This is the second drink ❕🥰. First series of drinks I asked for this one because I was attracted by the umami dry taste. Since this sake is alky, it has a strong alcohol taste, but compared to the previous sake, it has a crisp and punchy impression! The taste is deep and umami, It has a sharp taste that is unique to sake with alcohol. The impression is that it is a sake. Sake with a crisp and clean taste.

In the mood for a drink out today😃. First drink 🍶 at a bar in Kitasenju. It's made from Hitogochiki rice, so it's a bit like Shinshu Kamerei, right? Surprisingly, it has almost no aroma and a clean taste. Hmmm? I don't feel the taste has much depth. It goes down your throat easily, so something is missing. In a sense, it is a dangerous sake that can be drunk like water 🤣. It's surprising how different the same rice can be 👀‼️ ☆☆☆☆

Yamazan is gaining in popularity right now. This sake is from a dormant brewery that has been revived, and we expect it to be popular for its taste❕. So, how does it taste? When I stirred it and poured it into a glass, I got the impression that it was silky and cloudy, or rather, lees were precipitated and it tasted like lees 🙂. Fruity aroma, fresh and gassy 🎵😍🎵. Sweetness is followed by a slight bitterness and sourness, with a fruity green apple flavor that I can see why it's so popular 😃. It's similar to "Shinshu Kamerei" maybe because it's made from Hitogochi rice 😋. I'm glad my local liquor store is carrying it as I've heard it may be hard to find from now on 😆. ★★★★★

Something shocking happened... 🥶. I bought a bottle of Shinshu Kamerei at a sake brewery, but before I brought it back home, I smashed it and broke it 😱. I didn't even drink a drop! If I had been at home, I would have strained it through a tea strainer, but outside, it's not so good 😢⤵️⤵️ I had to say goodbye to it in tears. Well, I think this is the first time I've had a bottle of Daishinshu! It has a sweet and tasty mouthfeel with a well-balanced acidity that is very tasty 😋. I can understand why the owner recommends it as a good match for all kinds of food ❕🥰. I will get Shinshu Kamerei another time as I think I have had it. ★★★★☆

It came out of a company gathering with a difference from the store: ‼️😀 I thought it would be a sweet sake because of its color, but when I put it in my mouth, the sweetness is followed by a light mouthfeel and the acidity gives it a clean and sharp taste that makes the drink go down a treat. ⁉️ But the alcohol content is 15%, so if you drink it too much, it might hurt your legs. A few people were hit by it ❗🤣. ★★★★☆

The second drink for my wife's birthday was a nigori sake from Tsuki no I, a local sake. I thought it would be a light nigori, but it was a nigori sake with some grains of rice remaining. It was like doburoku, which surprised my wife a little 👀‼️ I was surprised twice when I drank it, wondering if it was sweet because of the impression of amazake (sweet sake) 😨. The sake itself tasted sharp, clean and dry, and the rice grains gave off the sweetness and umami of the rice itself, making it a sake that could be enjoyed twice. It was a perfect match for the dark flavor of the chicken grilled with miso that we had just ordered. The best match for the grilled chicken with miso.

First drink after a beer toast 🍻 at a small restaurant The fruity pear-like sweetness is quickly followed by a moderate acidity and a crisp and delicious taste. It is a perfect match for sashimi and tempura, and has an assertiveness that is not overshadowed by the food, but does not get in the way. Saturday's red snapper fishing trip went down the drain😖💦. It's been a long time since I've fished, but I didn't catch anything ἖💦 👩‍🦲 So I opened a bottle of Yamamoto's Wa-Yin with the sashimi I bought and had a burnt sake ❗❗. I was supposed to open the bottle with seared nodoguro sashimi 🤣. Yamamoto-san responds to such feelings with a gentle flavor that doesn't betray you 🎵. It has a sweetness and acidity like a dry white wine, probably due to the use of wine yeast, and goes well with sashimi 🤤. It was a beautiful sake with a clean and crisp finish that was not too sweet and had a complex flavor with a refreshing aftertaste. ★★★★★

