Jyushidai Nakadori Banshu Yamadanishiki Kamimoroshiro This is my first post in three years. This is a sake I brewed when I went back to my parents-in-law's house. Just pouring it into a sake cup, the aroma was a gorgeous ginjo aroma. When you take a sip, you will find not sweetness or acidity, but a great umami flavor. The aroma lingered in the nose after drinking, leaving a delicious aftertaste. Perhaps I am being biased because Jyushiyo is a rare and valuable sake that is not widely distributed in the market and is difficult to obtain, but even my wife, who does not drink sake at all, said it was delicious. I feel that good sake goes well with any meal, but the tuna tataki without soy sauce and sake was the most delicious.

Sake made with only 99% koji from Tsuchida Shuzo in Gunma Prefecture! I was shocked the moment I drank it warmed up after drinking beer in the hot season. The unique molasses-like sweetness combined with the refreshing acidity afterwards is delicious! It was really surprisingly sweet and refreshing, with a nice lingering finish. When I drank it with liver pate and buckets, the flavors were rich together, but I thought the sweetness of the koji and the egginess of the liver matched perfectly. You can also drink it on its own as a sweet, refreshing summer sake!

I gave some Ippomi to my father-in-law on Father's Day, and even though it was a gift, he enjoyed it with me. Ippomi is the sake that made me fall in love with sake, and it is the sake that I first learned about when I was transferred to Fukushima Prefecture to help with reconstruction after the earthquake. I remember being impressed by the attitude of Mr. Kensei Yanai, who brews Ippomi and takes pride in his hometown. The sake is made from 100% Miyamanishiki, the best rice for sake brewing, from Ozawa Farm in Furudono-machi, Fukushima Prefecture, polished to 40%, and is Junmai Daiginjo Genshu without water. The label was beautiful and the box was stylish, but I forgot to take a picture💦. This time, Ippomi Urabayagi is a summer sake with a low alcohol content of 14% and an aroma like green leaves that makes you feel early summer! The sake has a refreshing taste with less sweetness, which is due to the slight bitterness, and the flavor is enhanced when paired with food. I think it would be a great match with tuna!

Hakkaisan Junmai Daiginjo! I was going to open it at the end of last year, but more than half a year has passed since then, so I opened the bottle. I've been familiar with this brand of sake since I was a kid, and it has a great aroma and taste, but even though it's been around for a while, the sweetness is very elegant, and the subtle sweetness really complements the food. The lingering finish was also good, and I felt that this sake is loved by many people over the years because it never gets old! I had a preconceived notion that Niigata sake was light and dry, but the Kamonishiki and Hakkaisan made me realize once again how great Niigata sake is. It was so delicious!

The freshly squeezed aroma of Kamoshiki Sake Brewery's "Yellow Water Immortal" from Niigata Prefecture gives it a tangy, carbonated taste on the tongue! The balance of moderate sweetness and firm acidity is exquisite. Even at 13% alcohol, it has a good balance of flavors and is a wonderful summer sake with a very good mouthfeel.

Finally, a 50 check-in! I opened a bottle of Jikan Yamadanishiki unfiltered raw, a sake I bought in February but saved for my oldest son's first birthday. I'm not sure if you've heard of it or not, but I'm sure you've heard of it. It was a gem of a product that also sinks into the meaning of "Don't get caught up in the past, don't get caught up in the future, just live the present to the fullest"!

Shinsei's "No.6" top-of-the-line model X-Type! The white frosted bottle with pink color scheme is fashionable. It's been a new year and I've been too busy with work to drink sake, so I haven't opened a bottle in a while! The aroma was gorgeous like freshly picked apples, and when you put it in your mouth, you could feel the light carbonation, and the sweetness was similar to sweet white wine, but the acidity made it taste cooler. It is easy to drink because of the low alcohol content, but the lingering taste is so good that it can be drunk all the way to the end. This is the best way to describe it! You can also see that the sake brewery's thoughts are packed into the label information.

This is the completely made-to-order Ottersai Tankoha Kumi that I had reserved. Freshly pressed, unfiltered, raw sake released every March and October! Initially, the product was distributed only to local sake retailers in Yamaguchi Prefecture. Also, the design of the bottle is different from the usual Ottersai, with a white frosted bottle that feels fresh. Opening the bottle is like opening a carbonated lid. When poured into a glass, it has a fresh aroma, a hint of gas in the mouth, a rich flavor, and a crisp acidity. If you use a wine glass or a grappa glass, you can enjoy the aroma more, and I think this sake can be enjoyed as an after-dinner drink!

The first Koei Chrysanthemum Anastasia Green! Anastasia green is a flower of the chrysanthemum family, and the fact that it is linked to the chrysanthemum of the sake brewery is very stylish. The origin of the word "Anastasia" is the ancient Greek word meaning "awakening, revival", so it is a very emotional sake. When you open the bottle and pour it into a glass, it smells like white wine, and when you put it in your mouth, it has a refreshing acidity and sweetness with a round taste. It has a low alcohol content of 13 degrees, so it's easy to drink, and as the temperature rises, the sweet and sour taste increases, making it a gem that you can keep drinking!

Kunigon's silver label has a gorgeous aroma! It has a soft mouthfeel and a clean and beautiful taste. In the second cup, the full flavor of the rice spreads more than in the first cup, and I felt the sharpness of the acidity. As you continue to drink it, the temperature of the sake approaches room temperature, but the lingering sharpness remains the same, so it is a sake that you can continue to drink without interfering with your food. Personally, I think it goes well with cabbage rolls for dinner.

