Drunken Whale from Kochi Prefecture😌 It's a very beautiful and light sake✨. Almost no aroma, if I had to describe it, I would say it's almost like shochu or water, with a strong clarity😊. It is very easy to drink and matches with any kind of food😌.

My first sake from Kumamoto😌✨. It's made with Yamada Nishiki from Kumamoto prefecture, 50% Kake rice, 90% Koji rice, No.9 yeast😌. The aroma is almost nonexistent, but the yeast #9 gives it a melon like sweetness😊. The umami of the rice, a little sourness and spiciness comes and kicks in instantly☺️. What can I say, it's not heavy at all, it's one of the easiest sakes to drink these days, and it's a delicious sake that's easy to pair with food✨.

[This is a log that I forgot to record You can now drink Tenbi at Sake no Kawashima in Sendai and buy it😌. It's a very beautiful sake, very fruity✨. It has a white grape and gas feeling, like a white wine with a little bit of sake😌. You can also pair it with fruit salads and other appetizers😊. I hope to follow you in the future ☺️.

The ultimate food sake, Hakurakusei, is made by Shinzawa Brewery and is only available this season😊. If you use red yeast for nigori sake, you can make pink sake with low alcohol (11 degrees for Harukoi) ✨. The only problem is that the yeast is easily weeded out by other yeasts, so it's hard to get the red color without someone who hasn't touched the yeast handling it😌. It looks beautiful and tastes beautiful too☺️. Mild acidity and a tart mouthfeel, with a sweet and sour taste reminiscent of strawberries as it says😌. It's 11 degrees so you barely feel the alcohol and I think it should be positioned as a dessert 😊.

In my last post, I compared Mimurosugi with 100% Yamada Nishiki from Yoshikawa, a special AAA district that is even more exceptional than the special A district of Yamada Nishiki😌. It has the same ramune feeling in the aroma, but the aroma is a bit more pronounced than the regular version😌. On the other hand, the mellowness of the mouthfeel is further improved and the quality of the sake is more beautiful✨. In terms of elegance and balance, the basic version is better, but this one is delicious😌👍. You can buy Mimuro Sugi online at normal prices🤔. If you've never had it, I recommend it😌.

I was able to find it at Saibin Honten, which is the only store in Tohoku that specializes in this kind of product😌. I'm glad I did because I've been curious about it ever since I saw it on Instalive 😊. The aroma is mildly rammy, and the mouthfeel is mild, but the rice flavor is full and the acidity is gentle, and the finish is quick😌. I've been looking forward to the next one, but I'm not sure if it's going to be as good as this one. The acidity is gentle, and the balance is just right in a good way ✨. It's no wonder it's so popular😌. This is one of the most well-balanced sakes I've had recently✨.

Ume-nishiki, a representative sake of Ehime, was sent to me by a colleague from Ehime. When I drank it about 5 years ago, I honestly didn't like it very much. But when I tried it again, it was delicious! I used to have a sweet image of it, but this one is refreshing, light, and crisp, just the opposite✨. I'm not sure what to make of it, but I'm sure it's a good idea. It's a very dry sake for sipping... almost like the image of Miyagi's sake ✨. I might not have to worry about sake when I go back to Ehime🤔.

Kagiya was my favorite sake from Ehime😌My junior at work sent me this in exchange for a sake from Tohoku✨. It's unfiltered, so the color is yellowish😌. The aroma is a strong lychee like ginjo aroma🤔 It's also a great way to start the day. The acidity is quite mild😌. This rice flavor complements the food 😋. It doesn't get in the way at all, it harmonizes... even with the ginjo aroma, it was such a wonderful sake ☺️.

I️ don't know how to tell you how impressed I️ am with this... it's just too good! It's 28BY, so the sake was brewed in 2016 and shipped in November 2020, which means it was aged for over 3 years😌. The color is also #mature sake itself with a yellowish tinge😊. Anyway, it's mellow yet powerful ️. The aroma is like dried grapes and oak, when you drink it, it is softly wrapped and the flavor is concentrated✨. I'm not sure what to make of it, but I'm sure it's a good idea. It's easy to drink at room temperature, and even more delicious warmed up, but it can be enjoyed at any temperature😌. Yamane Zouzou brews each sake for each producer, and this time it's Kazuma Yutaka's Chikara 😌. This time, it's from Yutaka Kazuma 😌 The rice had been discontinued, but Yamane Brewery has revived it. And the yeast is #Kurashiki yeast😌. I'm sure you've heard of it, but I'm not sure if you've heard of it.

This is Kaze no Mori's second test brew, Akitsuho 80% polished rice✨. It has a muscat flavor that is typical of Kaze no Mori, but as you would expect from the 807 series, it has a great sense of solidity😌. The acidity is not that strong, and the fruity and strong umami coexist in good balance and are very delicious👍. I think it's a fruity sake that can be paired with sashimi as well🤔.

