sake brewery again.

Shinetsu-Hokuriku Product Exhibition at Tobu Department Store Purchased at Yoshinoya's sales booth in Nishinomon This is the first time I heard of this brand. According to the store clerk, it is a local brand. There is not much aroma, and the sweetness and umami are very strong. A little sourness and a little bit of miscellaneous taste. The aftertaste is soft. I did not know this brand, but it is a delicious sake. We enjoyed it with yellowtail tataki we got at the same venue. Junmai Nama-zake with a 50% rice polishing ratio. A good value.

Fukuhara Sake Shop's hanpukai Honey-like sweetness and citric acid lemon-like acidity. Honey lemon with alcohol. It has a strong sweetness, so it might go well with cheesecake for dessert. It might have been too much to match it with the usual dinner of yakiniku, boiled vegetables, and bean-curd vermicelli. The grilled meat was served with salt and pepper, so I think it would go well with it. If you want to make it more like a meal, it would be better if it had less sweetness and more alcohol or gas. It is a gentle sweet sake.
