It's actually brewed by a classmate of mine from high school😌. It has almost no aroma, but when you taste it, the flavor reminiscent of Yamahai (so-called sake) spreads, and the rice flavor is mellow and crisp, making it an excellent sake for eating! It's easy to pair with anything. It's also excellent when heated. It's best served lukewarm😌. If you like fruity sake, you may be turned off by this one, but I highly recommend pairing it with darker dishes. The flavor and sharpness make for an indescribable marriage. If you can get it for 1100 yen, this might be a good daily drink.

We got Banshu Yamadanishiki for February shipment😌. The aroma is pear, with some melon, but also a bit of semedyne when close to room temperature. On the palate there is a mild sweetness, the acidity is not that strong and the rice flavor and fullness is more than expected ✨ The after taste is soft and crisp... It changes the image of Sharaku a little bit, it's well balanced in a good way and betrayed me in a good way😌. This is a great sake to pair with food😊.

I'm not sure what to make of it, but I'm sure it's a good idea. It's a freshly brewed sake 😊. The quality of the sake is beautiful even if it is a nascent sake😌. The aroma is mild, but in the mouth, you can taste the mild acidity, the umami of the rice, the taste of the oriental flavor, and the sharpness, all in good balance✨. Because of its balance, it can be paired with any dish from light to strong 😊. This is a great sake that will make you proud to have such a beautiful sake in Miyagi😊.

This is the last brand of the predecessor to the current Colors series, Yamayu's Vintage 2018✨. I'm sure all Shinsei fans will be envious... 🧐 I have high hopes for it, coupled with its aging ✨. The aroma is... hmm, slightly alcoholic sharp impression, like Kou shochu... in the mouth, the impression is totally different, muscat, melon😌. The lactic acidity is also moderate, and it tastes like a refreshing Calpis 😆. The sharpness is outstanding... it's no longer sharp like water😌. This was a new sake for me to appreciate😌.

The aroma is milky with a hint of lactic acidity, and in the mouth the mild acidity and umami spread, but not too much. It has a silky finish and a crisp aftertaste. It is delicious as it is, but I think it is a versatile sake with a wide range of uses✨. It is one of the most beautiful and easy to drink sakes in recent years 😆.

Valentine's Day was a long time ago, but... I bought it for my wife on the recommendation of the liquor store I work for😌. The aroma is mild and a bit gassy✨. It's clean, syrupy, and sweet, but the sweetness is cut off quickly with amino acids that linger on the tongue a bit😌. Indeed, it seems to go well with battery sweet sweets like chocolate😌. I don't know when Kochiyo came to such a sweet line... about 5 years ago, it still had a light image🧐

When I asked Saibin Honten what they wanted me to drink the most ❓, they recommended this Yamashiroya ✨. . To be honest, I had no idea what I was getting into, so I just went with the recommendation😌. . The Yamashiroya website says it has grapefruit and lemon, but even though it's a Junmai Daiginjo, it has almost no aroma (or is it better described as a dead aroma?). It's a mellow sake, with almost no acidity, but you can feel the unique umami or amino acids of the nascent yeast 😌 You can also feel the alcohol angle unexpectedly, and you will get used to it as you continue drinking, but it's for sipping ✨. If you try to warm it up, the mildness and rice flavor will stand out, and this is definitely my favorite 😆✨. As the label says it's an unfinished sake that completes itself with food, we don't recommend drinking it as is, especially cold, but it's best with strong food and warmed up✨. The concept is up-and-coming, like Shinsei Shuzo or Tsuchida Shuzo, but the taste is classic and refined, which I personally prefer ✨(I hope more and more people start to get into gutsy Ikaruga from this kind of sake little by little🤔)

The aroma is subdued, but has a melon-like freshness😌. Gentle on the palate, then comes the sweetness of the sugar ✨A little sour after opening the bottle, but after 2 days it's almost gone and mild☺️. I think it's a very gentle sake that's very typical of the brewery 😌I think it should be paired with a sweet appetizer when it's so sweet and fruity 🤔

This is a brewery aged vintage of Shinsei ✨. It's 2018BY, so it's aged a little over 2 years😌. I bought it from a liquor store I'm familiar with✨. The aroma is mild and round on the palate, with a sweetness that is more like molasses or syrup than rice flavor😌. The aroma is mild and the taste is round in the mouth. However, I've been drinking a lot of aged ones, but I'm not sure if this Shinsei brings out the true quality and value of aging 😅.

Maturing with unpasteurized sake❓ I'm not sure what to make of it, but I'm going to try it. . It seems to have been aged for a year as a raw sake😌. It's a matured sake, but the recommendation is to cool it down to around 5°C✨. . The aroma is... woody and nutty with a bit of an aged feel to it, but on the palate... it's insanely sweet and the flavor is amazing, and it's mellow and blends right in without disturbing anything☺️. . This might be the most shocking thing I've had in a while... I've been wanting to follow up with a lot of things, so I'm running to the liquor store😌.

