Featured on danchu, all natural niidashi zensyu with brewer's yeast 😊 looking forward to my first odayaka series 😆. . Warning to open bottle, it will blow up to the ceiling... not calm at all from there😅. . (Luckily) I didn't shake it, so it didn't blow away, just a vigorous clunking sound😊(this will definitely fly away if you lay it down or shake it ️) . When poured into a glass, the gasiness is amazing✨. The acidity and spiciness is amazing ☺️This type of sake often has a bit of a bitter aftertaste, but this one is mild 😊It's more of a wrapping feeling than a crispness... This is a great way to start a new year, and it's a great way to start a new year. . I'm sure it will sell out soon, so if you see it, buy it now👍.

I've been seeing this jacket on Instagram every now and then lately and have been curious about it's innovative QR code only design 😊 so I drank it 😌 . . The aroma is complex but fruity with a hint of banana and apple type mixed in✨. When I drank it, I was like, what? The aftertaste is a bit dry while disappearing quickly🤔. And that change is so fast, if you drink it without paying attention to anything, what a beautiful drink ☺️ but if you pay attention to it, it's a very interesting drink😊. . It has an elegant aroma and a good sharpness, so I think it can be matched with relatively all kinds of dishes ✨I offered it to my relatives as an all-purpose sake when they serve various dishes 🔸. . If you read the QR code, you will see a wonderful story of sake brewing ✨I think even those who are not familiar with sake will be drawn in 👍. By the way, it's not sold at the brewery, on the contrary, it's only sold online, so if you're interested, please try drinking it 😊.

The scent is pineapple 😆✨. But like Hanayoake, it's not a sharp aroma, but rather somewhat elegant☺️. When you put it in your mouth, you can feel the elegant sweetness as it is... and the sharpness is outstanding due to the addition of alcohol (a small amount of alcohol is added to this sake to bring out the aroma) 👍This is really delicious ☺️. . I had it with pineapple and cream cheese salad and it was the best combination 😆✨. . It is distributed only in Iwaki, my hometown, but you can also buy it online, so how about giving it as a precious gift☺️?

The aroma is mild, but when you put it in your mouth, a fresh and minty aroma spreads, then the flavor of the rice comes out and the aftertaste is really clear and light☺️. I think it's a wonderful sake that blends beautifully with food✨.

Kamikawa Taisetsu drinking comparison, this is the comet from Hekiun brewery in Tokachi 😊✨Tokachi is a brewery located on the campus of Obihiro University of Agriculture and Veterinary Medicine ☺️. This is the same specs as the Midorigaoka brewery, but the water is different, so it's very interesting to see the difference in expression☺️. It's interesting to see how different the two breweries are. Well, sake is interesting😊.

Kamikawa Taisetsu Comet drinking comparison😊✨. Special Junmai, this is the Midorigaoka brewery ☺️. It has a mild melon aroma and a soft rice flavor on the palate with a clean finish. It's not very bodied, but it's not too refreshing and easy to pair with food✨.

It's a hot sake, a sunburst honourable chrysanthemum because of the burst of acidity😊. On the first day of opening the bottle, the aroma is a hint of melon, and the acidity is strong, but not too strong, and the bitterness and umami make it slightly full and sharp☺️. . The bitterness is not too strong, but the bitterness and the umami make it a bit fuller and crisper ☺️ . After 3 days of opening the bottle, the acidity settles down a lot and it turns into an easy drinking sake🤔. If you want to enjoy the acidity, it would be better to volatilize it on the first day🧐

Kariho百田純米吟醸

Kariho is made with Akita Shinshu-boro, JSA No. 6 yeast, and a new sake brewing rice, Momota 😊. Unlike the old Kariho, which was sharp like a sword, this sake has a soft melon banana aroma with a fullness, a little bitterness and a sharpness at the end that is typical of Kariho... it's Kariho but new 😌. This is a delicious sake that can be enjoyed with food and has the right amount of glamour 😊.

It's not easy to find in Sendai, but I was given this as a gift 😌. . The rice is Toyopai rice, polished to 55% 😌. The aroma is not overpowering, but it has a nice flavor and crispness, which is sharp compared to the gorgeous sweetness and fullness of Toyohibai😌. . It was the kind of sake that you get used to, or rather, you can drink it without stress, so it was gone before you knew it... ✨.

