Chiba no fudo First time ❕🥰. We ended the day with a dry sake. It is a dry sake with a nice balance of sweetness and acidity with the tangy gassiness of the raw sake, similar to AKABU. It is a very tasty sake and I would buy it if I find it at Sakaya ❕. ★★★★☆

AKABU's standard Junmai sake I can never go wrong with this sake. My relatives and first time drinkers loved it so much they had to have another glass! Anyway, they said it had excellent balance and sharpness. ★★★★★

I'm sleepy today 😪 because I watched Matsuyama win the bronze medal on ⛳🏌️‍♂️ after a few drinks. I can never go wrong with Yamazan 🤩. When I took a sip, I thought it was a little too refreshing, but as I continued drinking, the sweetness started to kick in, followed by the tangy acidity of the unfiltered sake, leaving a clean aftertaste and a well-balanced sweet and sour taste ❕🥰. It was the first time for me to enjoy such a quick change in taste from the first sip. It is so good that I have another bottle in the fridge. 🤣 ★★★★★

Hi, this is Lord. I was very happy to see Matsuyama win the bronze medal! I thought it was going to be a battle between the British athletes and Matsuyama, so I was drinking Nikka whisky at that time (^_^;) (I also enjoy non-Japanese sake).

At a tavern in Ueda The first brand we met It seems to be a sake from Shinshu Meizou, but I had never seen it before and could not find it registered in Sake-no-wa. Another new brand I met 😃. I heard it is written "Kanoryu" and reads "Naki Ryu". φ(ω・*)hmmm... The taste is a sweet-tasty type similar to the earlier Ding, a little sweeter than Ding, with a slight sweetness lingering in the aftertaste 🤔. ★★★☆☆☆

In izakaya on a business trip to Ueda 🤓. After 🍺, I immediately went for sake. Ding. This is a popular local sake from Ueda. It has little acidity, but it is not fruity, but it has a crisp finish with no lingering sweetness despite its strong sweetness and flavor. ★★★★☆

Shinshu Kamerei's limited edition from the brewery What is Miyamanishiki like? The aroma and the first sip has a fruity sweetness, but it is not as sharp as Hitogokochi. But even though it is fire-aged, you can feel the gaseous taste of the raw sake, and I don't dislike it. It is rather sweet and juicy, and I like it 🙂. But the Shinshu Kamerei I've had so far is still Hitogokochi, which is delicious 🤩. I'm going to go to the brewery next time and stock up for watching the Olympics on TV. Three-day weekend starting today ❕🥰. I don't plan to go anywhere🤭🤭. This is the first brand I've ever had, but I bought it at the Co-op ❕. I'm looking forward to trying more brands in the future. The aroma is not fruity, but sweet with a hint of rice, which I like 😀. When you put it in your mouth, you can feel the sweetness of rice for a moment, and then it goes down smoothly without any sourness ❗ It is what is called "light and dry". I liked it a lot! ★★★★

Mutsu Hachisen Summer Ginjo I usually prefer Junmai, but I had the impression that this one was delicious without feeling too much alcohol, so I'm repeating it for the first time in years. I've not had this one for a few years. The aroma is sweet and refreshing, like pear 😀. When you put it in your mouth, the fluffy sweetness and tangy gasiness spread together, and the same refreshing sweetness as the aroma is impressive and you don't feel the brewing alcohol. It's still delicious 😋. ★★★★☆

The next day in Ueda, I came across a brand I had never seen before at a local tavern 🙂. According to the owner, it is a brand that has been drunk locally for a long time. Now I'm looking forward to seeing what kind of sake it is😍! It's a sweet and tasty sake with a hint of sweetness in the mouth followed by a hit of sourness. I like the taste a lot ❕🥰. I ordered it with horse sashimi, which also went well with the sake 😀. I'm still looking forward to discovering new brands! Of course I drank the Shinshu Kamerei next to it, but I bought it at Okazaki Sake Brewery, so I'll give you my impression later! I'll be careful not to break it this time so that I can take it home with me 🤣. ★★★☆☆☆☆

Second bowl at the same soba restaurant 🎵😍🎵 More acidic than the previous Imanishiki, with a slight oaky taste, but with a nice sharpness. This is the second drink ❕🥰. First series of drinks I asked for this one because I was attracted by the umami dry taste. Since this sake is alky, it has a strong alcohol taste, but compared to the previous sake, it has a crisp and punchy impression! The taste is deep and umami, It has a sharp taste that is unique to sake with alcohol. The impression is that it is a sake. Sake with a crisp and clean taste.

In the mood for a drink out today😃. First drink 🍶 at a bar in Kitasenju. It's made from Hitogochiki rice, so it's a bit like Shinshu Kamerei, right? Surprisingly, it has almost no aroma and a clean taste. Hmmm? I don't feel the taste has much depth. It goes down your throat easily, so something is missing. Yamazan is gaining in popularity right now. This sake is from a dormant brewery that has been revived, and we expect it to be popular for its taste❕. So, how does it taste? When I stirred it and poured it into a glass, I got the impression that it was silky and cloudy, or rather, lees were precipitated and it tasted like lees 🙂. Fruity aroma, fresh and gassy 🎵😍🎵. Sweetness is followed by a slight bitterness and sourness, with a fruity green apple flavor that I can see why it's so popular 😃. It's similar to "Shinshu Kamerei" maybe because it's made from Hitogochi rice 😋. I'm glad my local liquor store is carrying it as I've heard it may be hard to find from now on 😆. ★★★★★

Something shocking happened... 🥶. I bought a bottle of Shinshu Kamerei at a sake brewery, but before I brought it back home, I smashed it and broke it 😱. I didn't even drink a drop! If I had been at home, I would have strained it through a tea strainer, but outside, it's not so good 😢⤵️⤵️ I had to say goodbye to it in tears. Well, I think this is the first time I've had a bottle of Daishinshu! It has a sweet and tasty mouthfeel with a well-balanced acidity that is very tasty 😋. I can understand why the owner recommends it as a good match for all kinds of food ❕🥰. I will get Shinshu Kamerei another time as I think I have had it. ★★★★☆

The second drink for my wife's birthday was a nigori sake from Tsuki no I, a local sake. I thought it would be a light nigori, but it was a nigori sake with some grains of rice remaining. It was like doburoku, which surprised my wife a little 👀‼️ I was surprised twice when I drank it, wondering if it was sweet because of the impression of amazake (sweet sake) 😨. The sake itself tasted sharp, clean and dry, and the rice grains gave off the sweetness and umami of the rice itself, making it a sake that could be enjoyed twice. It was a perfect match for the dark flavor of the chicken grilled with miso that we had just ordered. The best match for the grilled chicken with miso.
