I went fishing for flounder for a long time, so I will have it with sashimi and carpaccio.
It has a sweetness and astringency like a ripe persimmon, and goes perfectly with the fatty flatfish sashimi 😋.
It also drains off the olive oil when paired with the carpaccio, making it a perfect match, and I can't stop sipping it one after another 👍!