I drink a lot of fruity drinks, but I keep coming back to this place 🤣. . It's my favorite Koikuma😊. And it's R1BY so it's been aged for over a year... when you age the body of a Koikuma... it's bound to be good 😂. . I put it in a tasting glass (this isn't a wine glass🤗) for the photo, but it definitely tastes better warmed up ☺️ . . At room temperature it's full of acidity and amino acid complex body ✨ 18 degrees or a bit heavier 😌. . If you warm it up... it changes the impression at once, full and mild... it blends well with food and body ☺️ What a nostalgic bear... . I'm sure you've heard of it, but I've never heard of it. If you think it's fruity, you'll get hurt(?). It's not too heavy, but it's not too heavy, so it's the kind of sake that fruity lovers should try next👍. I recommend it anyway🤗

The organic Kame-no-o 90% polished rice naturals have the typical Senkou acidity, but also have a strong banana aroma and a strong body of flavor, even though they are not polished 😌It is more like a full-bodied wine with a fruity flavor rather than a sake flavor. I guess that's the image😊. It is very luxurious, but if you add it at the end of cooking to add aroma, it will add more depth and gorgeousness✨. This is one of my favorite types of alcohol these days ☺️.

It has a faint banana aroma, and when you put it in your mouth, the aroma goes away along with Senkou's characteristic acidity😊. There is a little bit of acidity left underneath, but contrary to the word "classic", it is not too heavy and has a good balance of flavor✨. The aroma and the unique acidity make Senkou more suitable for cheese and Italian food rather than Japanese food😊.

Akitashakomachi ecru😌✨. When I conscientiously looked at the back label... after opening the bottle, I could smell a hint of tangerine, but when I put it in my mouth... what? It really disappeared quickly 😂✨. The aftertaste is a bit astringent (also conscientiously said to be from the wooden vat) 😌. Hmmm, easy to drink! In other words, too light 😂✨. Personally, I prefer it to have a bit more body... if you're going to pair something like this with food... say a fruit salad, but it's still too light... I think it's a trend of sorts, so this kind of research would be interesting to hurdle 🤔 (and in demand✨).

You can get sake from Shikoku occasionally at Sake no Kawashima 😌✨. They use 1401 yeast and it's 58% polished and has a pretty pronounced banana type aroma for being claimed to be pure rice😊. On the palate... it's quite intense, with a taste somewhere between melon and banana, and the aftertaste is rather sharp and crisp✨. Kawatsuru used to be a heavy brewer, but this time they used Kanazawa yeast for the first time to make a clean brew😊. It has a bit of weight to it due to the 17% alcohol, but it has enough flavor to keep you coming back for more😌.

It has a more subtle melon flavor than Rtype😌. In the mouth, the fruitiness spreads to the palate while retaining the impression of lightness of Rtype😊. I found the acidity quite strong when I first opened it 2 days after opening, but other than that, it's well balanced😌. As with the R and Ecru, the aftertaste is still a bit astringent and lumpy (the back label of the Ecru says the astringency comes from the wood vat). The X is still to come, but so far this has been a hit in the BY2020 low alcohol design series😊. I just still have to figure out how to pair it with food🤔.

The aroma is less than I expected, and the taste is quite light, even with 13 degrees 😌. I respect the technology of Shinsei to be able to make such a clear and uncluttered beer with 65% Kake rice 😊. The slight bitterness in the aftertaste that you can feel in the ecru is probably from the wooden vat that Shinsei calls it🤔. It's a great dessert wine to drink late at night, but it's getting harder and harder to pair with food 😅. I'm not sure what to make of it, but I'm sure it's a great wine to drink with a meal. (To begin with, it's better to taste this Shinsei with a light meal rather than a single item. I think that's a good idea😌)

Like Shinsei and Senkou, Tomita Shuzo's Shichibondari is committed to going back to ancient brewing😌. I've been to Shiga often for work, but this is my first time drinking it✨. The rice is polished to 60% and has a subtle iso-ish aroma, and this wooden bucket brew also has a faint woody aroma😊. It's a lovely sake with a nice, crisp finish and no distinctive smell, although it does have a full-bodied umami flavor on the palate😌. It's a great sake that is easy to pair with food without stress 😆.

This is the Yamada Nishiki brewed by AKABU. I'm not sure what to make of it, but I'm sure it's worth it. The aroma of melon is very prominent✨. The aroma of melon spreads with sweetness and softness in the mouth😌. It's not too strong in acidity, but it's calm in a good way☺️. It has some body for 15%, and you can feel the aroma and sweetness in a good balance, it's a wonderful sake🤔.

Senkou's flagship model is now available at Kawashima's 😊. Senkou is a Junmai Daiginjo class Senkou made with Yamada Nishiki from Sakura City fully domesticated😌. The aroma is surprisingly mild and slightly peachy even though it is polished. In the mouth, the balance of sweetness, acidity and umami is incredibly good✨. It's a great sake to drink on its own for a while😌.

When I asked Abehachi, who has a wide selection of fragrant rare sakes, if they had any unusual sakes that I hadn't tried before, I was given a sample bottle that they had recently opened to try the aroma. I bought a bottle and tried it, and when I drank it cold, it had a unique and intense acidity as a base, with a sweetness like molasses and a clean finish, a strange sensation unlike any other sake I've ever had... When heated, the sourness is softened and the honey feeling comes out😌. If you like battery-powered sakes, you might want to try this as a change of pace every once in a while for a little extra stimulation✨.