Each sake shop has its own lot and bottle of Morinokura ✨I bought it at Ikeda Sake Shop in Sendai😊. The aroma is a bit capricious 😌 thanks to the yeast #9 even though it is pure rice. I'm not sure if it's the 65% or the higher amino acid content. I'm not sure if it's because of the 65% or the higher amino acid content, but the weight of the flavor is a little lower than the aroma! But the acidity is quite effective, and the acidity cuts through to the end quickly✨. Very tasty😊👍

Nita Honke's Nigori✨. I'm personally quite addicted to and follow Niidashi Zenshu, which is a kuradashi yeast sake 😌. The nigori in it has a great moromi or rice feeling‼️. It has a strong yogurt feeling from the lactic acid derived from the nascent yeast, a sweetness and mouthfeel like amazake from the sweetness of the rice malt, and as it is only 16 degrees alcohol, the sharpness comes from the alcohol feeling that kicks in ^_^😌 This is so delicious✨.

[Zao k Special Junmai inspiration ] The name and jacket are really cool😌. I've actually never had Zao before, and I've always been curious about it, but it's a raw sake that comes out twice a year✨. 100% #Kuranohana, the preferred rice of Miyagi prefecture, and the yeast is also all #Miyagi prefecture 😄. It's 50% polished rice and yet it's a special junmai, a luxury☺️. I'm sure you can tell from the photos that the freshly opened sake is just as fresh as it can be😌. The aroma is mild, more like rice or vanilla than a ginjo aroma😊. The mouthfeel is soft and the acidity is mild, but there is enough sharpness to make it a good food sake like the sake from Tohoku✨. The softness is addictive🤔. (I felt the image a little close to Koganezawa 🧐)

I've been a fan since I first saw it at Japanese Restaurant Usuda, and I always buy it at Ikeda Sake Shop whenever it comes out. This time it's my first nigori sake! It's not as acidic as I thought it would be, but it's piquant! It's not as acidic as I thought it would be, but it's very piquant! I thought it would go well with a sour but strong flavor like chicken nanban, but it was the perfect pairing. It was gone in a flash✨.

寫樂純米一回火入れる, I bought it to try a trendy sake😌. Everyone says it's melon, but to me it smells like vanilla ☺️. The mouthfeel of the sake is not juicy, but rather has a delicious flavor and a unique bitterness. It also tastes a bit like a white mouldy cheese🤔. The aftertaste leaves you with a balance of bitterness and sweetness😄. It might be a good sake for cheese and dark western food😌.

Local Miyagi's beloved Jigoku Toji Morikawa's Tarin Special Junmai Miyamanishiki😊. It's quite juicy on the palate✨, which is what Morikawa brews. Still, the flavor and sharpness are as good as it gets😌. This is a very nice sake that is juicy but can also be used as a food sake😄. Personally, it's as good as Tabayashi! I hope this sake will become more popular. I'm rooting for you👍.

For a gift, I asked the owner of Abehachi-san, who has been a good friend of mine, if he could recommend a sake with a good flavor, even though this is the season for new sake and there is a lot of freshness and juiciness... and he recommended Hirotogawa Junmai Ginjo😌. The nigori was also quite tasty, so I had high expectations✨. (It's a gift, but I also...well, I have to be able to explain, lol) One word, it's insanely good! The aroma isn't that strong, but after the juiciness, you can feel the strong flavor of the rice, but it doesn't overwhelm you, and it finishes off nicely. This one was also gone when I noticed it. (It might be the fastest, lol).

I know I'm a little late to the party, but here's some new Akatake sake😊. Actually, when I was in Tohoku a few years ago, Akatake was not popular at all, but when I came back, I was surprised to find that Akatake has become very famous! So I actually drank it for the first time😌. After opening the bottle, it has a gassy feeling, juicy and crisp with a refreshing acidity ☺️. One word: delicious sake, and I'm surprised it's gone so quickly! ← I'll be following you in the future✨.

Lightly muddled rice wine (^^) Hanabuki 55% polished✨. The aroma is mildly capricious, the mouthfeel is silky with a hint of oriental, mild acidity and sharpness😌. It's not as umami intense as the Denshu Tokujun, but it feels plump and lightly umami☺️. It's not as intense as the Denshu Tokujun, but it's plush and light ☺️.

I bought it on the recommendation of Abehachi Sake Store that it is the best sake to drink right now😊. For a Junmai Daiginjo, it doesn't have a strong ginjo aroma like Dewazakura, but a soft aroma like apples and candy😌. The mouthfeel is sweet like syrup or ramune and surprisingly crisp✨. I thought the expression "juicy dry" was just perfect😊.
