I bought it because I was attracted by the 80% rice polishing ratio of the raw sake, Kokugon Tefu from Fukushima, and after opening the bottle, it had no characteristics, it was a fresh raw sake with a good sake-like taste, but as the days went by, it became more mellow and different... I realized that this is a great sake that shows its true potential after the second day 😆. The sweet girl is in season right now, and corn is a great accompaniment to sake!

Summer sake from Akabu, an early taste of summer. ☀️ No aroma! The acidity is strong but not too much, and the finish doesn't interfere with the meal while maintaining the basic rice flavor. It is not the usual mellow Akabu, but a unique line...good 😋. Today's entrée was tuna kama and kama-age sakura shrimp, and firefly squid with butter and soy sauce! I'm enjoying this wine by comparing it with Obuse Winery's Sake Erotic.

We stopped by a small sake brewery, Yoro Shuzo, in Yamanashi, and experienced firsthand how the master brewer and his wife, who runs the brewery café, put their heart and soul into raising their sake. ☺️ The sake is only available here 🍶 and I cherish it 🥹. The aroma is rough, but on the palate it's not sweet muscat or lychee...it has a dynamic finish that is rare for sake these days. It also has a nice sharpness 👍It's a food sake that goes well with any meal👌. Today's entrée was firefly squid🦑 stir-fried with butter and sausage, which was initially planned to be a craft beer🍺, so it was a bit awkward, but it held together well. I'm looking forward to changing the flavor tomorrow 😀.

Nagasaki's Hiran, our first try 😄. It has a refreshing champagne-like aftertaste with a slight acidity and nigorigo, and a strong sibilance. It's a sake that would go well with all kinds of food, both Japanese and Western 🍶Today is the second day and it seems to have mellowed since the bottle was opened 😃. Today's entrée was Shizuoka's specialty leaf ginger, ganmonodoki, and horse mackerel marinated in sake lees...I went for a Japanese style 👍.

A stranger from the land of color, a beautiful drink... It exudes freshness as you can imagine 😊. The aroma is subdued, but the moment you take a sip, the sourness spreads and a complex flavor occupies your tongue, with a hint of lychee-like sweet acidity 😀. Today's entrée is seasonal firefly squid stir-fried with butter and soy sauce and tuna teriyaki 🐟. It's a spring-like sake with a sour taste 🍶.

From the sake brewery of Masamune Instrument... first attempt at the Nature Township series 😀. I went in with a fruity image of a musical instrument... but to my surprise, it was something else. The aroma is fruity and makes you think of a musical instrument, but when you put it in your mouth, you get a sibilance and an elegant taste of rice, leaving a slight apple-like fruitiness that quickly fades 😊. Today's entrée is fried chicken and fried burdock root 😀 even with the distinct flavor of the entrée it's not to be outdone! Delicious... 🍶.

The aroma is slightly fruity, and the mouthfeel is a combination of lychee and pear. It may be similar to a white wine... It is a mellow and refreshing sake that quickly cools down while retaining a hint of rice flavor 🍶 Delicious! Today's entrée is tuna and turnip... it's not so subtle 😀. I think cheese or meat type would go well with it 😊.

I was curious to know what it was like...so I bought it and opened it today 😀. It has a mellow aroma, and when you put it in your mouth, you can feel it spread out and feel numb, like it has the best of rice. It doesn't have the sharpness that is characteristic of dry sake, but it's a good thing it doesn't leave any sweetness in your mouth and you can't stop drinking it 😀. I'm drinking it with taiyaki, a golden-bean pancake made with Anno sweet potatoes 🍶. It's surprisingly good 👍

I found this shockingly named sake 🍶 at a liquor store. I bought it and drank it with trepidation😅. The name doesn't give you an idea of how fruity it is. The aroma is just a hint of muscat...no clinging sweetness, it's a gem with a good kick👍. The back of the bottle is convincing👌They seem to be using that Shinmasa brewery's yeast #6😃.

I bought it based on the recommendation of a familiar staff member at the liquor store, who never misses a chance to try it for the first time...moon after the rain! The aroma is gorgeous, but not fruity. It is not sweet in the mouth, but the rice taste is not so much. It leaves a somewhat numb feeling, but has a nice aftertaste👍. Ate with either salmon sashimi or cheese fondue🫕. It's a delicious sake 🍶.