The first Ichinen Fudo, a umami sake with a 75% milling rate, is expected to be the best ✨. . The aroma is the so-called gutsy aroma of the ikeban 😌. . In the mouth... it's not that punchy, but the rice flavor is beautifully assertive and mild😌 and it's delicious at room temperature or warmed✨. . It's a great match for salty and savory foods, and I'd love to pair it with food in a range of temperatures😌.

I've been thinking about it for a long time, and I finally got to buy it at Saibin Honten and meet them😌. . The aroma is mild, and on the palate it has a muscat and gassy feel that reminds me of a wind forest for a moment😌. Maybe it's because it's a honjozo, but it kicks in fast from there☺️. If you drink it with a wide mouth, it will leave a little heaviness on your tongue, but if you drink it all at once with a flute glass, it will go in even more smoothly, which I think is the image of this sake😌 . . I'm sure you'll agree that at 1100 yen, and for a honjozo of this quality, it's a hot topic😌.

I was able to buy it before at the liquor store I work at, and it's been a long time since I've seen it ✨ since I've had a chance to go out and drink it 😌. It's a new sake so it's only available now✨. . It's a Junmai Ginjo with a 50% rice polishing ratio😌 . It has a mild apple aroma, and when you sip it, you can taste the juiciness that is typical of JYUYASHIRO, as well as a little bit of a mellow flavor that lingers on the palate ☺️ but then it kicks in quickly and doesn't leave any unpleasant bitterness or muddiness behind😆 . . Fruity yet delicious sake ️️. It's a miracle that I was able to meet you, but it was a good encounter☺️.

I️ have been punching and moving since Hiki Sakura Shengen Strong Even aged for a year, it's got enough color😌. Cold to room temperature you get a nutty and dried grape feel, but with the refinement of 18 degree alcohol... you can pair it with food, but I think the majority of people will find it hard to drink as is 😂. But when heated... this is a bad ️. It's just too good to pass up...too mellow and full of flavor😌. It's really a great marriage with darker Japanese food✨. It's not just the fresh juicy stuff that's trendy and tasty, but I really want everyone to try this kind of sake too🤔.

A drink that's been going viral on social media, I finally got my first tasting ✨. . The aroma is mild, slightly vanilla and fresh😌. A little gassy and spicy because it's a raw sake😊. . It's a little gassy and pungent 😊 . If you drink it in a tasting glass, the acidity will be a bit sharp and crisp😌. When drunk in a wide mouth faceted glass, it is very mellow☺️Rice flavor sweet and round, the acidity has softened✨. It has a very beautiful aroma and body for a rice polishing ratio of 65%, but I recommend drinking it in a wide mouth while letting it oxidize✨. I️ would rather drink it at room temperature or higher. . I️ remembered that the liquor store also gave me a lecture about leaving it alone and drinking it later is just right. It's a fun sake in the sense that it's easy to pair with any dish in the trendy sake scene, yet allows for a wide temperature range 😊✨.

I've always been curious about my first Ichibai Suisei, I wanted to go from the flagship but if they had bagged it I'd buy a bagged one 😅. The aroma is a mild green apple type, the mouthfeel is fresh and then mellow... maybe because the acidity is mild✨. The aftertaste has the sharpness of Miyamanishiki and a slight bitterness that lingers but overall it's nicely integrated😊. Very tasty and will be gone soon😂.

Our favorite sake brewery, Tanaka Shuzo Brewery's Tabayashi Ikkamoto Tokujun 😊. The sake that I introduced before, the Ikarashi Daiginjo, has a clear flavor that really soaks into the body, while the Tokujun has a battery of flavor with a good sense of maturity😊. It is recommended to be warmed up, but it is also delicious at room temperature ✨ it is mellow and refreshing with a little bit of maturity😌. The flavor doubles when heated✨. It can stand up to being jumped through the hoops to be heated up, and it's great fun to drink it warmed and cooled from there👍. The one I bought from Abe Sake Store is not tank aged but bottle aged😊. It can be drunk as is, but I think it really comes into its own when paired with food, especially something that has a delicious dashi flavor to it, like a battery ☺️✨. I must say that this is the best sake from Jigoku Toji Morikawa ✨ぐ地獄杜氏モリ川氏✨.

This is a heated kan from the Mixseed series brewed by Kurando Kimura 😌✨. I had it lukewarm 😊. It's soft on the palate, very mellow and enveloping😌. It's a very nice sake that doesn't interfere with the food while also giving a mellow rice flavor ☺️. It's a great match with warm food✨.

Long time no see otter😊. Maybe it was too long since I opened the bottle, but I didn't get much of a ginjo aroma 🥲. In the mouth, muscat type sweetness and clarity is awesome‼️. There is almost no acidity and the sharpness is awesome😌. Once again I felt it was a very beautiful sake😊.
