Jyushidai Nakadori Banshu Yamadanishiki Kamimoroshiro
This is my first post in three years. This is a sake I brewed when I went back to my parents-in-law's house.
Just pouring it into a sake cup, the aroma was a gorgeous ginjo aroma. When you take a sip, you will find not sweetness or acidity, but a great umami flavor. The aroma lingered in the nose after drinking, leaving a delicious aftertaste.
Perhaps I am being biased because Jyushiyo is a rare and valuable sake that is not widely distributed in the market and is difficult to obtain, but even my wife, who does not drink sake at all, said it was delicious.
I feel that good sake goes well with any meal, but the tuna tataki without soy sauce and sake was the most delicious.