I bought this when I went on a trip to Kochi in the fall ✈️👜 and it was aging in the fridge ❔, but now I've opened a bottle 😀. It comes in a beautiful box with a picture of Niyodo Blue where we went sightseeing and a beautiful picture of Nikkobuchi on the bottle ❕🥰. It's a Kochi sake, 17% alcohol by volume, clean and dry, easy to pair with any meal. ‼️ It was a full-bodied yet refreshing sake with a slight sweetness and a complex and beautiful flavor. ★★★★☆

I drank one after another from this lineup that day, and they were the best ❕🥰. I don't know how many other drinks I had, and I don't even remember what they tasted like 🤣. The aroma was not that strong, just slightly fruity. When I drank it, I thought it would not suit everyone who likes dry wine because it was sweet-tasting, but it was well received because of its sharpness afterward. Maybe because it had been open for a while, it didn't have the tangy gassy feeling of a draft sake. ☺️ If you try drinking it open-mouthed too, you may get a different impression: ⁉️ ★★★☆☆☆☆

🌸 flowers are about to fall and we decided to open a seasonal drink🤗. The aroma is nice and fruity with a hint of sweetness 😀. In the mouth, after feeling the tingling of the raw sake, the sweet and sour taste comes and a little bitterness from the lees gives it a complex and mellow flavor. The unique sourness of Senkou is well present, but the overall balance is exquisite ‼️ Delicious! This is my second favorite brand of Sentori after Snowman. ★★★★★

I couldn't forget the taste of Shichiken I drank the day before, so I bought it for drinking with friends 🤗. The sweetness and sourness of the rice, plus the astringency of the lees mixing, is very well balanced and was a big hit with my friends who drank it ❕🥰. This is delicious 😋😋. Also at the Shichiken brewery They serve nama-sake in all four seasons 😊. You can enjoy the tangy gassiness of nama-shu, and it has a full flavor with some astringency, but it has a strong aroma like a wood okegawa (wooden barrel) and is a bit peculiar. I think I liked the Tenju I had a while ago better. It was a bit peculiar, but I liked it better than Tenju.

At the Shichiken Sake Brewery in Kofu The first brand of Shichiken with a side dish of stewed chicken motsu It has a good balance of sweetness and sourness, and goes well with strong-flavored dishes 😀. This was recommended to me by the owner as the first Shichiken sake I should try. I was told that this is the standard sake of Shichiken. It is a delicious sake with quite a good flavor. I went flounder fishing and caught 6 fish. 😃✌️ But only 2 were sashimi size (>_<) Ate them as sashimi and carpaccio, The smaller size was a fisherman's privilege and we had the whole fish as meuniere and aqua pazza ❕🥰. The accompanying sake was Kariharu Kawasemi. It is a light cloudy sake with a hint of sweetness, followed by sourness, which is sharp and goes well with fish. ✌️ The label is cute and the taste is sweet and sour! No wonder it is so popular 😀. ★★★★★

I will open the bottle while watching the match between Otani and Darvish 😀. It has a sweet aroma and the flavor spreads quickly in the mouth, followed by a slightly tangy acidity that is really delicious and sharp 😋🍴💕. The sweetness is due to the Junmai Daiginjo, but that makes it a very deep, sweet and delicious sake 🍶. You can feel the umami of the rice and it was made with great care... ★★★★★

Simple label for Yamamoto. I miss the usual episodic comments on it 🤣. Now let's see how it tastes ⁉️ As expected of Yamamoto-san, he never misses. It has sweetness, but with the tanginess of new sake and the bitter acidity, it comes through easily 🎵. However, it's not lacking at all, it's got a deep umami flavor and it goes down a treat 😉👍️✨. Looking forward to the next one from Yamamoto-san who never misses ❕❕🥰. ★★★★★
