Another brand of Jijima, Takasago Junmai Daiginjo Matsukizuru Omachi Ikkamoto Zukuri, is produced by Kiyamasa Shuzo in Mie Prefecture.
The rice used is Omachi and the polishing ratio is 45% and the alcohol is 16 degrees. I was excited to buy it at the end of the year, but I finally opened it!
The aroma is faintly pear-like and subdued, and when you put it in your mouth, you can feel the strong umami flavor while keeping the sweetness in check. The aftertaste was long, and it wasn't the kind of sake that you could just gulp down. It was the perfect sake for sipping with food (not because it's expensive, but because it's a waste of money).
