I bought it because I was attracted by the 80% rice polishing ratio of the raw sake, Kokugon Tefu from Fukushima, and after opening the bottle, it had no characteristics, it was a fresh raw sake with a good sake-like taste, but as the days went by, it became more mellow and different...
I realized that this is a great sake that shows its true potential after the second day 😆.

No aroma! The acidity is strong but not too much, and the finish doesn't interfere with the meal while maintaining the basic rice flavor. It is not the usual mellow Akabu, but a unique line...good 😋.
Today's entrée was tuna kama and kama-age sakura shrimp, and firefly squid with butter and soy sauce!
I'm enjoying this wine by comparing it with Obuse Winery's Sake Erotic.
We stopped by a small sake brewery, Yoro Shuzo, in Yamanashi, and experienced firsthand how the master brewer and his wife, who runs the brewery café, put their heart and soul into raising their sake. ☺️

The aroma is rough, but on the palate it's not sweet muscat or lychee...it has a dynamic finish that is rare for sake these days. It also has a nice sharpness 👍It's a food sake that goes well with any meal👌.
Today's entrée was firefly squid🦑 stir-fried with butter and sausage, which was initially planned to be a craft beer🍺, so it was a bit awkward, but it held together well.

The aroma is fruity and makes you think of a musical instrument, but when you put it in your mouth, you get a sibilance and an elegant taste of rice, leaving a slight apple-like fruitiness that quickly fades 😊.

It has a mellow aroma, and when you put it in your mouth, you can feel it spread out and feel numb, like it has the best of rice. It doesn't have the sharpness that is characteristic of dry sake, but it's a good thing it doesn't leave any sweetness in your mouth and you can't stop drinking it 😀.
I'm drinking it with taiyaki, a golden-bean pancake made with Anno sweet potatoes 🍶.

I found this shockingly named sake 🍶 at a liquor store.
I bought it and drank it with trepidation😅.
The name doesn't give you an idea of how fruity it is. The aroma is just a hint of muscat...no clinging sweetness, it's a gem with a good kick👍.
The back of the bottle is convincing👌They seem to be using that Shinmasa brewery's yeast #6😃.

Saga's Nabeshima is an autumn sake that is clearly different from the junmai ginjo-style sake we have had in the past, such as Ura-Nabeshima 🍶.
The fruitiness in the mouth is similar, but then the rice comes in with a strong presence in the throat...a unique junmai sake 👍.

It's been a while since I've been to Sairai, and I'm enjoying the refreshing feeling at the end of a day that was surprisingly hot despite being autumn 🍶.
On the way to work, I went to Yamazaki butcher store in Gotemba to buy some horse sashimi.
Sairai-chan...as soon as you take a sip, the muscat flavor spreads all over your mouth, but the sharpness goes through your nose elegantly and does not leave a sweet taste on your tongue...it was the best sake for a meal that does not disturb the taste of horse sashimi👍
It is a sake that you can drink forever 🍶.
