Sake rice: Aiyama
Rice polishing ratio 40
Moderately sweet and umami on the palate. The lingering aftertaste is also umami with a slight astringency. Delicious. I prefer Aiyama to Yamadanishiki.
In this series, I prefer Sake Mirai, Aiyama, Yamadanishiki, and Kame-no-o in that order.