I looked in the fridge for a sake to go with the miso oden... MIKE Oroku🍶. I used to enjoy the super Oroku by age, but I decided to take the high road 😊. The subtle Oroku aroma, the surprisingly mellow spread in the mouth, the slight sibilance, and the fluffy aftertaste are perfect for Japanese food👍. I enjoy it with dried mackerel and sea bream sashimi in addition to oden 😀.

A daiginjo (a kind of sake) given to me by a friend who went back home to Akita. The aroma is subdued, but the mouthfeel is fruity and expansive. As you drink more, the rice flavor remains firm, but the sake is refreshing and does not interfere with food. Today's entrée was fried scallops with butter and pickled herring roe in black soy sauce. I am savoring it while thinking of the heavy snowfall in the Tohoku region 😋.

I received this from my hometown of Shizuoka, Shizuoka Prefecture, on December 12, 2022. It's been waiting in the fridge until the end of the year, and now it's time to open the package... It's just so elegant and delicious 😋! The aroma is good 👍The moment it hits the palate, the flavor is like that of a pineapple and the crispness after spreading on the tongue makes the drinker happy 😃. The entrée was salted squid 🦑, crab terrine and smoked duck, but it did not interfere with the meal 👌. It is the pride of the local area 🍶.

Today is the day the Suruga Bay speciality Sakuraebi fall fishing ban is lifted 😊. I paired the raw Sakuraebi with sake 🍶. After much deliberation, I chose... Jikin! The sweet and mellow taste of the Sakuraebi, the refreshing fruitiness and sharpness of Jigokan, and the slight afterimage of rice on the tongue create an exquisite harmony. We are enjoying the ultimate luxury of pouring Jikin with seasonal sakura shrimps 😀.

Tasake has a fruity impression, but what would it be like with Yamahai? I was curious and bought it 😃. The aroma is not much different from the usual special junmai tasake...in the mouth, there is no fruitiness and the sake feeling spreads, but not unpleasant ❗️. It has a nice sharpness, but it leaves a strong statement and gradually disappears... it's like the sake in Tasake 🍶. The squid was served with salted squid, but it went well with it 😀. Yamahai was new to me, but I think I can go for it.

First time to try Hokkaido sake, on the recommendation of a familiar waiter😃. Is the image of sake? Not at all... It is not fruity but has a great breadth, and the sharpness is so good that it does not interfere with the meal, which is a rare sake 🍶 that can be drunk without any entrée. I finished the four-pack in one day😅. It's a bad boy that you can keep drinking even after the nabe is over 🍶.

I haven't had a Tobiroki from Fukushima in a while...maybe it's because it's freshly opened but it has a nice sharpness👍. No aroma or fruitiness, but just the right amount of rice flavor that fills the mouth and quickly turns into a cool sensation 😃I also like that there is no gassiness 👍Elegant sake 🍶. The simple fried tofu stuffed with natto and cheese and baked is good 🍶. It's going to be a long night😊.

Saga's Nabeshima is an autumn sake that is clearly different from the junmai ginjo-style sake we have had in the past, such as Ura-Nabeshima 🍶. The fruitiness in the mouth is similar, but then the rice comes in with a strong presence in the throat...a unique junmai sake 👍. I enjoyed it with salted squid and salmon sashimi😃. I'm looking forward to the taste change after tomorrow 😃.

It's been a while since I've been to Sairai, and I'm enjoying the refreshing feeling at the end of a day that was surprisingly hot despite being autumn 🍶. On the way to work, I went to Yamazaki butcher store in Gotemba to buy some horse sashimi. Sairai-chan...as soon as you take a sip, the muscat flavor spreads all over your mouth, but the sharpness goes through your nose elegantly and does not leave a sweet taste on your tongue...it was the best sake for a meal that does not disturb the taste of horse sashimi👍 It is a sake that you can drink forever 🍶.

I bought a bottle of Nagano's Toyooka, a very autumnal sake. Toyoka has many mellow sakes, but I wondered what the image of junmai-shu autumn-agari would be like.