Sharaku Junmai Ginjo Ippatsu Hiirei is a sake that is sold all year round at Miyazumi Meijo. Today marks the 10th anniversary of the Great East Japan Earthquake, and we are proud to open a bottle of Sharaku from Fukushima Prefecture! The aroma is gorgeous and the flavor spreads in the mouth and leaves a clean aftertaste. It has an alcohol content of 16 degrees, but it is easy to drink and is truly a top-ranked shokunshu. From 2013 to 2015, when I was dispatched to Fukushima Prefecture for earthquake reconstruction, I was deeply moved by the fact that this sake still impresses and is loved by many people in and outside of the prefecture. If you drink too much, you can't stain it!

The origin of the brand name "Chouyo Fukumusume", which is a sake produced in Hagi City, Yamaguchi Prefecture, is that at the time of its founding, the brewer's family had a succession of girls, and the name was given in the hope that the children would grow up to be good, happy children. My own daughter celebrated her third birthday, so I opened a bottle in honor of the origin! I imagined it would have a refreshing taste because it is a dry junmai, but it has a little sweetness and you can taste the flavor of the rice. The fresh aroma and the lingering aftertaste made me think that this is a superb food sake. Yamaguchi is home to many delicious sake brands such as Ottersai, Toyo Bijin, Gangi, Tenbi, Kinjaku, but Chouyou Fukumusume was also very tasty!

Organic Naturals <0:nigori> is a sake made with a supernaturally derived yeast mash! It is made from organic Kaminoo rice with a polishing ratio of 90% or higher for both koji rice and kake rice, and is brewed in a wooden vat. The aroma is like vanilla and the taste is creamy and sour with a slight carbonation. The aftertaste is also moderate, and as you continue to drink the chilled sake, the mouthfeel becomes smoother and smoother, and the lactic acid flavor and sweet and sour taste increases, and it goes very well with the same lactic acid fermented pork kimchi!

This is a collaboration between Toyokuni Shuzo in Furudono-machi, Fukushima Prefecture, which brews Ippomi, and Kenan Shuhan, a local wholesaler in Fukushima Prefecture. Above all, the label is simple but very eye-catching and beautiful. When you open the bottle, you will enjoy the fresh and pleasant aroma, the freshness of the raw sake, and the balanced sweetness and umami. It has a more acidic and robust taste than Ippomi. This is a sake that Toyokuni-san helped to develop, and you can feel the high potential of the sake brewing!

Great taste for a cosy sake! The aroma spreads in the mouth and you can feel the sweetness, but the acidity is well balanced and has a clean aftertaste. It has a refreshing and pleasantly gassy taste that goes well with crispy dishes. I was reminded once again that Fukushima Prefecture's sake is truly delicious, even if you look at it in a patronizing way!

Another brand of Jijima, Takasago Junmai Daiginjo Matsukizuru Omachi Ikkamoto Zukuri, is produced by Kiyamasa Shuzo in Mie Prefecture. The rice used is Omachi and the polishing ratio is 45% and the alcohol is 16 degrees. I was excited to buy it at the end of the year, but I finally opened it! The aroma is faintly pear-like and subdued, and when you put it in your mouth, you can feel the strong umami flavor while keeping the sweetness in check. The aftertaste was long, and it wasn't the kind of sake that you could just gulp down. It was the perfect sake for sipping with food (not because it's expensive, but because it's a waste of money).

Isohaman is a winter limited edition. The rice used is special A Yamadanishiki and the polishing ratio is 55% Junmai Ginjo sake! I couldn't get over the excitement of taking out the sake in the aluminum bag. When I opened the bottle, it had a refreshing aroma, and when I put it in my mouth, it had a mellow, sweet taste, but the aftertaste was clean and tight, and I wanted to drink it again. Anyway, it was a well-balanced sake that was versatile enough to go with any meal, including nabe and sashimi, as it had a taste that was easy to match with food!

A drink that will cause a stir. Just like the words, it was a shock! When I took a bite in my mouth, I felt a sense of volume and umami with sweetness after a tangy stimulus on the tip of my tongue. It has a moderate sourness and a clean aftertaste, and I think it goes well with any food with a moderate aftertaste. The label was designed with the Oya stone of the brewery that collapsed in the Great East Japan Earthquake. Morishima's sake expresses their desire to not give in to the earthquake and to continue to throw a stone at themselves. As we approach the tenth anniversary of the Great East Japan Earthquake and the recent aftershocks make us feel uneasy, I was impressed by Morishima's sake and its attitude towards sake brewing.

Flax Cat Spark is the champagne of rice! Grapefruit-like aroma. The fine bubbles are reminiscent of champagne. The taste is sour but sweet, with a light bitterness in the aftertaste, making it a great match for strong-flavored dishes. The alcohol content is low at 12 degrees, so it is refreshingly dry and crisp, and can be drunk lightly.

ORI-ORI ROCK☠️ by Daiichishuzo in Joetsu City, Niigata Prefecture. I failed to open the bottle and the lid flew off and the contents overflowed. Yamama's brew No. 3, a special junmai sake, was bottled after roughly straining the unrefined sake, and the active nigori nama sake was excellent! The raw material used was Gohyakumangoku, which is 60% polished rice. It has a rich and creamy taste in the mouth, with a strong sense of gas and a freshness that makes it pop in the mouth, combined with a sweetness that gives it a new taste sensation. The alcohol content is a little higher than most sake at 17 degrees, but it is easy to drink because of its good mouthfeel, and the three of us drank up a whole bottle in one night!
